MILE-HIGH CARAMEL APPLE PIE

Four pounds of apples go into this towering pie -- but you don't have to peel a single one. Just slice the fruit and pile it up. Warm caramel sauce drizzled on top provides extra sweetness.

1/3 cup butter, melted
1 teaspoon ground cinnamon
4 lbs cooking apples, such as Fuji (about 12 cups) or 4 lbs granny smith apples, cored and cut into 1/4-inch thick slices (about 12 cups)
1 unbaked double pie crust (your favorite)
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 egg, lightly beaten
1 tablespoon water
1 (12 ounce) jar caramel ice cream topping (about 1 cup)

Steps:

  • Preheat oven to 475°F.
  • In very large bowl combine butter and cinnamon; add apples and toss gently to coat.
  • Spread apples evenly in a parchment paper- or foil-lined, large roasting pan or two 15x10x1-inch baking pans.
  • Roast (one pan at a time if using baking pans) 4 to 5 inches from heat for 7 to 10 minutes or until apples start to brown on edges, turning once halfway through.
  • Cool apples in pan(s). Reduce heat to 375°F.
  • Prepare pastry or let refrigerated pastry stand at room temperature according to package directions.
  • Line 9-inch pie plate with half of pastry (a deep one).
  • In very large bowl stir together brown sugar, flour, and salt.
  • Add apple slices and any juices; stir to coat.
  • Transfer to pastry-lined pie plate.
  • Trim top crust to edge of pie plate.
  • Fold top pastry edge under bottom pastry; crimp edge.
  • Brush top with mixture of beaten egg and water.
  • Cover edge of pie with foil to prevent overbrowning.
  • Place on middle shelf in oven; place foil-lined baking sheet on lower rack beneath pie.
  • Bake 30 minutes; remove foil from pie. Bake for 35 to 40 minutes more or until top is golden and filling is bubbly.
  • Remove to a wire rack.
  • While warm, drizzle with some of the caramel topping.
  • Cool completely.
  • Serve with remaining topping.

Pouring the caramel over the top of this pie gives it a sweet, crunchy glaze. I have always wanted to make it with a full top crust but everyone always requests the lattice top! Prep time includes preparing the apple slices. Feel free to use refrigerated pie crusts. NOTE: I used a full top crust (see pictures) and it is still delicious and easy, just not very pretty. It would be prettier without using the caramel as a glaze on the top, simply mix it all in with the apple slices.

2 (9 inch) prepared pie crusts
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1 cup white sugar
1 cup packed brown sugar
8 granny smith apples
1 teaspoon cinnamon
1 tablespoon vanilla
1 teaspoon allspice
1/2 teaspoon nutmeg
lemon juice

Steps:

  • Peel, core, and thinly slice the apples, store in a bowl with some lemon juice to keep from turning brown until needed.
  • Preheat Oven to 425°F.
  • Melt the butter in a sauce pan.
  • Stir in flour to make a paste.
  • Add water, vanilla, sugars and spices and bring mixture to a boil.
  • Reduce temperature and simmer, stirring constantly.
  • Remove from heat and pour approximately 3/4 of caramel mixture over apples and toss to coat.
  • Place bottom crust in a deep dish pie pan.
  • Fill with apple slices (there will be a lot, create a mound).
  • Cover with a lattice top crust and pour remaining caramel over the top, pouring carefully so it doesn't spill out. Or toss all caramel with apples and cover with a vented top crust.
  • Place on a cookie sheet (for runoff) and bake for 15 minutes.
  • Reduce temperature to 350F and cover pie crust and continue baking for 35-45 minutes or until apples are soft.

1 unbaked pie shell
1 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
6 cups peeled and coarsely chopped apples (I used Cortland or Empire)
1/2 cup caramel apple dip
2 tablespoons milk
1 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine granulated sugar, 1/4 cup flour, and cinnamon. Add the apples and toss to coat. Transfer to unbaked pie shell.
  • Combine 2 tablespoons of the caramel-apple dip and the milk; drizzle over the apple filling.
  • In a mixing bowl, combine 1 cup flour with brown sugar. Cut in butter until mixture resembles coarse crumbs. Sprinkle over filling. Cover edge of pie with foil to prevent overbrowning. Place on a baking sheet.
  • Bake in oven for 30 minutes. Remove foil. Bake for 25 to 30 minutes more or until golden. Cool 10 minutes. Drizzle remaining caramel dip over top. Cool pie on a wire rack, then serve.

1/2 cup sugar
3 tablespoons all-purpose flour

6 cups thinly sliced peeled apples (You may need more if your family sits by the bowl and sneaks the)
1 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking rolled oats

Steps:

  • Directions for Crumb Topping: Stir together brown sugar,flour, rolled oats.
  • Cut in 1/2 cup butter until topping is like course crumbs.
  • Set aside.
  • Directions: In a large mixing bowl, stir together the sugar, flour, cinnamon and salt.

3 -3 1/2 lbs apples (Golden Delicious, Granny Smith, Gala)
1 lemon
1/4 cup all-purpose flour
1 1/2 teaspoons cinnamon
1 cup white sugar
3 tablespoons water
1/4 cup heavy cream
1 teaspoon vanilla extract
store bought pie crust
1/4 cup butter
1 egg
1 tablespoon water
2 tablespoons sugar

Steps:

  • Peel and cut apples into 1.4inch slices.
  • Squeeze lemon on top to prevent browning.
  • Make Caramel sauce by putting sugar and water into a small pot over med to med-low heat and let come to a boil and turn a caramel color. DO NOT STIR AT ALL. This will take about 10-15minutes.
  • Once it is caramel colored turn off heat and add heavy cream, now you can stir.
  • Once the bubbles subside put back on a low heat and add Vanilla Extract.
  • Let sit on a low heat till ready to use.
  • Toss Apples with flour and cinnamon and put into a pie pan with a layer of crust on the bottom.
  • Pour caramel sauce all over the apples.
  • Cut butter into small cubes and dot all over filling.
  • Put 2nd piece of dough over the top and brush on egg wash (1egg mixed with 1tbs water) and sprinkle on the 2Tbs of sugar.
  • Cook at 350 for 45-55 minutes until golden brown.
  • Let sit at room temp 1-4hrs before serving, if you dont it will be a mess.
  • Serve at room temp or put in a 325 oven for 20-25 minutes and serve warm.
  • Enjoy!

So named because I won a blue ribbon at the county fair with this recipe. I use recipe #13619 for the double pie crust. However, I especially love it with Recipe #109287. Prep time depends on if you are peeling & slicing the apples by hand or not.

8 cups peeled & cored thinly sliced apples
1 tablespoon lemon juice
3/4 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flour
1 1/2 tablespoons cornstarch
1/8 teaspoon salt
2 tablespoons butter
1 (9 inch) double crust pie crusts, unbaked

Steps:

  • Coat apple slices with lemon juice.
  • Combine sugar, spices, flour, cornstarch and salt in a large zip-loc bag.
  • Add apples and shake bag until thoroughly coated.
  • Immediately, put coated apples into prepared pie crust.
  • Dot with butter.
  • Cover with top crust.
  • Crimp edges to seal and cut vent holes into crust.
  • Brush with milk and sprinkle with cinnamon sugar.
  • Bake at 425°F for 15 minutes, reduce temperature to 350°F and continue baking for 45 minutes or until golden brown.
