4 boneless, skinless chicken breasts (about 3 lbs. total)
8 ounces (about 1 cup) French, Russian or Catalina salad dressing
1 (14 ounce) can whole berry cranberry sauce
1 (1 ounce) packet dry onion soup mix seasoning
Zest from ½ of an orange

Steps:

  • Preheat oven to 375 degrees. Spray a 2-quart baking dish with cooking spray. Season chicken with salt and pepper, to taste.
  • Place chicken in the prepared dish. In a separate bowl, stir together salad dressing, cranberry sauce, dry onion soup mix seasoning and orange zest. Pour sauce over chicken.
  • Cover tightly and bake for 30 minutes. Remove the cover and return to the oven for 15 more minutes, or until the chicken reaches an internal temperature of 165 degrees F. Spoon sauce over chicken and serve.

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

1 cup white sugar
1 cup orange juice

Steps:

  • In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries start to pop (about 10 minutes). Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.

15 oz. cranberries
3/4 cup water
slightly less than 1/2 cup fresh-squeezed orange juice
1 cup sugar
1 cinnamon stick
2 tsp grated orange peel
4 Tbsp Grand Marnier
1/8 tsp cardamom (slightly less)
1/8 tsp coriander (slightly less)
1/8 tsp mace (slightly more)

Steps:

  • In a large pot, combine the water, orange juice, sugar, and cinnamon. Bring to a boil. Reduce heat to medium, and add cranberries. Simmer 10 minutes, stirring occasionally. While simmering, remove cinnamon stick, and add, in order: orange peel, Grand Marnier, spices.
