- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes and seasonings. Cover and simmer for 5 minutes. Add rice; cover and simmer for 30 minutes or until heated through. Discard bay leaf before serving.

- Combine water, rice, coconut milk, kidney beans, thyme, and salt in a large pot. Stick cloves into onion and add to the pot. Bring to a boil; simmer, covered, until most of the liquid is absorbed, about 20 minutes. Uncover and cook until remaining liquid is reduced, about 5 minutes more.

- Cook rice according to directions adding kale, Knorr chicken cubes, chopped kale, and tomato sauce.
- Fill dutch oven or large sauce pan with water. Bring the water to a boil. Add the kale, cover, and steam until just tender, 7 to 10 minutes.
- Heat olive oil in a large skillet over medium heat; cook and stir onion, until the onion is tender, about 5 minutes. Stir kale and rice into the mixture, breaking the rice into grains with your spoon as you stir; season with salt. Cook and stir until the rice is hot, about 5 minutes.

- Microwave corn, 2 ears at a time, for 3 1/2 minutes. Remove husks and silks, cool and cut kernels from cobs.
- Place corn in large bowl with rice, peppers, kidney beans and onion.
- Combine dressing ingredients and pour over corn and rice mixture and mix well.
