4 small boneless skinless chicken breasts, about 16 oz
16 ounces chunky salsa
15 ounces black beans, rinsed
1 cup 2% cheddar cheese, shredded

Steps:

  • Cook chicken in nonstick skillet on medium-high heat 4 minute on each side or until browned on both sides.
  • Add salsa and beans. Bring to boil; cover.
  • Simmer on medium-low heat 5 minute or until chicken is done.
  • Top with cheese. Remove from heat. Let stand, covered, 5 minute or until cheese is melted.

Amazing little sauce with fresh veggies and browned chicken breast. Simple enough for any weeknight yet still special and flavorful enough for guests. Adapted from a recipe I found at Kraft.com and changed quite a bit for my family.

Number Of Ingredients 9

1 lb boneless skinless chicken breast
1/2 green bell pepper, cut as desired
1 garlic clove, minced
4 ounces cream cheese, cubed
3/4 cup chicken broth
1/4 cup caesar salad dressing
2 green onions, chopped
2 tablespoons fresh basil, chopped or 1 tablespoon dried basil
1/2 cup cherry tomatoes, halved

Steps:

  • Saute chicken and peppers in a sprayed or lightly oiled skillet until browned on both sides. (about 5 minutes each side). Add garlic and cook, stirring constantly for about 30 seconds.
  • Stir in cream cheese, broth, dressing, onions and basil. Cook stirring often until sauce begins to thicken and chicken is cooked through (170°F.).
  • Stir in tomatoes and cook for 2 minutes.
  • Serve over pasta or rice.

1 c taco bell home originals thick 'n chunky salsa
15 oz can black beans, undrained
1 c shredded cheddar cheese

Steps:

  • 1. Cook chicken in nonstick skillet on medium-high heat 4 minutes on each side or until browned on both sides.
  • 2. Add salsa and beans. Bring to a boil; cover. Simmer on medium-low heat 5 minutes or until chicken is done.
  • 3. Top with cheese. Remove from heat. Let stand, covered, 5 minutes or until cheese is melted.
  • 4. Substitute: Prepare using 8 boneless skinless chicken thighs.
