CHOCOLATE WALNUT KAHLUA BALLS (NO BAKE)
I have made these using dark rum, Grand Marnier and Bailey's Irish Cream, you can use any three with success.. I usually make these treats around the holiday season, but of coarse you can make them at any time. I make one batch using semisweet chocolate and one with white chocolate, these really should chill overnight before serving them, you'll be lucky if they make until the next day LOL! Yield is only estimated depending on the size of the balls --- you will LOVE these! :)

Steps:
- Stir the chocolate over simmering water in a double boiler until melted and smooth; remove from heat.
- Whisk in 1/2 cup sugar and corn syrup then the Kahlua.
- In a small bowl mix together the chopped walnuts and crushed wafers; add in the chocolate mixture and mix well.
- Shape into small balls.
- Place powdered sugar in a shallow bowl.
- Roll each ball in the powdered sugar to coat.
- Place in an air-tight container and refrigerate overnight.

Steps:
- 1. Mix Mudslide ingredients together for recipe and set aside. whisk the flour,baking soda,coffee,cocoa and salt together in a bowl.Put to the side.
- 2. In a bowl add softened butter,and sugar. Beat together well. Add eggs,and vanilla and beat together. Add 8 tablespoons of the mudslide mixture you made. mix in 2 Tablespoons at a time until well incorporated.
- 3. add the white chocolate,and milk chocolate chips to mixture, stir in to combine. Put dough in the freezer for an hour or 2.
- 4. heat oven to 350. line a sheet pan with parchment paper. heat oven to 350 degree's.Take dough and make in to balls. Dip each ball in the remaining Mudslide mix you made,and place on parchment lined baking sheet. bake at 350 degree's for 10 minutes or until done.Cool cookies
- 5. Put 1/2 cup of white chips in microwave,or in double boiler with 1/2 the shortening,1 tsp milk,Kahlua.and Baileys. melt and stir together until it is liquid enough to drizzle.If you need more milk add a little at a time. You just want it liquid enough to drizzle. Don't make it watery looking. If microwaving-set timer to one or two minutes,and stop and start microwave to stir chips a few times. White chips are harder to melt than chocolate ones.
- 6. drizzle the cookies with mixture you melted, and put in fridge to set chocolate. Remove from fridge and bring to room temp.,and enjoy.
KAHLUA BALLS
This is an extremely easy and yummy Holiday goodie. Put it on your gift trays and hear your friends rave. Can also be made non-alcoholic, if preferred.

Steps:
- Chop or crush cookies quite fine.
- Measure out 1 1/2 cups of crushed cookies and mix with remaining ingredients except dipping chocolate.
- Form into small balls, about one inch in diameter.
- Roll balls in remaining cookie crumbs (for best results, have the crumbs crushed very fine).
- OR, refrigerate balls for 1 hour and then dip in melted chocolate; return to refrigerator to set chocolate.
- Store in airtight container in refrigerator.
- NOTE: If you want to make a non-alcoholic version, just substitute Kahlua flavored syrup, which can be found in the coffee section of most supermarkets.
- Change the liqueur/syrup flavor to make Amaretto Balls, Irish Cream Balls, or whatever suits you.

- 1. whisk together the Vanilla wafer crumbs,and powdered sugar. (At this point if you are making 2 different flavored balls. Divide the ingredients in half in to 2 bowls) (If making one flavored ball recipe skip dividing cookie sugar mixture)
- 2. Add liquor.Don't forget to cut Liquor in half if divided in 2 bowls. 2 ball recipes 1/2 cup liquor each bowl!! Choose liquor and mix in really really well with your hands. 1/2 cup Kahlua mixed with 1/2 cup of Baileys Irish cream,For mudslide balls. (1 cup Baileys Irish cream) or ( 1 cup Kahlua) Choose liquor and mix in really really well with your hands.
- 3. Add the corn syrup last. Mix well with your hands.Refrigerate for a couple hours,or put in the freezer for an hour. You want the dough to be stiff enough to make balls with.
- 4. make small balls about 1- 1 1/2 inches wide. Line up on wax paper lined pan.
- 5. melt the chocolate chips in a double boiler with 1 tsp of shortening.stir until melted. Dip balls in chocolate. I use a dinner teaspoon to coat them. (if you are going to roll them in nuts. Do so at this time,and put on waxed paper)or sprinkle with colored candies etc. while chocolate is still liquid on the balls.If not then Let some chocolate drip of before putting on a wax paper lined sheet pan.
- 6. put in fridge for a bit until chocolate sets up.There you have it. All done. store on loose covered container. I usually keep mine in the fridge and take out before serving.
- 7. To make the balls look like mine. I put colored white chocolate candy melts in a food processor to grind up for sprinkling on balls. Red and green for Christmas. Easter or other holidays use different colors like pastels. etc.
