This recipe came from my Nana and she called it lazy girls pierogies. It has the same delicious taste of homemade pierogies only with out all the work of making and rolling and stuffing the dough. This is a great way to have those yummy pierogies when you just dont have all day to stand in the kitchen! I know youre gonna love...

Number Of Ingredients 18

PIEROGIE FILLING FIRST LAYER
1 cup grated cheddar cheese
2 cups homemade mashed potatoes (dont use boxed)
1/2 cup sauteed chopped onions (optional)
salt, pepper, onion powder, garlic powder
PIEROGIE FILLING SECOND LAYER
2 cups ricotta cheese or cottage cheese
1 egg beaten
salt pepper garlic powder
"SAUCE"
1 cup butter (i use salted, you can use unsalted)
1 cup chopped onions
FOR LASAGNA
1 box lasagna noodles, cooked and drained
FOR SERVING
sauteed onions and/or scallions
melted butter
sour creme (optional) salsa (optional)

Steps:

  • 1. Grease a lasagna pan with non stick baking spray.
  • 2. Mix both fillings in seperate bowls.
  • 3. Add a layer of noodles to the lasagna pan. Spoom the first filling over the noodles and spread it to cover them.
  • 4. Add another layer of noodles and spread the second filling over them.
  • 5. Now add the third layer of noodles.
  • 6. Melt butter in a pan and saute onions until cooked thru. Pour the butter and onions over the noodles.
  • 7. Cover the lasagna pan and bake in preheated 350 degree oven for about 30 to 35 minutes or until it is heated completely thru.
  • 8. Allow to cool on counter for a few minutes before serving.
  • 9. Slice pieces and serve topped with more butter, sour creme, onions, salsa, and /or scallions! We prefer ours with just butter and onions and scallions : )

FREEZER-FRIENDLY LAZY PIEROGIES



Freezer-Friendly Lazy Pierogies image

Number Of Ingredients 7

15 lasagna noodles (cooked and divided)
2 cups mashed potatoes
2 eggs (beaten)
8 ounce package shredded Cheddar cheese
garlic salt (pepper, and onion powder to taste)
1/2 cup butter
1 onion (chopped)

Steps:

  • Arrange 5 lasagna noodles in a lightly greased 13"x9" pan, set aside.
  • Combine potatoes, eggs, cheese, and seasonings. Spread half of the potato mixture over lasagna.
  • Cover with another 5 lasagna noodles; spread with remaining potato mixture.
  • Top with remaining lasagna noodles, set aside.
  • Melt butter in a skillet over medium heat. Saute onion in butter until tender. Pour onion mixture over lasagna.
  • To freeze - cover unbaked casserole tightly with aluminum foil and freeze.
  • To serve - thaw overnight in refrigerator. Bake, covered, at 350 degrees for 30 minutes. Let stand for 10 minutes before slicing.

9 uncooked lasagna noodles
4 large baking potatoes, peeled and cut into 1-inch chunks
½ cup milk
1 tablespoon butter
1 teaspoon onion salt, or to taste
salt and black pepper to taste
1 cup shredded Cheddar cheese
1 pound bacon
1 onion, chopped
2 cups dry cottage cheese
1 egg
1 teaspoon onion salt, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Once the water is boiling, stir in the lasagna noodles, about 3 or 4 at a time, and return to a boil. Cook the noodles uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes per batch. Drain well in a colander set in the sink, and lay the cooked noodles flat on waxed paper or aluminum foil while you finish cooking the rest of the noodles.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x11-inch baking dish.
  • Place the potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Using a potato masher, mash the potatoes with the milk and butter until smooth. Stir in 1 teaspoon of onion salt, and season with salt and pepper. Set the mashed potatoes aside to cool. When cooled, mix with shredded Cheddar cheese.
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and almost crisp, about 10 minutes. Place the onion into the hot bacon fat, and cook and stir until the onion is translucent, about 8 minutes. Break the bacon into pieces with a spoon or spatula, and set the bacon and onion aside. Mix the cottage cheese, egg, and 1 teaspoon of onion salt in a bowl.
  • To make the casserole, place 3 lasagna noodles into the prepared baking dish, and spread with the cottage cheese mixture in an even layer. Top the cottage cheese with 3 more lasagna noodles, then spread potato-cheese mixture in a layer. Top the mashed potato layer with 3 more noodles, then spread the bacon and onion into an even layer on top of the casserole.
  • Cover the casserole with aluminum foil, and bake in the preheated oven until the cheese is melted and the casserole is hot, about 30 minutes. Allow to set for about 10 minutes before serving.

2 cups small curd cream-style cottage cheese
2 large eggs
1-1/4 cups all-purpose flour
1 teaspoon salt
3 tablespoons butter, melted, divided
1 small onion, chopped
Sour cream

Steps:

  • In a large bowl, combine cottage cheese and eggs. Stir in the flour, salt and 1 tablespoon butter. , In a Dutch oven, bring 3 qts. of water to a boil. Reduce heat. Drop batter by tablespoonfuls into simmering water, stirring gently to prevent sticking; cook pierogi in batches for 4-6 minutes or until slightly firm. Remove with a slotted spoon to paper towels to drain; cool slightly. , In a large skillet, saute onion and pierogi in remaining butter until lightly browned. Serve with sour cream.

Great-Gramma's Lazy Pierogi image

I know there are many ways to make lazy pierogi. This is a recipe my Great Gramma taught me. Pretty easy and oh so delish!!

Number Of Ingredients 8

1 pound spiral noodles cooked and drained.
1 can(s) cr of mushroom soup plus 2tbls milk or cream
1 med sliced onion
1 qt mushrooms
1 bag(s) refridgerated sauerkraut
6 slices bacon
s&p
1/2 stick butter

Steps:

  • 1. Boil and set aside pasta.
  • 2. In large frying pan cook bacon, set aside. Crumble. Same pan toss in butter melt, and saute mushrooms and onion till softened, turn pan to med, toss drained kraut in pan cook for 5 minutes to marry flavors. Add soup and bacon stir well.
  • 3. Add cooked Pasta to pan stir well. Transfer to low setting crockpot and let the flavors come together for hour. Longer sits the better the flavor. Serve as main dish or side with keilbasa or protien of choice.

For this tasty pierogi casserole, sauerkraut, onion, mushrooms, and pasta are combined and baked in a rich, buttery sauce. If you are making this ahead and are going to reheat it in the oven you may have to add a little water. If cold, bake at 350 degrees for 1 1/2 to 2 hours.

3 pounds sauerkraut
1 onion, chopped
1 pound uncooked rotini pasta
1 pound fresh mushrooms, chopped
½ pound butter
2 (10.75 ounce) cans condensed cream of mushroom soup

Steps:

  • Place the sauerkraut and onion in a large skillet over medium-low heat with enough water to cover. Simmer 1 hour, or until most of the water has cooked off.
  • Bring a large pot of lightly salted water to a boil. Add rotini and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium skillet over medium heat, saute the mushrooms in 2 tablespoons of the butter for about 5 minutes.
  • Stir the remaining butter, cooked pasta, and cream of mushroom soup into the sauerkraut mixture. Cook and stir 15 minutes, or until heated through.

1 (16 ounce) package rotelle pasta
½ pound bacon, chopped
2 onions, chopped
½ pound mushrooms, quartered
1 tablespoon butter
1 (16 ounce) can sauerkraut - rinsed and drained
2 (10.75 ounce) cans condensed cream of mushroom soup
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in onions, and cook until translucent. In a separate pan, saute the mushrooms in butter.
  • In a large bowl, combine pasta, bacon, onion, mushrooms, sauerkraut and condensed soup. Season with salt and pepper. Pour into a 9x13 inch baking dish.
  • Bake in preheated oven for 45 minutes.
