Kielbasa and Apple Pasta Bake image

This is especially good to make when apples are in season and at the peak of their flavor, and it features a favorite food pairing: sweet-tart apples with cheddar cheese.

nonstick cooking spray
8 ounces dried rigatoni pasta or 8 ounces penne pasta
2 cups milk (not fat-free)
2 tablespoons all-purpose flour
1 cup shredded cheese (4 ounces)
1/2 teaspoon salt
1/2 teaspoon bottled hot pepper sauce
3 medium fuji or jonathan apples, cored and cut into 1/2-inch cubes (you want a fine-grained apple in order to avoid the apples getting too mushy when cooked)
8 ounces cooked kielbasa, halved lengthwise and sliced 1/4-inch thick
1 medium green onion, thinly sliced

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart baking dish or casserole with nonstick cooking spray; set aside.
  • Cook pasta according to package directions in a large saucepan. Drain and return to saucepan; set aside.
  • Meanwhile, in a medium saucepan whisk together milk and flour. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from heat. Stir 1/2 cup of cheese, salt and hot pepper sauce into the milk mixture until smooth.
  • In the large saucepan toss together the cooked pasta, apples, kielbasa and cheese sauce. Transfer to prepared baking dish; cover with foil.
  • Bake in preheated oven for 20 minutes. Uncover and carefully stir pasta mixture. Sprinkle with remaining 1/2 cup cheese and the green onion. Bake 10-15 minuted more or until cheese is melted and sauce is bubbly. Remove from oven and let stand for 10 minutes before serving.

This is one of my recipes from New Years Day 2006. It was easy to make and the flavor was amazing. I should have made more.

3 lbs kielbasa
2 (16 ounce) cans apple pie filling
1 dozen maraschino cherry

Steps:

  • Slice your Kielbasa into bite size pieces. I prefer Beef Kielbasa, but other flavors will also work. Be sure it is cold when you slice it so the juices do not run.
  • Lightly coat a 9x14 glass baking dish with unflavored cooking spray.
  • Pour one can of your apple pie filling into your baking dish. Spread it around evenly without crushing the apples.
  • Arrange your Kielbasa pieces in your dish, then pour your remaining can of apple pie filling over them.
  • Cover your baking dish with tinfoil. Insert into your oven and bake at 350 degrees for about 20 minutes.
  • After 20 minutes, turn your Kielbasa slices over, arrange your Maraschino cherries among the apples in your baking dish, re-cover with your tinfoil and continue baking another 20 minutes.
  • Remove from your oven and serve your Kielbasa in your baking dish. Your guests will bombard you with compliments as they gobble up every single piece of juicy Kilebasa. They'll eat all the apples and cherries too.

1 lb rigatoni pasta
2 tablespoons olive oil
1 large onion, sliced
1/4 cup all-purpose flour
1 quart milk
3 cups extra-sharp cheddar cheese
1 teaspoon hot pepper sauce
1 teaspoon salt
1 (14 ounce) package kielbasa, fully cooked, cut into 1/4 inch slices
3 fuji apples, cored, cut into 1/2 inch slices
2 scallions, thinly sliced

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Coat a 10-cup baking dish with non-stick cooking spray.
  • In large pot of lightly salted boiling water, cook rigatoni until al dente, firm but tender, following package instructions. Drain.
  • In large heavy-bottom saucepan, heat olive oil over medium-high heat.
  • Add onion and cook until softened, 5 to 7 minutes.
  • Stir in flour, cook 1 minute.
  • Gradually whisk in milk.
  • Bring to boil, stirring continuously; boil until thickened, about 1 minute.
  • Remove from heat.
  • Set aside 1 cup of cheese for topping casserole.
  • Whisk remaining 2 cups cheese, hot-pepper sauce, and salt into mixture.
  • In pasta pot, combine rigatoni, cheese sauce, kielbasa and apples into baking dish.
  • Cover.
  • Bake covered for 30 minutes.
  • Uncover and stir.
  • Sprinkle with 1 cup remaining cheese and scallions.
  • Bake until cheese is melted, about 10 minutes.
  • Let stand 10 minutes.
  • Serve.
