CRANBERRY LAYER:
1 package (3 ounces) cranberry or raspberry gelatin
1 cup boiling water
1 can (14 ounces) whole-berry cranberry sauce
LEMON LAYER:
1 package (3 ounces) lemon gelatin
1 cup boiling water
3 ounces cream cheese, softened
1/3 cup mayonnaise
1 can (8 ounces) crushed pineapple, undrained
1/2 cup heavy whipping cream, whipped
1 cup miniature marshmallows
2 tablespoons chopped pecans

Steps:

  • In a small bowl, dissolve cranberry gelatin in boiling water; stir in cranberry sauce until blended. Transfer to an 8-in. square dish. Refrigerate until set., In another bowl, dissolve lemon gelatin in boiling water. Beat cream cheese and mayonnaise until smooth; stir into the lemon gelatin with the pineapple. Refrigerate until slightly thickened, about 2 hours., Fold the cream, marshmallows and pecans into cream cheese mixture. Spread over cranberry layer. Refrigerate for 4 hours or until set.

Layered Pear, Feta, Cranberry, Salad With a Balsamic Dressing image

This is just a PRETTY salad. I like to serve this in a glass bowl so you can see the layers. Now obviously you can just toss it all together, but for a dinner party or pot luck dinner, this is just really nice. Simple ingredients and it goes together in just minutes. Now I use my basic vinaigrette which you will have a little left over, or if you want just use a good store bought dressing. My secret for this salad is to add a little honey to the dressing that goes really well with the pears and the cranberries. You could always add a little honey to a store bought dressing to achieve the same taste.

1/2 head romaine lettuce (torn or cut into bite size pieces)
3 pears, cut into bite size pieces (I like to use Bosc, Anju, but Asian would work, just use a combination of your favorites)
1 1/2 cups dried cranberries (rough chopped)
1 1/2 cups feta cheese, crumbled
1 cup walnuts, chopped
1/2 cup balsamic vinaigrette
3/4 cup olive oil
3 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon garlic, minced
salt
pepper

Steps:

  • Layers -- First layer, lettuce. Second layer, pears. Third layer, cranberries. Fourth layer, feta. Fifth layer, walnuts. Repeat.
  • Garnish -- If you want you can garnish with a few thin slices of pears on top.
  • Drizzle with the vinaigrette and enjoy!

An easy and colorful addition to your holiday table, our layered cranberry salad is made with cream cheese, cranberry sauce, crushed pineapple and whipped topping.

1 package (8 oz) cream cheese, softened
1 container (8 oz) frozen whipped topping, thawed
1 can (8 oz) crushed pineapple, drained
2 cans (14 oz each) whole berry cranberry sauce

Steps:

  • In medium bowl, beat cream cheese with electric mixer on medium speed until light and fluffy. Fold in whipped topping. Stir in pineapple.
  • Pour cranberry sauce into separate bowl; stir to break up any large chunks.
  • In each of 8 glass dishes, spoon cranberry sauce to cover bottom of dish. Spoon cream cheese mixture evenly over cranberry sauce. Top with remaining cranberry sauce. Serve or refrigerate.

1 ounce unflavored gelatin (1 envelope)
1/4 cup cold water
16 ounces whole berry cranberry sauce
9 ounces crushed pineapple, drained
1/2 cup chopped walnuts
1 tablespoon lemon juice
1 ounce unflavored gelatin (1 envelope)
3/4 cup cold water, divided
1 cup mayonnaise
3 tablespoons lemon juice
3/4 teaspoon salt
2 cups cooked chicken, diced
1/2 cup finely chopped celery
2 tablespoons finely chopped fresh parsley

Steps:

  • Cranberry Layer: Combine gelatin and cold water in the top of a double boiler; over hot water, heat and stir until gelatin dissolves. Add cranberry.
  • sauce, pineapple, walnuts and lemon juice. Mix well. Pour mixture into lightly oiled 3-quart baking dish. Refrigerate until firm.
  • Chicken Layer: Combine gelatin and 1/4 cup cold water in the top of a double boiler; over hot water, heat and stir until gelatin dissolves. Blend in mayonnaise, remaining 1/2 cup cold water, lemon juice and salt. Add the chicken, celery and parsley. Stir to mix.
  • Pour chicken mixture over the firm cranberry layer. Refrigerate until firm. To serve, cut into squares.
