GRANDMA'S HUSH PUPPIES

My grandparent's used to have a Fish Fry at their house about once a month. Grandma always put the hush puppy batter together while grandpa sat on the back porch and fried them with the fish in his big frying cooker. You just can't have a Fish Fry without these wonderful hush puppies. This recipe makes about 15-20 hush puppies.

Number Of Ingredients 9

1 1/2 cups yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup milk
1 egg (beaten)
1 (16 ounce) can creamed corn
1 onion (small diced up)

Steps:

  • Pour vegetable oil into the fryer of your choice. Allow it to be getting hot while mixing.
  • Mix the first five ingredients together in a large bowl.
  • Add the last four ingredients and mix well.
  • If the batter isn't the consistency of pancake batter, add a little more flour to thicken or a little more milk for thinning.
  • Take a metal spoon and dip into the hot grease. This allows the batter to just slide off into the grease after putting on spoon.
  • Now, take about 1 tbs. size spoonfuls and place into grease.
  • Allow to cook for about 5 minute or until golden brown and turn.
  • Let cook on other side for about 3 more minute.
  • Remove from grease and drain on paper towel lined plate.
  • Enjoy with fried fish and cole slaw.

These are a family-favorite they fry up light and so fluffy, a must drizzled pancake or maple syrup on top, servings is only estimated it will depend on how much the batter you drop from the spoon --- these can also be made in a deep-fryer with oil heated to 365°F :)

1 cup all-purpose flour
1/4 cup yellow cornmeal
1 1/2 teaspoons baking powder
1 teaspoon seasoning salt or 1/2 teaspoon white salt
1 teaspoon ground black pepper (or to taste)
1 pinch cayenne pepper (optional)
3 tablespoons white sugar
1 large egg, slightly beaten
1/2 cup milk (might need a little more)
3 tablespoons melted lard or 2 tablespoons shortening
1 (12 ounce) canned corn kernels, drained and coarsely chopped
oil (for frying)

Steps:

  • Pour enough oil in a large cast-iron skillet (or a heavy skillet) to about 1-1/2-inches or a little more.
  • Heat oil over medium-high until hot (to test the oil drop a spoonful of batter into hot oil if it sizzles it is ready).
  • In a bowl mix together flour, cornmeal baking powder, seasoned salt, and cayenne pepper and sugar.
  • In another bowl beat together egg, milk and melted lard or shortening until combined; add into the flour mixture; mix to combined (if the mixture seems to dry then add in a little more milk.
  • Mix in the chopped corn kernels.
  • Drop the batter by teaspoonfuls into hot oil and fry until golden turning once (these will not take long to brown).
  • Drain well on paper towels.
  • Delicious.

1 quart vegetable oil for frying, or as needed
1 cup buttermilk
¼ cup vegetable oil
2 eggs, room temperature
1 cup cornmeal
1 cup all-purpose flour
¼ cup white sugar
½ teaspoon baking soda
½ teaspoon salt
½ cup minced onion
4 green onions, minced

Steps:

  • Heat 1 quart vegetable oil in a deep-fryer or large saucepan to 365 degrees F (185 degrees C).
  • Preheat oven to 200 degrees F (95 degrees C).
  • Whisk buttermilk, 1/4 cup vegetable oil, and eggs in a bowl.
  • Combine cornmeal, flour, sugar, baking soda, and salt in a separate bowl. Fold buttermilk mixture, onion, and green onions into cornmeal mixture until just mixed.
  • Drop 6 to 8 tablespoon-sized balls of batter into the hot oil; fry until each hush puppy is golden brown, turning the hush puppies to cook evenly, 6 to 10 minutes. Remove hush puppies with a slotted spoon and place on brown paper bags to drain. Repeat with any remaining batter.
  • Transfer hush puppies to a baking sheet and keep warm in the preheated oven until ready to serve.

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil.
