I've had this recipe a long time. It's one of my family's favorite desserts, and I still make it often.

1 cup old-fashioned oats
1-1/2 cups boiling water
1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs
1-1/2 cups all-purpose flour
1/2 cup baking cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon salt
TOPPING:
2/3 cup packed brown sugar
1/2 cup plus 1 tablespoon butter, melted
1-1/2 cups sweetened shredded coconut
3/4 cup chopped walnuts
6 tablespoons half-and-half cream
1-1/2 teaspoons vanilla extract

Steps:

  • In a large bowl, combine the oats and boiling water. Let stand for 15 minutes or until cooled. , In another large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add the oat mixture; mix well. Combine the flour, cocoa, baking soda and salt; add to creamed mixture and mix well., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Combine the topping ingredients; spoon over top of warm cake; broil about 4 in. from heat for 3-4 minutes, or until top is lightly browned.

I first started making this cake when my husband was stationed with the military in California. Now, 20 years later, I've prepared it all across the country and in Germany. Chocolate lovers especially rave about this recipe!

Number Of Ingredients 12

1-3/4 cups boiling water
1 cup uncooked oatmeal
1 cup packed brown sugar
1 cup sugar
1/2 cup butter, softened
3 large eggs
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking cocoa
1/4 teaspoon salt
1 package (12 ounces) semisweet chocolate chips, divided
3/4 cup chopped walnuts

Steps:

  • In a bowl, pour water over oatmeal. Allow to stand 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs, one at a time, mixing well after each addition. Sift flour, soda, cocoa and salt together. Add to batter. Mix well. Stir in half the chocolate chips. Pour into a greased 13x9-in. baking pan. Sprinkle top of cake with walnuts and remaining chips. Bake at 350° for about 40 minutes.

1 cup quick oats
1 3/4 cups boiling water
1 cup sugar
2 large eggs
1/2 cup butter, softened
1 cup brown sugar
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon baking cocoa
1 (12 ounce) package semi-sweet chocolate bits

Steps:

  • Mix the oat and boiling water, let stand for 10 minutes.
  • Next, stir in the sugar, eggs and butter.
  • In another bowl, combine the brown sugar, flour, baking soda, salt, cocoa, and the semi sweet morsels.

I would make this for my daughters as an afterschool treat. It produces a moist, dense, delicious cake. Since it's baked in a 9x9 pan, there's not a whole lot of cake around to tempt me for too long! Make your own frosting or use store-bought. Or simply dust it powdered sugar!

1 cup quick-cooking oats
8 tablespoons margarine
1 1/2 cups water, boiling
2 eggs
1/2 cup cocoa
1 cup flour
1 1/2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a medium bowl, place the oats and the margarine.
  • Pour the boiling water over the oats & margarine and allow to sit for 20 minutes.

1 1/2 cups Quaker Oats, uncooked
1/2 cup all-purpose flour
1 cup firmly packed brown sugar
2 eggs
1 cup chopped walnuts
1 teaspoon vanilla extract
2 cups NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided

Steps:

  • In large mixer bowl, mix butter, oats, flour, brown sugar, eggs, walnuts and vanilla.
  • Beat 3 minutes at medium speed or until mixture is light and fluffy.
  • Stir in 1 cup chocolate morsels.
  • Spread batter into 8" square microwave-safe dish; cover dish with wax paper.
  • Cook on HIGH power 4 minutes; rotate dish 1/4 turn.
  • Cook on HIGH power 4 to 5 minutes longer or until top of cake appears dry and bottom is an even color.
  • Sprinkle remaining 1 cup chocolate morsels over top of warm cake.
  • Let stand 10 minutes, then spread chocolate evenly over cake.
  • Cool directly on countertop.
