This is a recipe from a restaurant in Islamorada, Florida that my husband and I went to on our 25th wedding anniversary. Twice. In two days....because it was that good. This recipe is identical to what we ate, as I was lucky enough to find it in a book shortly after we came home. This is good for lunch or dinner. I served it with garlic mashed potatoes and some Pinot Grigio.

1 cup water
1/4 cup dry white wine (Chef Lupe uses Chablis, and I have used Grigio, both good)
1 tablespoon key lime juice (I like a bit less, and can be ordered at Amazon if not available locally)
1/2 teaspoon garlic powder
1/8 teaspoon fresh ground white pepper (to taste)
1/4 lb butter (one stick)
3 teaspoons water
3 teaspoons cornstarch
2 large eggs
2 tablespoons water
1 cup flour
2 cups panko breadcrumbs (Japanese style breadcrumbs)
2 lbs white fish fillets (I like Mahi Mahi the best, grouper great too)
1 cup diced tomato (using more fine)
1 cup thinly sliced scallion, some greens included (using more fine)
1/2 cup grated parmesan cheese (I think more is better)
2 tablespoons fresh parsley

Steps:

  • Place the water, wine and key lime juice in a large saucepan over a high heat and reduce by half, about 5 minutes.
  • Add the garlic power. Add pepper to taste. Cut the butter into pats about the size of 1 tablespoon. Reduce the heat to low. Add one pat butter and whisk until the butter is incorporated. Add another pat and continue until all of the butter is used.
  • Mix the water and cornstarch together and add to the sauce. Raise the heat to medium and stir until the sauce thickens and a few bubbles appear. Set aside while the fish cooks.
  • Mix the eggs and water together in a small bowl (whisk vigorously til combined).
  • Place the flour on a plate and dip the fish fillets into flour, coating both sides.
  • Dip the fish into the egg wash.
  • Place the bread crumbs on a second plate and coat the fish with bread crumbs, making sure both sides are coated.
  • Heat 4 tablespoons of the Key lime butter sauce over medium-high heat in a skillet large enough to hold the fish in one layer. Add the fish and sauté for 4 minutes. It should be golden. Turn the fish and sauté for 4 minutes for 1 inch thick fillets. Sauté 2 minutes longer for thicker fish or 2 minutes less for thinner fish. The fish is cooked when the flesh is opaque, not translucent. (I had trouble sauteing in the sauce, and did use olive oil or coconut oil here).
  • Place the fish on 4 dinner plates. Spoon the sauce over the fish. Sprinkle the tomatoes, scallions, parmesan cheese and parsley over the fish.
  • Note: I have had the best success with setting up all ingredients before cooking. My prep time and cook time may be a bit off only because I make it an event and take my time so I guessed at both as if I was trying to get the job done normally. The ingredients are copied verbatim from book, and are in order of use, and I thought a bit confusing at first, but it works! Lastly, use real butter, good fish and fresh herbs and cheese. It makes all the difference.

FLORIDA GROUPER WITH CUCUMBER SLAW AND KEY LIME BUTTER SAUCE

Cucumber Slaw:
1 cup julienned cucumber
1/2 cup julienned red bell pepper
1/2 cup julienned carrot
2 tablespoons rice vinegar
2 tablespoons freshly-squeezed lime juice
2 tablespoons chopped fresh cilantro
2 tablespoons sugar
1 tablespoon soy sauce
1/2 teaspoon sesame oil
Key Lime Butter Sauce:
6 ounces white wine
2 shallots, minced
2 bay leaves
4 cups heavy cream
Zest and juice of 2 Key limes
4 tablespoons cornstarch
1/2 cup water
2 sticks cold unsalted butter, cubed
For the Grouper:
Four 7-ounce fresh skinless grouper filets
2 ounces blended oil (half olive oil, half vegetable oil)
Kosher salt and freshly ground black pepper

Steps:

  • For the slaw: Toss together the cucumber, bell pepper, carrot, rice vinegar, lime juice, cilantro, sugar, soy sauce and sesame oil. Refrigerate until ready to serve.
  • For the key lime butter sauce: Bring the wine, shallots and bay leaves to a boil in a medium saucepan over high heat. Once boiling, add the heavy cream and lime zest and juice. Bring back to a boil and cook until reduced by half. Mix the cornstarch and water together and slowly whisk into the reduced cream.
  • Once the mixture thickens turn the heat to low and add the butter a little at a time, whisking each time until fully incorporated. Run through a fine strainer and keep warm until serving.
  • For the grouper: Preheat the oven to 400 degrees F. Heat the oil in a large skillet over medium-high heat until it just begins to smoke. Season the grouper filets with salt and pepper, put in the skillet top-side down and cook until the flesh begins to crisp, about 2 minutes. Do not flip; transfer the skillet to the oven and cook until the grouper flakes easily, 5 to 6 minutes.
  • To serve, spoon some Key Lime Butter Sauce on each of 4 plates and top with a grouper filet browned-side up. Top each filet with some Cucumber Slaw and serve.

½ cup butter, softened
1 tablespoon hot pepper sauce
1 ½ tablespoons key lime juice
2 tablespoons butter
2 pounds medium Key West pink shrimp, peeled and deveined
4 small spiny lobster tails, meat removed from shell and coarsely chopped
1 pound fresh mushrooms, sliced
1 ½ teaspoons minced garlic
¼ cup white wine

Steps:

  • Mix 1/2 cup of butter with hot pepper sauce and Key lime juice in a small bowl; cover with plastic wrap and refrigerate for at least 3 hours.
  • Melt 2 tablespoons butter in a large non-stick skillet over medium-high heat; stir in shrimp and lobster tails. Cook and stir until shrimp just turn pink, 2 to 3 minutes.
  • Reduce heat to medium and stir in the mushrooms, garlic, and white wine; continue to cook and stir until the mushrooms have released their liquid and are tender, about 5 more minutes.
  • Remove from heat and stir in the Key lime juice mixture until melted.

KEY LIME PIE WITH BUTTER CRACKER CRUST

We were pleasantly surprised that salty, buttery crackers worked just as well as graham crackers for this Floridian custard pie. This crust would also take nicely to a filling of peanut butter mousse or pudding.

2 tablespoons unsalted butter, melted, plus more for buttering the pie plate
60 butter crackers, such as Ritz Crackers (about 2 sleeves)
2 tablespoons sugar
1 large egg white
One 14-ounce can sweetened condensed milk
2/3 cup fresh Key lime or lime juice (from about 6 to 8 limes), plus 1/2 Key lime or lime for garnish
Pinch kosher salt
4 large egg yolks
Whipped cream, for serving (see Cook's Note)

Steps:

  • For the crust: Adjust an oven rack to the middle position and preheat the oven to 350 degrees F. Butter a 9-inch pie plate. Put the crackers in a food processor and pulse until they form fine crumbs. Add the butter, sugar and egg white and pulse until the mixture comes together like wet sand (it should hold together when pinched). Transfer to the prepared pie plate and press evenly into the bottom and up the sides. Bake until lightly golden, about 10 minutes. Let cool completely.
  • For the filling: Whisk together the condensed milk, lime juice, salt and egg yolks in a medium bowl. Pour into the cooked pie shell and bake until the filling is set and only slightly jiggles in the center, 18 to 20 minutes. Let cool completely at room temperature and then refrigerate, loosely covered with plastic wrap, until chilled, about 2 hours or up to overnight.
  • Prepare the garnish: Use a citrus zester to make strips of zest. Then cut away all of the peel and white pith (save the other half for another use). Cut the lime "meat" into small chunks.
  • Fill a piping bag fitted with a star tip with whipped cream. Pipe mounds of whipped cream around the edges of the pie and decorate with chunks of lime and zest. Serve immediately or return to the refrigerator to chill until serving.

This is not a beurre blanc as there is no cream in a beurre blanc. It is a delicious butter sauce though! I serve it with seared scallops, spinach, jasmine rice, also a red pepper sauce.

1/3 cup white wine vinegar
1/3 cup dry white wine
2 large shallots, very finely chopped
1/2 cup key lime juice (I use Nellie & Joe's Famous Key West Lime Juice)
1/3 cup heavy whipping cream
3/4-1 cup unsalted butter
salt & freshly ground black pepper, to taste

Steps:

  • Reduce the vinegar, wine, keylime juice, shallots, salt and pepper in a saucepan over medium heat until the liquid is nearly evaporated.
  • Add the heavy cream and reduce by half.
  • Cool the mixture to 140°F.
  • Place the saucepan with the reduced mixture over extremely low heat and whisk in the butter tablespoon by tablespoon, whisking vigorously the entire time.
  • Strain the sauce.
  • Keep warm until ready to serve - do not allow the sauce to boil or it will separate.

4 teaspoons Key lime or regular lime juice
1 teaspoon grated lime zest
Green decorating gel, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in lime zest and vanilla. In another bowl, whisk flour and cornstarch; gradually beat into creamed mixture., Shape dough into 1-in. balls; place 1 in. apart on ungreased baking sheets. Flatten to 1/4-in. thickness with bottom of a glass dipped in sugar. Bake 8-10 minutes or until bottoms are light brown. Remove from pans to wire racks to cool completely., In a small bowl, mix confectioners' sugar, lime juice and zest. Brush over cookies. Let stand until set. If desired, decorate with gel just before serving.

2 whole snappers, eviscerated and scaled
Fleur de Sel
Freshly cracked black pepper
12 key limes, washed and sliced
2 red onions, sliced
2 tablespoons ginger, julienned
1/2 cup extra virgin olive oil
10 tablespoons whole, unsalted butter
1 ripe mango, rough dice
4 key limes, juiced
2 lemons, juiced
1 tablespoon Dijon mustard
2 sliced shallots
Salt and freshly ground black pepper
Canola oil, for cooking
2 large plantains, peeled and sliced into 2-inch thick slices
2 tablespoons minced ginger
2 tablespoons honey
1/2 cup thinly sliced scallions, green part only

Steps:

  • Pat dry the fish inside and out. Season inside and out with salt and pepper. Mix the key limes, onions, ginger, and olive oil together. Stuff the fish with the mixture. Rub the outside with a little of the olive oil. On a prepared (cleaned and oiled), medium hot grill, place the fish and grill both sides. Watch for flare-ups. Have a squirt bottle of water handy to prevent burning. Cook the fish for about 10 to 12 minutes a side or until the fish is flaky. Let rest for 5 minutes before serving.
  • On a large oval, zig-zag the mango brown butter. Place the plantains on the plate and top with fish. Drizzle some more brown butter on the fish.
  • Beverage: Fresh Key Lime Margaritas (3 parts 100 percent agave tequila like Herradura or Patron, 2 parts lime juice and 1 part Cointreau) or Virgin Margaritas
  • Mango Brown Butter Vinaigrette: Heat the butter in a small skillet over low heat until it browns, about 10 minutes. Watch carefully as the butter can burn quickly, after browning. It will smell like buttered popcorn.
  • In a blender combine the mango, juices, Dijon and shallots. Blend until smooth. Add the hot butter while blender is on. Season and check for flavor. Keep at room temperature. For storage overnight, keep in the refrigerator and bring back to room temperature for service.
  • Gingered Smashed Plantains: In a heavy skillet, coat well with oil and bring to medium-high heat. Season the plantains and saute until brown. Flip to brown other side. Drain on paper towels. Lay each slice topped with a little minced ginger on a 5 by 10 triple folded piece of aluminum foil. Fold foil over and smash with saute pan, pot or mallet. to form a small pancake. Reheat pan to medium heat and coat with oil. Saute the 'pancakes' until cooked through. (Can be easily pierced with a fork.) Right before serving drizzle with honey and toss with the scallions.;

1 teaspoon lime zest
4 (6 -8 ounce) skinned salmon fillets

  • Heat a lightly greased grill over medium heat or use a Foreman Grill lightly oiled.
  • I used my Foreman Grill.
  • In a saucepan, melt butter and add your lime juice and lime zest. Dip the seasoned salmon in the lime butter and put on the grill. Grill for approximately l l/2 to 2 minutes and add more of the lime butter. Cook until flakey.

2 tsp minced shallots
1 T white wine
1 T lime juice
2 tsp lemon jice
1 T lime zest
2 tsp lemon zest

  • In a saute pan over med heat, add 1 T butter and shallots and cook 1 min. Add wine and cook 5 min or until dry. Add lime, and lemon juices, zests, herbs and pepper, and remove the pan from the heat. pour into a small bowl, and let cool in fridge. In a medium bowl, fold the herbed butter mix into the remaininb butter with a rubber spatula. Spread compoudn butter down center of sheet of waxed paper. Gently roll,m and mold the butter into 1" diameter log. Seal in plastic wrap and put in freezer for at least 1 hour.

  • Add frozen peas and stir until sauce is bubbly and peas are cooked through.
  • Add pinches of salt, ground pepper, and garlic powder to your taste.
  • Add cooked ravioli and toss in sauce until coated.
  • Transfer pasta and sauce to serving bowl and sprinkle shaved Parmesan on top.

2 tablespoons key lime juice
5 tablespoons unsalted butter
4 (6 oz) salmon filets
salt
black pepper, freshly ground
pasta, (or rice), cooked

Steps:

  • Prepare grill by lightly oiling grill grate over medium-high heat.
  • In a small saucepan, melt butter add lime juice. Salt and pepper the salmon fillets modestly on both sides. Place fillets onto grill, brush half of lime butter over salmon. Grill salmon for 2 to 3 minutes per side for medium-rare. Drizzle remaining lime butter over salmon before serving. Serve with pasta or rice.
