KITTENCAL'S LOW-FAT OVEN-BAKED ZUCCHINI STICKS

Kittencal's Low-Fat Oven-Baked Zucchini Sticks image

A recipe that goes back years and a great way to use up all that zucchini left over from summers crop, you may adjust all seasonings to taste --- if you are a garlic lover then you may increase to 1 teaspoon, I also add in a pinch of cayenne pepper for a little heat --- use only dry breadcrumbs for this --- if your seasoned breadcrumbs already have salt added then omit the 1/4 teaspoon salt --- as one reviewer mentioned that she dipped the sticks into Ranch dressing so you might want to give that a try using a low fat dressing or dip :)

1/4 teaspoon fresh ground black pepper (or to taste)

These have been a long time family favorite, use only dry breadcrumbs for this as fresh will not stick to the zucchini, the cayenne is only optional add in for some heat --- if desired you may slice the zucchini into rounds instead if sticks--- also see my recipe#244592

OVEN-FRIED ZUCCHINI STICKS WITH HONEY MUSTARD SAUCE

Oven-Fried Zucchini Sticks with Honey Mustard Sauce image

This dish is like fried zucchini-minus the actual frying, but just as delicious. The zucchini are super simple to prepare, and you don't have to worry about last-minute preparation because once they come out of the oven, they're finished. I especially love the recipe we came up with for the sauce. It really tastes like what you would get in a restaurant.

Yield makes about 60 sticks

Number Of Ingredients 10

Cooking spray or oil
3 zucchini
1/2 cup flour
Salt and pepper
1 1/2 cups breadcrumbs
2 eggs
2 tablespoons water
1/2 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons honey

Steps:

  • To make the zucchini sticks: Preheat the oven to 400°F. Coat a baking sheet with cooking spray or oil.
  • Trim and discard the ends of the zucchini. Cut the zucchini in half crosswise, then cut each half into 1/4-inch-thick sticks.
  • Place the flour in a resealable bag and season with salt and pepper. Place the breadcrumbs in a shallow bowl. Combine the eggs and water in another shallow bowl and beat well.
  • Place the zucchini in the bag with the flour and shake well to coat. Dip a piece of the floured zucchini in the egg and then the breadcrumbs, then place on the prepared baking sheet. Repeat with the remaining zucchini. Generously spray the zucchini with cooking spray and bake for 30 to 35 minutes, or until golden brown.
  • To make the sauce: Combine the mayonnaise, mustard, and honey in a small bowl and stir until smooth.
  • Serve the zucchini hot out of the oven with the sauce alongside as a dip.
  • Here is an appetizer you can dig into without blowing your calorie budget. If you make the sauce with low-fat mayonnaise, 10 zucchini sticks with 2 tablespoons of sauce adds up to less than 240 calories.

ZUCCHINI STICKS

Zucchini Sticks image

CRISPY AND GOOD!! A nice side dish for any meal. This recipe came from a Charleston, SC, fundraiser cookbook. Quick and easy.

Provided by Seasoned Cook

Categories     < 30 Mins

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 9

3 medium zucchini
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup flour
1 egg, slightly beaten
1 teaspoon milk
3/4 cup cornmeal
1/2 cup flour
vegetable oil

Steps:

  • Wash zucchini, but do not peel, slice off ends. Cut into lengthwise strips, about 1/2 inch thick.
  • Sprinkle with salt and pepper. Place zucchini on a paper towel. Let zucchini "sweat" while you prepare your other side dishes. Blot beads of water from zucchini with paper towels and proceed with recipe. (This allows for a more crispier fried zucchini.) Roll in flour. Beat egg and add one teaspoon of milk. Dip in egg mixture. Roll in mixture of cornmeal and flour.
  • Fry on medium heat in vegetable oil until lightly brown and crisp on all sides. May shake with additional salt. Enjoy!
