We Southerners love our grits. This is an easy delicious casserole that makes a good side dish for dinner, brunch, or breakfast.

Number Of Ingredients 9

3 cups water
2 cups milk
1 envelope knorr leek soup mix
1 1/4 cups quick-cooking grits
1/2 cup butter
1/4 cup chopped onion
2 cloves garlic, minced
2 large eggs, beaten
1 cup shredded sharp cheddar cheese

Steps:

  • Spray a 1 1/2 quart baking dish with nonstick cooking spray; set aside.
  • In a large saucepan, bring water and milk to a boil.
  • Add in the soup mix and whisk until blended.
  • Using a wooden spoon, slowly stir in grits; continue stirring until the consistency is smooth.
  • Cook and stir grits for 5 minutes or until they are thick and creamy.
  • Take saucepan from heat.
  • In a small saucepan or skillet, melt butter over medium heat.
  • Saute/stir onion and garlic for 3-5 minutes or until they are softened.
  • Add onion-garlic mixture to grits; stir to combine.
  • Add eggs and cheese to grits; stir to combine.
  • Transfer mixture to baking dish.
  • Bake in a 350° oven for about 1 hour or until set.

Grits is a main ingredient for many Southern meals. I've had this recipe for years and never grow tired of it. It's especially good to serve on a lazy weekend, since leftover portions are very tasty served cold.

1 pound bulk pork sausage
4 cups water
1 teaspoon salt
1 cup quick-cooking grits
4 large eggs, lightly beaten
1-1/2 cups shredded sharp cheddar cheese, divided
1/2 cup whole milk
1/4 cup butter, softened

Steps:

  • Crumble sausage into a large skillet. Cook over medium heat until no longer pink; drain and set aside. In a saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat and cook 4-5 minutes, stirring occasionally. Remove from the heat. Stir a small amount of hot grits into the eggs; return all to the saucepan, stirring constantly. Add the sausage, 1 cup cheese, milk and butter, stirring until the butter is melted. , Pour into a greased 13x9-in. baking dish. Sprinkle with remaining cheese. Bake at 350° for 50-55 minutes or until the top begins to brown.

If you are making this for someone who can't eat a lot of salt... or just dont like spicy food(s). Dont add the salt, pepper and tabasco to the recipe. Each individual can add those as they sit down to eat...

Number Of Ingredients 9

1 c quick cooking grits
3 c water, boiling
1 c milk
1 lb breakfast sausage
1 small onion, chopped
1 egg, beaten
2 c sharpe cheddar cheese, grated
salt and pepper ( to taste)
tabasco sauce ( to taste)

Steps:

  • 1. Combine water, milk, salt and pepper ( to your liking) Bring to a boil
  • 2. Add grits. Stir, cover and cook for 5 minutes on low.
  • 3. Saute' onion and sausage in a nonstick skillet until onion is transparent and sausage is not pink. Drain fat.
  • 4. In a bowl, combine grits, sausage, and onion mixture.
  • 5. also add beaten egg, 1 cup of cheese and tabasco sauce ( to your taste) Stir.
  • 6. Spray 2-quart casserole dish with Pam cooking spray Bake at 350* for 30 minutes
  • 7. The last 10 minutes of cook time, top with the remaining 1 cup of cheddar cheese
