This is a juicy dish and really easy to prepare. I have made these for years and they're still a huge favorite with family and friends. I serve them with mushroom rice and garlic bread. This is a sauceless recipe but the meat is so succulent you don't need it.

¼ cup vegetable oil
¼ cup soy sauce
1 tablespoon peanut butter
2 tablespoons finely chopped spring onion
1 teaspoon sesame seeds
1 clove garlic, crushed
⅛ teaspoon red chile powder, or to taste
salt and freshly ground black pepper to taste
1 ½ pounds pork tenderloin, cut into cubes
1 onion, cut into chunks, or to taste
1 (8 ounce) package fresh mushrooms, or to taste
1 large red bell pepper, cut into chunks, or to taste
1 zucchini, cut into chunks, or to taste

Steps:

  • Mix oil, soy sauce, and peanut butter together in a bowl until blended and creamy. Stir in spring onion, sesame seeds, garlic, red chile powder, salt, and pepper. Add pork to marinade; turn to coat.
  • Marinate pork in the refrigerator for 2 to 4 hours.
  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Thread pork, onion, mushrooms, red bell pepper, and zucchini onto skewers. Transfer to the baking sheet. Pour marinade on top.
  • Bake in the preheated oven until pork is tender and browned, about 30 minutes.

When Martha made this recipe on Cooking School episode 411, she used bone-in short ribs and omitted the skewers. She also doubled the marinade but did not use any apple juice. Hot kimchi (store-bought is fine) is great with the sweet, gingery ribs.

3 tablespoons soy sauce
1 tablespoon unseasoned rice vinegar
1 tablespoon packed light-brown sugar
1 teaspoon Worcestershire sauce
1 tablespoon unsweetened apple juice
1 teaspoon finely grated fresh ginger
1 teaspoon sesame seeds
1 teaspoon minced garlic
2 tablespoons thinly sliced scallions
1 1/2 pounds boneless Korean-style flanken short ribs, 1/4 inch thick (sold at Asian markets)
Kimchi, for serving
Steamed rice, for serving
Bibb lettuce, for serving

Steps:

  • Combine soy sauce, vinegar, sugar, Worcestershire sauce, juice, ginger, sesame seeds, garlic, and scallions in a shallow dish. Add ribs. Cover, and refrigerate at least 8 hours.
  • Preheat grill to medium-high. Thread meat onto skewers, and grill until cooked through, 1 to 3 minutes per side. Serve with kimchi, rice, and lettuce.

1 beef heart, about 1 1/2 pounds
3 tablespoons soy sauce
1/2 cup rice wine (ch'onju or chinese rice wine)
1 Asian pears, grated or 4 tablespoons fresh lemon juice
4 green onions, green and white part, finely minced
4 garlic cloves, crushed and minced
6 walnut halves, finely chopped
3 tablespoons sugar
1 tablespoon sesame oil
1 tablespoon toasted sesame seeds
black pepper, to taste

Steps:

  • Clean and trim the heart of the outer membrane and any excess fat(this is very easy as there is very little actual fat inside the heart,most of it will be outside the muscle tissue).
  • Using a sharp knife ,cut the meat into strips about 1/2-1 '' wide and almost paper thin.
  • Mix all marinade ingredients,mix with the meat,massaging everything together and marinade overnight.Start a fire about 30 minutes before cooking time-charcoal is best but your preference.
  • thread the meat strips onto skewers ,passing the skewers through the meat several times lengthwise.
  • Grill about 4 minutes per side or until done to your liking.
