MOCHA KAHLUA ICE CREAM TORTE WITH HOT FUDGE SAUCE



Mocha Kahlua Ice Cream Torte with Hot Fudge Sauce image

Number Of Ingredients 15

1 1/2 cups chocolate cookie crumbs (about 6 1/2 ounces)
6 tablespoons unsalted butter, melted
3 tablespoons sugar
2 tablespoons Kahlua
1 quart chocolate ice cream
1 pint coffee ice cream
4 tablespoons Kahlua
4 to 6 heath bars, crushed in food processor or with mallet
8 ounces of chopped semisweet chocolate
2 tablespoons, plus 1 teaspoon butter
1/2 cup sugar
1/2 cup heavy cream
1/4 cup hot water
1 teaspoon vanilla
Pinch of salt

Steps:

  • Preheat oven to 350 degrees. Mix all ingredients in medium bowl. Press crust mixture onto bottom of 9-inch spring form pan with 2 3/4 inches high on the sides. Bake crust until firm, about 8 minutes. Transfer pan to rack and cool crust completely.
  • Mix ice cream, kahlua in large bowl. Mix in heath bars, saving several tablespoons for garnish. Pour ice cream into crust, smooth top, freeze until firm, about four hours. Can be prepared 2 days ahead covered.
  • Using small knife cut around side of pan to loosen torte. Remove pan sides, sprinkle saved crushed heath bar on top. Let torte stand 3 to 5 minutes. Cut into wedges and serve with hot fudge sauce.
  • Combine chopped dark chocolate with butter, sugar, heavy cream, and hot water. Melt mixture stirring, at low heat for five minutes. Remove from heat, add vanilla and salt and serve warm.

1 (14 ounce) can sweetened condensed milk (such as Eagle Brand®)
1 (12 ounce) jar caramel topping
6 ounces semisweet chocolate chips
¼ cup coffee-flavored liqueur (such as Kahlua®), or more to taste

Steps:

  • Heat condensed milk, caramel topping, chocolate chips, and coffee-flavored liqueur together in a saucepan over low heat, stirring constantly, until chocolate chips are melted and sauce is well mixed, 10 to 15 minutes.

This is the fudge sauce from my ice cream pie recipe (#7549). It is so rich and wonderful I decided it deserved being posted by itself. I could drink it, it's that good! Makes a great sauce for dipping bananas, brownies or for pouring over ice cream (of course!) Store any left-overs (ha!) in the fridge and reheat in the microwave for about 20 seconds.

1 1/2 cups semi-sweet chocolate chips (I use Ghirardelli)
3 tablespoons butter
1/2 cup heavy cream (whipping cream)
1 tablespoon coffee-flavored liqueur

Steps:

  • Over a double boiler* on low heat, combine chocolate chips, heavy cream, and butter.
  • Stir until chips are melted and mixture is smooth.
  • Remove from heat, stir in coffee liqueur.
  • Serve warm.
  • *Can also be melted in the microwave on a low temperature, stirring occasionally and being sure not to burn the chocolate.

1/2 cup boiling water
6 tablespoons unsweetened cocoa
1 teaspoon instant espresso (or 2 tsp. instant coffee granules)
3 tablespoons Kahlua

Steps:

  • Place milk in a small saucepan; cook 5 minutes over low heat. Combine water, cocoa and espresso in a small bowl; stirring until granules dissolve. Stir cocoa mixture into milk; cook 5 minutes, stirring frequently. Stir in liqueur; cook 1 minute. Remove from heat. Serve warm or chilled.
