Junior's Macaroni and Cheese Pie image

A new twist on this old favourite - it's baked in a pie plate with bread crumbs as a crust, then served up in a slice, just like a pie. Recipe from the famous "Junior's" restaurant in Brooklyn.

1/4 cup plain breadcrumbs
1 1/2 teaspoons salt
1 teaspoon olive oil
2 cups uncooked macaroni (will yield 5 cups cooked)
6 tablespoons butter (3/4 stick)
1/2 cup onion, chopped
1/2 cup flour
3/4 teaspoon dry mustard
1/2 teaspoon white pepper
1/4 teaspoon ground nutmeg
2 1/2 cups milk
2 1/2 cups shredded sharp cheddar cheese
1 drop red food coloring (optional)
1 drop yellow food coloring (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Butter a 9-inch deep-dish pie plate.
  • Sprinkle bottom and sides with the bread crumbs.
  • Cook the noodles as directed on box (al dente), adding 1/2 teaspoon salt and the teaspoon oil.
  • You will need 5 cups of cooked noodles.
  • Meanwhile, melt butter in a large skillet over medium-high heat.
  • Add the onion and saute until soft, about 5 minutes.
  • Stir in flour and remaining teaspoon of salt, dry mustard, pepper, and nutmeg and cook for about 1 minute.
  • Gradually stir in all the milk and continue to cook until the sauce simmers and thickens.
  • Add 2 cups of the cheese, the optional food coloring, and stir until completely melted.
  • Remove sauce from heat and stir in the noodles.
  • Spoon macaroni into the pie plate, mounding high in the centre.
  • Top with remaining 1/2 cup of cheese and sprinkle generously with paprika.
  • Bake until the pie is golden brown and bubbly, about 25 minutes.
  • Let pie stand on wire rack for about 15 minutes to set before cutting.

2 cups uncooked elbow macaroni
½ cup butter
2 (12 ounce) cans evaporated milk
1 tablespoon ground black pepper
3 eggs
1 teaspoon salt
4 cups shredded Cheddar cheese
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
  • Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
  • Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
  • Gently mix salt and cooked macaroni into the sauce and stir to combine.
  • Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
  • Bake in the preheated oven until casserole is bubbling, about 20 minutes.

Macaroni pie is a firmer, highly spiced version of mac and cheese. Quintessential Trinidadian seasonings like thyme and Scotch bonnet pepper give this dish a distinctive taste, while a little less liquid mixed with an egg creates a solid, sliceable texture. A Trini staple for large family gatherings, it's the perfect addition to a holiday table. And if there are any leftovers, they keep well. Feel free to use your favorite Cheddar, but if you're able to find New Zealand Cheddar (or "Trinidad cheese" as it's called on the island), don't pass it up.

1 tablespoon butter, plus more for greasing the dish
8 ounces sharp Cheddar, coarsely grated (2 cups)
8 ounces whole-milk mozzarella, coarsely grated (2 cups)
2 1/2 cups evaporated milk (from 1 1/2 12-ounce cans)
1 large egg, whisked
2 tablespoons tomato paste
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons Dijon mustard
1 teaspoon fresh thyme leaves, chopped
1/2 Scotch bonnet pepper, finely minced, seeded for less heat
Kosher salt (Diamond Crystal) and black pepper
1 pound dried macaroni

Steps:

  • Heat oven to 350 degrees. Grease a 9-by-13-inch (3-quart) baking dish with butter.
  • In a large bowl, mix the Cheddar and mozzarella, and set aside. In a small bowl, whisk the evaporated milk, egg, tomato paste, garlic and onion powders, mustard, thyme, Scotch bonnet pepper, 1 teaspoon salt, and a generous pinch of black pepper until very well blended.
  • Cook macaroni in boiling salted water according to the package directions for al dente. Drain and return to the pot. Stir in the tablespoon of butter until melted, then add half the cheese and stir until it's fully combined and starting to melt. Stir in the milk mixture until the pasta is evenly coated. Pour the pasta into the buttered dish, spread it evenly and sprinkle the rest of the cheese on top.
  • Bake until the top is bubbling and golden brown, 35 to 40 minutes.
  • Remove from the oven and let rest for at least 10 minutes to help it firm up. The dish can be made up to a day in advance, tightly covered with foil or plastic wrap, and refrigerated, or cut into serving sizes, wrapped tightly and frozen. Reheat covered with foil in a 350-degree oven or in a covered skillet on the stove.

Who doesn't like cheese and pie? Well, this recipe is one of my favorites made by my mother growing-up. I'm interested to see what 'zaar says the calorie intake is!

1 pie shell
1/2 cup extra-sharp cheddar cheese, half for pie shell and half for the topping
2 cups extra-sharp cheddar cheese, for sauce (additional)
1/2 cup parmesan cheese
1 1/2 cups uncooked elbow macaroni
1/4 cup butter
1/4 cup flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
6 ounces cream cheese
wax paper

Steps:

  • Preheat oven to 425°F.
  • Mix 1/4 cup of cheddar into pastry and shape pastry into a ball and roll out between 2 pieces of wax paper.
  • Place this into a 9-inch pie plate, prick bottom with fork.
  • Bake 15 minutes, remove from oven and let stand until you are finished the sauce mixture.
  • Reduce oven to 350°F.
  • Cook elbow macaroni.
  • Prepare cheese sauce by combining butter, flour, milk, salt, pepper, parmesan, cream cheese and 2 cups of cheddar cheese. Cook in sauce pan over medium heat until all ingredients are combined.
  • Add cooked noodles to cheese sauce mixture and pour into pie shell.
  • Sprinkle remaining 1/4 cup of cheddar onto top of pie.
  • Bake 20 minutes at 350°F 10-15 minutes.
