a delicious, bright and fresh salad with loads of crunchy fresh ingredients, sausage, and tossed in sweet and savory poppyseed dressing.

3 cups spinach
4 precooked chicken sausages, sliced
3/4 cup quatered strawberries
1 large avocado, diced
3/4 cup whole raspberries
1/2 cup diced jicama
1/2 cup feta cheese
1/2 cup diced fresh pear
1/4 cup poppyseed dressing ((add more if desired))

Steps:

  • Add spinach to a large salad bowl.
  • Add raspberries, strawberries, avocado, jicama, feta cheese, and pears. Add 1/8th of a cup dressing and toss- add in remaning dressing tablespoon by tablespoon and toss until dressing is coated as desired (this helps make sure your salad is not overdressed).
  • Serve immediately. *If making ahead of time, reserve salad dressing until ready to serve. We also recommend waiting to add toppings until close to serve time to preserve freshness.

With the weather getting way too hot in Texas, the search is on to find food that goes great with BBQ and light enough not to weigh you down in the heat. I had this recipe on my phone for quite some time and I'm not sure where it came from, but boy was it a hit!

1 (5 ounce) package romaine lettuce
1 cup shredded Swiss cheese
1 cup cashews
1 red apple, diced
1 pear, cored and diced
¼ cup dried cranberries
⅔ cup vegetable oil
½ cup white sugar
⅓ cup lemon juice
1 tablespoon poppy seeds
2 teaspoons diced red onion
1 teaspoon salt

Steps:

  • Toss romaine lettuce, Swiss Cheese, cashews, apple, pear, and cranberries together in a large salad bowl.
  • Whisk vegetable oil, sugar, lemon juice, poppy seeds, red onion, and salt together in a bowl until dressing is smooth. Pour dressing over salad and toss to coat.

½ cantaloupe - peeled, seeded, and cut into 1/2-inch cubes
2 cucumbers - peeled, seeded, and cut into 1/2-inch cubes
½ small red onion, finely diced
1 large stalk celery, diced
⅓ cup poppy seed dressing, or more to taste
3 tablespoons red wine vinegar
1 teaspoon poppy seeds, or to taste

Steps:

  • Place cantaloupe and cucumbers in a colander; set a plate on top. Place a heavy object such as a large can of food on top of plate to squeeze out excess liquid from cantaloupe and cucumbers, tossing about every 30 minutes, 2 to 3 hours.
  • Transfer cantaloupe and cucumbers to a large bowl; add onion, celery, poppy seed dressing, and red wine vinegar. Toss to coat. Stir in poppy seeds.

1 orange, peeled and segmented
1 kiwi -- peeled, halved and sliced

1 tablespoon honey
1 teaspoon poppy seeds

3 (15 ounce) cans mandarin oranges, drained
1 bunch green onions, chopped
5 ounces slivered almonds
¾ cup white sugar
½ cup apple cider vinegar
1 tablespoon salt
1 teaspoon dry mustard
1 cup vegetable oil
1 ½ tablespoons poppy seeds

Steps:

  • Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.

1/4 cup sugar
1/3 cup slivered almonds
1 bunch romaine, torn (about 8 cups)
1 small onion, halved and thinly sliced
2 cups halved fresh strawberries
DRESSING:
1/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon sour cream
1 tablespoon 2% milk
2-1/4 teaspoons cider vinegar
1-1/2 teaspoons poppy seeds

Steps:

  • Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated. Spread on foil to cool. , Place romaine, onion and strawberries in a large bowl. Whisk together dressing ingredients; toss with salad. Break candied almonds into pieces; sprinkle over salad. We love, love, love this salad. The dressing is the real star here, with an awesomely delicious flavor. Linda calls for canned chicken in her recipe, but we like using leftover rotisserie chicken instead. Either way is terrific!

2/3 c olive oil
1/2 c sugar
2 Tbsp poppy seeds
1 Tbsp honey mustard
1 tsp salt
1/3 c lemon juice, fresh
1 large head romaine lettuce, chopped
1 c each sliced strawberries, mandarin oranges
1/4 c chopped red onion
1 c chopped walnuts
1 can(s) white chicken breast (swansons)
1 large english cucumber sliced thin
2 c shredded swiss cheese

Steps:

  • 1. Layer lettuce, chicken, strawberries, oranges, cucumbers, nuts, then red onion unto 3-4 serving plates. Set aside. Mix and shake oil, lemon juice, mustard, sugar, salt and poppy seeds. Drizzle on each salad to taste. Top with shredded Swiss Cheese.
  • 2. Serve with crusty Italian Bread; be sure you have enough to dip in the remaining dressing/just cannot resist!
