2 pounds carrots, sliced
1/2 cup butter, divided
6 ounces process American cheese, cubed
1/4 teaspoon dill weed
1/2 cup crushed saltines (about 15 crackers)

Steps:

  • Place carrots in a saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer until tender, about 10 minutes. Drain; place in a greased 1-1/2-qt. baking dish. In a small saucepan, melt 1/4 cup butter and cheese, stirring often. Stir in dill. Pour over the carrots. Toss the saltines and remaining butter; sprinkle over carrots. Bake, uncovered, at 350° for 25-30 minutes or until lightly browned and bubbly.

BAKED CARROT CASSEROLE

2 pounds carrots, peeled and sliced
½ cup butter
1 cup red bell pepper diced
1 cup sweet onion, diced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons granulated sugar
2 tablespoons all-purpose flour
1 cup whole milk
1 egg beaten
2 tablespoons flat leaf parsley, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Place the sliced carrots in a 3-4-quart pan and cover with water and bring to a boil and cook until soft, about 15-20 minutes. Drain and cool.
  • Butter a 9X9 baking dish and set aside.
  • While the carrots are cooking, in a large saute pan or skillet over medium heat, melt butter and cook peppers and onions for three minutes.
  • Add the salt, pepper and sugar and stir, then add the flour and cook for two minutes, stirring occasionally.
  • Heat the milk in the microwave or in a small sauce pan to hot but not boiling and add to the onion and pepper mixture half at a time, stirring during each addition.
  • Cook this mixture one minute then remove from heat.
  • Once the carrots are cooked, drain and cool to room temperature. I laid them out on a plate to cool quicker.
  • After the carrots are cooled, place back in the pan they were cooked in and ladle one ladle full of the mixture from the other pan. This will help to mash the carrots.
  • Use a potato masher and mash like lumpy mashed potatoes. You want some bits and pieces and not mashed to a puree.
  • Whisk the egg and add it along with the parsley to the carrots and mix.
  • Add the carrot and egg mixture to the pan with the onion and peppers and mix to combine all the ingredients.
  • Scrape the carrot mixture into the prepared pan and bake uncovered for one hour. Remove and serve.
  • The dish can be prepared a day ahead and baked one hour before serving. Let the mixture sit at room temperature for about 15 minutes before baking if preparing the day before and refrigerating.

6 cups carrots (sliced into 1/2 inch pieces)
2 10 oz cans cream of mushroom soup*
2 cups shredded cheddar cheese
1 12 oz bag herbed stuffing mix
½ cup butter (melted)

Steps:

  • Preheat oven to 350 degrees.
  • Bring a medium sized pot of water to a boil. Add carrots and cook for about 7 minutes, or until a fork slides through carrots. Make sure not to overcook. Drain and add carrots back into pot.
  • Add cream of mushroom soup and cheddar cheese to the pot. Mix with a spoon so the carrots are completely covered with soup and cheese.
  • Add carrot mixture into a 13x9 baking dish.
  • Using the same pot you cooked carrots in, add stuffing mix and melted butter. Stir until stuffing is coated.
  • Sprinkle stuffing mix on top of carrot mixture.
  • Bake for 25 minutes, or until bubbly.

1 teaspoon cumin
Kosher salt and freshly ground pepper
1/3 cup olive oil, plus more for topping
1 medium head cauliflower, cut into florets
2 carrots, peeled and cut into 1-inch chunks
1 red onion, cut into eighths
1 tablespoon finely chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Whisk together the curry powder, cumin, salt, pepper and olive oil in a medium bowl.
  • Spread the cauliflower, carrots, and onion in a single layer on a large baking sheet-lined with tin foil. Drizzle with the dressing and toss so it is thoroughly coated.

Sure enough, it was wonderful! This is one way to get the kids to eat their veggies! By the way, to make it a little less fattening, I used light cream cheese.

1 head cauliflower, broken into small florets
4 medium carrots, peeled and diagonally sliced
3 egg yolks
¼ teaspoon salt
2 tablespoons lemon juice
1 dash hot pepper sauce (e.g. Tabasco™)
½ cup butter, melted
¾ cup coarsely crushed buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring about 2 inches of water to a boil in a large pot. Add cauliflower and carrots, and boil for about 7 minutes, until fork tender. Drain well, and transfer to a 9x13 inch baking dish.
  • While the vegetables are cooking, combine the egg yolks, salt, lemon juice and hot pepper sauce in a blender or food processor. Blend for a few seconds to mix, then continue to blend while slowly pouring in 1/2 cup of hot melted butter. Continue blending until thickened. Pour this sauce over the vegetables in the baking dish. Stir together the cracker crumbs and remaining butter; sprinkle over the top of the casserole.
  • Bake for 20 minutes in the preheated oven, or until the casserole is bubbling, and the top is toasted. Let cool slightly before serving.

This recipe came from the Holladay 7th Ward Cookbook, and was posted by Jeanne Forsberg. I found this when I had half a head of cauliflower and some carrots, and needed a vegetable side that I thought I could get kids to eat. As usual, cheese comes into play!

4 carrots, scraped and cut into 2-inch pieces
1/2 cauliflower head, broken into flowerets
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 cup chicken broth
1/4 cup whipping cream (I have substituted fat-free half and half successfully)
3/4 cup swiss cheese, shredded and divided
2 green onions, chopped
1/8 teaspoon dry mustard

Steps:

  • Cook the carrot in a small amount of boiling water for 8 to 10 minutes or until tender. Drain, and place in a lightly greased 1 quart casserole.
  • Cook the cauliflower in a small amount of boiling water for 6 to 8 minutes or until tender. Drain. Add the cauliflower to the carrots, and set aside.
  • Melt the butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add the broth and cream; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. (Do not get it too thick). Add 1/2 cup shredded cheese, green onions, and mustard, stirring until the cheese melts.
  • Pour the sauce over the carrots and cauliflower, stirring gently to coat well. Cover and bake at 350 degrees for 20 minutes or until the mixture is thoroughly heated. Remove the cover and sprinkle with the remaining shredded cheese. Bake an additional 5 minutes or until the cheese melts.
