Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb ground beef
2 tablespoons teriyaki sauce
1 tablespoon grill seasoning (store-bought or try Grill Seasoning)
4 pineapple rings (canned or fresh)
4 pieces bacon, cooked until crisp
4 slices monterey jack cheese
4 kaiser rolls
1/3 cup mayonnaise
1 teaspoon sriracha chili-garlic sauce
1 tablespoon cilantro, finely chopped

Steps:

  • Using your hands, gently mix the ground meat with the teriyaki and grill seasoning in a medium bowl. Be careful not to overwork the mixture as that can toughen the meat. Divide into four quarter-pound patties.
  • Grill pineapple slices for approximately 1 minute on each side on your grill of choice.
  • Grill burgers until desired doneness.
  • Place a piece of bacon on each and then top with a piece of jack cheese.
  • Top with a grilled pineapple slice and serve on Kaiser rolls spread with Spicy Cilantro Mayo.
  • Spicy Cilantro Mayo: Mix all together in a small bowl and use as condiment on Big Kahuna Burgers.

KAHUNA BURGER (SERIOUSLY, THE BEST!)

Kahuna Burger (seriously, the best!) image

I was remembering a scene in Pulp Fiction where Jules goes off about this Kahuna Burger. Went to look up on line and found out it didn't come from a real restaurant. :( NO WORRIES! Found a few recipes, saw they all seemed to have teriyaki sauce and pineapple in common, so I started from there. Seriously, don't let the banana scare you. It's awesome!

BURGER INGREDIENTS
1/2 medium finely chopped red onion
1 medium completely mashed banana
1/4 cup(s) teriyaki sauce
1/4 cup(s) soy sauce
1-2 teaspoon(s) sesame oil
2 teaspoon(s) garlic powder
2 teaspoon(s) salt
1 teaspoon(s) ground black pepper
2-3 tablespoon(s) brown sugar
optional - crushed red pepper to taste
1 pound(s) ground pork
1 pound(s) lean ground beef (i prefer publix's greenwise)
- king's hawaaian sandwich rolls or small buns
TOPPINGS
- sliced cucumber
- banana peppers (sweet)
- red leaf lettuce
- sliced red onion
- fresh sliced tomato
- sliced avocado or wholly guacamole classic
- microwaved bacon slices
- sliced jalapenos (totally optional!)
- french's french fried onions (to crunchify it!)
SPECIAL SAUCE
4 teaspoon(s) ketchup
4 teaspoon(s) soy sauce
4 teaspoon(s) teriyaki sauce
4 teaspoon(s) pineapple juice
4 teaspoon(s) hot sauce (crystal and louisiana are my faves)
pinch - salt and pepper to taste
1 teaspoon(s) sesame oil
- mayonnaise as a thickener (i don't mind it pretty runny though! makes for a messy yummy burger!)
- your imagination! keep tasting the sauce and add as you see fit!

Steps:

  • Combine all ingredients (except for the buns of course!). HINT: MAKE SURE the banana is completely mashed - the idea is NOT to have big chunks of nanner in your burger! Combine well. The mixture will be very moist, this is good! I like these burgers very thin - no worries about drying them out because they're thin, though - juiciest burger ever. Cook on a flat top griddle/grill, or in a pan on the stove (I don't recommend grilling these). When well browned on the first side, spray some water around each burger on the griddle, and cover them with a lid/pan/etc... for just a couple of minutes. Then, uncover and flip to finish cooking. The burgers should have a beautiful caramelization on them from the banana and brown sugar, but worry not! The garlic and soy sauce should keep it savory!
  • Have your friends/sig other/kids slice the cukes, etc... I put out one plate with all the condiments on it, and pass it around at the table. My favorite way? Bun, burger, special sauce, bacon, cucumbers, banana peppers, guacamole, sliced red onion, tomato, lettuce, and french fried onion! Followed by other half of bun :)
  • This recipe is great because it really can be tailored to anyone's preferences. Try it and if you want to tweak it - DO IT!! Then come back and tell me all about it :O)
