1 c diced onion
1 c diced carrot
1 c diced celery
2 Tbsp butter
1/4 c all-purpose flour
2 c chicken broth or more if needed
1 Tbsp Better Than Bouillon chicken base
1/2 tsp salt
1/2 tsp pepper
3 c mashed potatoes
2 c shredded cheddar cheese
2 c chopped turkey
1 c corn or green beans

Steps:

  • 1. Put 2 Tablespoons of butter in an ovenproof skillet. Saute onions, carrots, and celery.
  • 2. Add salt and pepper.
  • 3. After vegetables are tender add flour. Cook 2-3 minutes.
  • 4. Add chicken broth stirring to prevent lumps.
  • 5. Add chicken base.
  • 6. Let simmer until everything is thickened and bubbly.
  • 7. Add diced turkey and corn.
  • 8. Let mixture come up to a simmer. Remove from heat.
  • 9. Spread mashed potatoes over the top.
  • 10. Top with cheese.
  • 11. Bake in a preheated 350* degree oven until heated through and cheese melts.
  • 12. If you don't have any leftover mashed potatoes, make a pie crust and put over the top. Cut slits and bake in a 400* oven until golden brown.

1 lb leftover lamb or 1 lb beef
1 (10 ounce) can mushroom soup
1 (10 ounce) jar mushroom gravy
1 tablespoon tomato paste
1 tablespoon Kitchen Bouquet
1 tablespoon Worcestershire sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 (10 ounce) can peas and carrots, drained
2 cups shredded cheddar cheese
2 cups prepared mashed potatoes

Steps:

  • Combine soup, gravy and seasonings. Add meat and half the cheese. Spread in a greased 8x10 casserole dish.
  • Cook potatoes according to pkg directions.
  • add remaing cup of cheese to potatoes.
  • spread potatoes on top of meat mixture.
  • Bake at 400* for 30 minutes or until bubbly.
