¼ cup cocoa
3 tablespoons all-purpose flour
¾ cup white sugar
2 cups milk
1 tablespoon butter, softened
2 teaspoons vanilla

Steps:

  • Whisk the cocoa, flour, and sugar together in a bowl until there are no lumps. Pour the milk into the mixture and whisk until well incorporated. Transfer the mixture to a saucepan and cook over medium heat, stirring frequently, until its consistency is similar to gravy, 7 to 10 minutes. Remove from heat and stir the butter and vanilla into the mixture until the butter is melted. Serve immediately.

3 tablespoons butter, divided
1 small onion, finely chopped
5 tablespoons unbleached all-purpose flour
2 ½ cups water
2 teaspoons beef bouillon
2 teaspoons chicken bouillon
fresh ground black pepper to taste

Steps:

  • Melt 1/2 of the butter in a skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Heat remaining butter in skillet over medium heat; whisk in flour to form a thick paste. Continue cooking, whisking constantly, until flour has turned golden brown and begins to smell toasted, about 20 minutes.
  • Whisk water, beef bouillon, and chicken bouillon into skillet until no lumps remain. Add pepper and bring mixture to a boil. Cook and stir until thickened to gravy consistency, 8 to 10 minutes.

My Dad told me how my great-grandmother would make chocolate gravy and biscuits and my curiosity was piqued. This is the recipe we worked together to create. It is very simple and takes only a few minutes.

2 tablespoons butter
1/4 cup cocoa powder
1/4 cup sugar
2 1/4 cups milk
2 tablespoons cornstarch
1 pinch salt (if using unsalted butter)

Steps:

  • In a medium saucepan, melt the butter over medium-high heat.
  • Add cocoa powder and stir together.
  • Add the sugar and 2 cups of milk to the pan---add the milk slowly, stirring constantly.
  • Mix the cornstarch and remaining 1/4 cup of milk until smooth.
  • Stir into pan.
  • Allow the contents to boil, but stir constantly until the mixture thickens into a gravy-like consistency; it shouldn't take more than 1 or 2 minutes.
  • Add more milk, if necessary.
  • Serve over hot biscuits and butter.

1 heaping cup flour

  • Mix well, bring to a boil, turn to medium heat. Stir gently, to keep from sticking, until thickened. Pour over hot homemade biscuits with a dab of butter.

I found it in an old church cookbook, the original recipe provided by a dear friend of my aunt's.
