KID-FRIENDLY PASTA SALAD



Kid-Friendly Pasta Salad image

12 ounces fun-shaped pasta, such as radiatore
8 slices thin bacon
1/2 cup mayonnaise
1/2 cup whole milk
3 tablespoons white vinegar
1/2 teaspoon salt
Dash sugar, optional
10 ounces grape tomatoes (yellow and red), halved lengthwise
1/2 pound Cheddar, cut into small cubes
3 green onions, thinly sliced
Ground black pepper
24 whole basil leaves, chiffonade

Steps:

  • Cook the pasta according to the packet instructions. Then drain and rinse in cold water until cool. Set aside.
  • Cut the bacon into 1/2-inch pieces and throw into a large skillet. Saute until slightly crisp, and then remove to a paper-towel-lined-plate.
  • For the dressing, mix the mayonnaise, milk, vinegar, salt, and sugar if using in a small bowl.
  • Stir together the pasta, dressing, tomatoes, bacon, Cheddar and green onions in a large mixing bowl. Taste for seasonings, adding more salt and pepper if needed.
  • Stir in the basil at the end.

This pasta salad is a favorite among kids. I make it with odd-shaped pasta shapes like wagon wheels, fiore (flower-shaped), cellentani ("squiggly"-shaped), or sometimes just plain old elbow macaroni.

1 lb wagon wheel macaroni or 1 lb elbow macaroni
3 celery ribs, chopped
3/4 cup chopped red onion
1 1/2 cups frozen baby peas, thawed
3/4 lb cooked ham, cut into 1/2 -1-inch cubes
3/4 lb cheddar cheese, cut into 1/2 -1-inch cubes
2 cups mayonnaise
2 tablespoons vinegar
1 tablespoon sugar
3/4 teaspoon mustard
3/4 teaspoon ketchup
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dill weed
1/2 teaspoon paprika

Steps:

  • In a large mixing bowl, toss together cooled cooked pasta, celery, onion, peas, ham and cheese.
  • In a small mixing bowl, whisk together mayo, vinegar, sugar, mustard, ketchup, salt, pepper, dill and paprika until well-blended.
  • Pour mayo dressing mixture over salad mixture and stir to coat well.

My father made this recipe for me years ago and I absolutely loved it! I make it for my children and my younger siblings and they all love it too. This macaroni salad goes great with just about any type of meat whether it's grilled, baked, or fried. Also, makes a great snack when you have leftovers and don't feel like fixing anything.

1 lb elbow macaroni
4 -5 tablespoons dill pickles, minced
2 -3 tablespoons black olives, minced
2 -3 tablespoons green onions, chopped (to taste)
1 cup Hellmann's mayonnaise (add more to taste)
1/2 teaspoon yellow mustard (optional)
salt (to taste)
pepper (to taste)
1 -2 lb shredded cheddar cheese (to taste)

Steps:

  • Boil noodles like you normally would do. Until done. Drain the noodles. Put them in a large bowl and put in the fridge to cool. (Faster prep: Run them under cold water until cool then let sit so all of the water will drain).
  • Mince pickles and black olives. (Faster & easier prep: Buy dill pickle relish and already chopped black olives).
  • Chop green onions.
  • After noodles are cool add mayonnaise (more or less to taste) & mustard (optional) and mix together.
  • Add pickle, olives, & green onions and mix. (Can use more or less. I personally like a lot of pickles and little onion & olives).
  • Add salt and pepper to taste.
  • Put in the fridge to chill. (Sometimes you may need to add more mayo when ready to serve).
  • Add the cheese when you are serving. (I let everybody add as much as they want. Makes it fun for the kids).

¼ cup minced red onion (soaked in cold water for 5 minutes, drained)
3/4 cup shredded carrots
1 Tablespoon minced flat-leaf parsley
½ cup diced vine ripened tomato (optional)
½ cup prepared mayonnaise
¾ teaspoon dried mustard
1½ teaspoons sugar
1½ Tablespoons cider vinegar
3 Tablespoons sour cream
½ teaspoon kosher salt (plus more to taste)
Freshly ground black pepper

Steps:

  • In a large bowl combine the macaroni, celery, onion, parsley and tomato.
  • In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt.
  • Pour the dressing over the salad and stir to combine.
  • Season with salt and pepper to taste and serve.
  • Store covered in the refrigerator, for up to 3 days.
