This KFC Coleslaw Recipe is as close as you can get without actually ordering it from the restaurant directly. The taste is simply perfect!

8 cups finely chopped cabbage
1/4 cup finely chopped carrot
2 1/2 tablespoons very finely minced yellow onion
1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup whole milk
1/4 cup buttermilk
2 1/2 tablespoons lemon juice
1 1/2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/8 teaspoon ground pepper

Steps:

  • Chop the vegetables very fine: the cabbage, carrots, and onions are all chopped very fine, almost like the size of rice. You can chop them with a sharp knife, or if you have a food processor with a shredding attachment, use that and then finely chop with a sharp knife. (See note about using a pre-shredded coleslaw mix.)
  • In a large bowl, combine all the ingredients for the dressing. Whisk until smooth.
  • Add in cabbage, carrots, and onion; mix well until everything is thoroughly coated.
  • Cover and refrigerate overnight. (If you have time - and can remember! - stir it occasionally. This will give you the absolute best results.) Stir again before serving and enjoy!

This is a much healthier version than the KFC clone by Todd Wilbur, and still TASTES GREAT! I changed ingredients to make it more approachable on a low cal, low carb or diabetic diet. It's perfect for me! I thought I had posted this before but had not, so I am really happy I saved it! I don't want to lose this recipe!!! Cook time is time to chill, so prep is really quick. Make it early in the day and it will be ready for afternoon picnics and barbecues.

16 ounces coleslaw mix (shredded cabbage with carrot)
1/2 cup fat-free mayonnaise
1/2 teaspoon white pepper
1/2 teaspoon kosher salt
1/3 cup Splenda granular
1 tablespoon onion powder
1 tablespoon parsley flakes
1 teaspoon celery seed
1/2 cup low-fat buttermilk
3 tablespoons lemon juice

Steps:

  • Pulse cole slaw mix in a food processor until finely chopped, or chop by hand.
  • Combine remaining ingredients in a bowl with a whisk.
  • Add cole slaw mix, stirring well.
  • Chill several hours before serving.

We love going to Kentucky Fried Chicken. Although we enjoy the chicken, we actually go for the coleslaw. We buy several pints at a time. I make several versions of cole slaw but we sometime just want this. I tried for several years before getting this recipe right. I think I have figured it out now.If you are in a hurry get a bag of the preshredded slaw mix. It is not quite as good as grating it yourself though. -Donna Gribbins, Shelbyville, Kentucky

1/2 cup buttermilk
1/2 cup mayonnaise
1/3 cup sugar
2 tablespoons lemon juice
4-1/2 teaspoons white vinegar
1 teaspoon salt
1/2 teaspoon pepper
1 pound finely chopped cabbage (about 8 cups)
2 medium carrots, finely chopped (about 2 cups)
3 tablespoons grated onion

Steps:

  • In a large bowl, whisk the first 7 ingredients until combined. Add remaining ingredients; toss to coat. Refrigerate, covered, at least 2 hours and up to 3 days before serving.
