cooking spray
1/4 cup butter or 1/4 cup margarine
32 chocolate-covered mint candies (about 3 ounces)
1 cup flour
1/4 teaspoon baking soda
1/8 teaspoon salt
2/3 cup sugar
1/3 cup unsweetened cocoa
1 large egg
1 large egg white

Steps:

  • Preheat oven to 350°F.
  • Coat bottom of an 8-inch square baking pan with cooking spray.
  • Combine butter and mints in a 2 cup glass container; microwave at high 30 seconds or until soft.
  • Stir until smooth; set aside.
  • Combine flour, baking soda, and salt in a bowl, set aside.
  • Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed until well blended.
  • Add mint mixture and beat well.
  • Add flour mixture and beat at low speed just until blended.
  • Pour batter into pan and bake at 350°F for 20 minutes or until a toothpick inserted in center comes out clean.
  • Cool completely.

QUICK JUNIOR MINT BROWNIES



Quick Junior Mint Brownies image

You can use your favorite brownie recipe if you prefer. This is one of those "hurry up, I need to take a dessert" recipes for me! It is always well received. I use Pillsbury Traditional Fudge Brownie mix. To cut brownies smoothly, use a putty knife or a plastic knife.

19 1/2 ounces brownie mix
11 ounces Junior mints (the big box)

Steps:

  • Prepare brownie mix according to package directions in a 9x13 pan (they will be thin).
  • Remove baked brownies from oven and pour the Junior Mints over the brownies.
  • Cover pan tightly with aluminum foil and allow to sit for 10 minutes.
  • Remove foil and swirl melted mints all over the top of the brownies.
  • Allow to cool completely.
  • The mints will form a hard chocolate-mint frosting.

PEPPERMINT PATTY BROWNIES

1 ½ cups margarine
3 cups white sugar
1 tablespoon vanilla extract
5 eggs
2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon salt
24 small peppermint patties

Steps:

  • Mix butter, sugar, and vanilla. Beat in eggs till well blended. Stir in flour, cocoa, baking powder, and salt. Blend well.
  • Reserve 2 cups of batter, set aside
  • Grease 13x9x2 inch pan. Spread remaining batter in prepared pan. Arrange peppermint patties in a single layer over batter about 1/2 inch apart.
  • Spread reserved 2 cups batter over patties. Bake 350 degrees F (175 degrees C) for 50-55 minutes till brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Enjoy!!!
