1 lb mushroom, sliced
2 tablespoons minced chives
1/4 cup whipping cream or 1/4 cup half-and-half
1 tablespoon red wine vinegar
1/2 teaspoon granulated sugar
1/2 teaspoon salt
1 dash pepper

Steps:

  • Heat 1 inch salted water to boiling, using 1/2 teaspoon salt to 1 cup water. Add mushrooms. Heat to boiling; reduce heat. Cover and simmer 1 minute. Drain and chill.
  • Mix all remaining ingredients. Pour over mushrooms and toss. Chill at least 1 hour before serving.
  • Serve in lettuce cups if desired.

1 lb mushroom, sliced thin
1 tablespoon lemon juice
2 tablespoons onions, finely minced
1/4 cup butter
1 pinch salt and pepper (or to taste)
3 tablespoons flour
2 cups heavy cream
4 egg yolks, lightly beaten
1/4 cup breadcrumbs, fine, dry
1 tablespoon butter

Steps:

  • Mix the breadcrumbs with 1 tbsp butter and toast until golden brown, stirring often to prevent burning.
  • To the sliced mushrooms add the lemon juice, onion, butter, salt, and pepper. Saute until onions tender.
  • Heat the cream to just short of the boiling point.
  • Stir the flour into the mushrooms, stirring rapidly to prevent lumping.
  • Stir in a bit of the cream.
  • Stir in each egg yolk separately.
  • Stir in the remaining cream.
  • Cook, covered, until the sauce is just short of boiling.
  • Sprinkle with the toasted bread crumbs and let sit 5 minutes before serving.
  • Note: The thicker the cream the better the dish tastes. Half and half is better than milk and whipping cream is best of all.

3 tablespoons olive oil
3 tablespoons butter
1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.

2 ounces butter
1 large onion, chopped
1 1/2 lbs wild mushrooms, quartered
2 tablespoons vegetable stock
3/4 cup heavy cream
salt and black pepper

Steps:

  • Heat the butter in a large frying pan, add the onions and sauté over a medium heat until soft and transparent.
  • Add the mushrooms and raise the heat to high and cook for about 10 minutes, stirring constantly, or until most of the moisture has evaporated .
  • Add the stock, cream, salt and pepper, bring to the boil and cook for a further 10-15 minutes, stirring from time to time, or until the sauce has thickened. Serve immediately.
