My father used to make this recipe, it is very tasty and very easy. If you would like a smaller serving size just use less of everything, like only a half of a head of broccoli. The vegetables definitely add up!! This recipe is great and fun to work with.

2 (1 lb) packages kielbasa
3 carrots (diagonally sliced)
1 head broccoli
1 small onion (sliced)
1 head cauliflower
1 red bell pepper (sliced)
1 clove garlic (minced)
1/4 cup low sodium soy sauce
2 tablespoons Worcestershire sauce
1 tablespoon sugar
2 cups white rice
4 cups water

Steps:

  • Begin rice first, using instructions on package.
  • Slice sausage in 3/4" pieces or smaller pieces if Desired and place in a heated wok or a large skillet.
  • Add broccoli, cauliflower, carrots, onion, bell pepper, and garlic after the sauage becomes slightly browned.
  • Let saute for approximately 8 minutes or until the onion becomes clear Add the soy sauce, worcestershire sauce and sugar and continue to saute until the vegetables are tender and the sausage is browned.
  • Serve over rice and ENJOY!

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

½ onion, chopped
1 (16 ounce) package kielbasa sausage, sliced
½ head broccoli, cut into florets
3 potatoes, peeled and sliced
salt and ground black pepper to taste

Steps:

  • Spray a large skillet with cooking spray and heat over medium-low heat. Cook and stir onion in the hot skillet until translucent, about 5 minutes. Add kielbasa; fry until sausage is lightly browned, stirring occasionally, about 5 minutes more.
  • Stir broccoli and potatoes into sausage mixture; season with salt and pepper. Cook, without stirring, until broccoli begins to soften, about 15 minutes. Stir mixture and continue to cook until vegetables are completely tender, 10 to 15 minutes more.

My kids came up with this recipe. I gave them the challenge to find one meat they like, three veggies of different colors and how to get them all to work together. I, also, asked them to find a bread group item to go with it. They loved experimenting.

1 package(s) kielbasa
1 package(s) california blend veggies
1 box(es) orzo pasta
3 tablespoon(s) olive oil

Steps:

  • Get your orzo (Don't use rice.) and cook according to package directions. Be careful to check it as it's cooking because it's easy to overcook it.
  • In a wok or large fairly deep skillet, pour in 1 tablespoon olive oil (Your choice of what kind you use.)Put frozen California blend veggies in the wok/skillet and drizzle with remaining 2 tablespoons of oil. Cover with a lid. Stir occasionally.
  • While veggies are cooking cut up the kielbasa into bite size pieces. I like to cut them into 1/2 inch slices and cut those into half so it appears that you have more since the kids like to fight over it.
  • Put the kielbasa in the wok/skillet over the cooking veggies and stir. Add more oil as needed to prevent sticking. Cook until heated through and all veggies are fork tender.
  • Drain orzo and put into wok/skillet with the kielbasa-veggie mixture. Stir thorough. Add a glass of milk and you have all 4 food groups.
