OATMEAL CHOCOLATE CAKE
I've had this recipe a long time. It's one of my family's favorite desserts, and I still make it often.

- In a large bowl, combine the oats and boiling water. Let stand for 15 minutes or until cooled. , In another large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the oat mixture; mix well. Combine the flour, cocoa, baking soda and salt; add to creamed mixture and mix well., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine the topping ingredients; spoon over top of warm cake; broil about 4 in. from heat for 3-4 minutes, or until top is lightly browned.

I first started making this cake when my husband was stationed with the military in California. Now, 20 years later, I've prepared it all across the country and in Germany. Chocolate lovers especially rave about this recipe!

- In a bowl, pour water over oatmeal. Allow to stand 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs, one at a time, mixing well after each addition. Sift flour, soda, cocoa and salt together. Add to batter. Mix well. Stir in half the chocolate chips. Pour into a greased 13x9-in. baking pan. Sprinkle top of cake with walnuts and remaining chips. Bake at 350° for about 40 minutes.

- Mix the oat and boiling water, let stand for 10 minutes.
- Next, stir in the sugar, eggs and butter.
- In another bowl, combine the brown sugar, flour, baking soda, salt, cocoa, and the semi sweet morsels.
- Combine all ingredients; pour into greased 9x13 pan; sprinkle remaining pkg of chocolate morsels over batter; add chopped nuts (optional) Bake at 350 for 40 minutes.

CHOCOLATE OATMEAL SNACK CAKE
I would make this for my daughters as an afterschool treat. It produces a moist, dense, delicious cake. Since it's baked in a 9x9 pan, there's not a whole lot of cake around to tempt me for too long! Make your own frosting or use store-bought. Or simply dust it powdered sugar!

Steps:
- In a medium bowl, place the oats and the margarine.
- Pour the boiling water over the oats & margarine and allow to sit for 20 minutes.
- Add the eggs to the oatmeal mixture and blend together.
- Sift together the dry ingredients and add to the wet mixture; stir well.
- Pour into a greased 9x9 cake pan and bake at 375 degrees for 25 to 30 minutes or until cake tests done.
- Cool completely and frost.

MICROWAVE CHOCOLATE OATRAGE SNACK CAKE

- In large mixer bowl, mix butter, oats, flour, brown sugar, eggs, walnuts and vanilla.
- Beat 3 minutes at medium speed or until mixture is light and fluffy.
- Stir in 1 cup chocolate morsels.
- Spread batter into 8" square microwave-safe dish; cover dish with wax paper.
- Cook on HIGH power 4 minutes; rotate dish 1/4 turn.
- Cook on HIGH power 4 to 5 minutes longer or until top of cake appears dry and bottom is an even color.
- Sprinkle remaining 1 cup chocolate morsels over top of warm cake.
- Let stand 10 minutes, then spread chocolate evenly over cake.
- Cool directly on countertop.
- Cut into serving pieces.
