1 egg
1/2 cup milk
1/2 cup all-purpose flour
2 tablespoons sesame seeds
1 tablespoon baking powder
1 tablespoon paprika
1 teaspoon salt
3 lbs chicken thighs
1/4 cup butter, melted

Steps:

  • In bowl, whisk together egg and milk.
  • In large bag, shake together flour, sesame seeds, baking powder, paprika and salt.
  • Dip chicken pieces, one at a time, into egg mixture; shake chicken in flour mixture.
  • Place on foil-lined baking sheet; drizzle with butter.
  • Bake in 350 F (180 C) oven for 1 hour or until chicken is crispy on outside and no longer pink inside.

1/4 cup margarine
1 cup instant potato flakes
1/2 teaspoon garlic salt
1/2 teaspoon seasoned pepper
1/2 teaspoon seasoning salt
2 -3 lbs frying chickens, cut up

Steps:

  • Heat oven to 400 degrees Fahrenheit.
  • Place margarine in a 13 x 9-inch baking dish; melt in oven.
  • In plastic bag, combine potato flakes, garlic salt, seasoned pepper, and seasoning salt.
  • Add chicken one at a time and shake in the plastic bag.
  • Place chicken skin-side down in melted margarine.
  • Bake 30 minutes, uncovered, turn chicken.
  • Bake 30 minutes more.

2 whole chickens, cut into serving pieces and sprinkled with pepper, garlic powder and dusted with flour (about 3#)
1/4 cup dijon-style mustard
1/4 cup mayonnaise
1/2 cup Ritz cracker, finely crushed (more as needed)
1/4 cup parmesan cheese, grated
2 tablespoons oil

Steps:

  • Combine mustard and mayonnaise, mix thoroughly. Coat chicken with mustard mixture. Combine cracker crumbs and parmesan cheese. Sprinkle cracker crumbs lightly over the chicken. Place chicken in one layer in a 12x16 inch baking pan. Bake in a 325 degree oven for 30 minutes. Drizzle oil over the chicken and continue baking for 1 hour or until chicken is tender.

This oven-fried chicken is the best I've ever had and it only has four ingredients! Crunchy, extremely juicy and amazingly flavorful.

2 cups panko breadcrumbs (japanese-style breadcrumbs)
1 teaspoon paprika
1 whole chicken (broken down into 10 pieces, halving the breasts)
4 tablespoons butter, melted

Steps:

  • Preheat oven to 450°F.
  • Season Panko breadcrumbs generously with salt and pepper (around 2 teaspoons each).
  • Add paprika to seasoned crumbs.
  • Pat chicken dry and brush generously with butter.
  • Press chicken into breadcrumbs and thoroughly coat on all sides.
  • Place chicken skin-side-up on a shallow baking pan (I use a baking sheet).
  • Bake for 30-40 minutes until nicely browned and cooked through (at 30 minutes, poke thickest piece of meat with a fork if juices run clear and not pink it's done. If not, check in 10 minute intervals until cooked).
  • Let sit 5-10 minutes before serving so juices can set.

2 cloves garlic, peeled
4 slices white bread, torn into pieces,sandwich bread works well as does english muffins
1/4 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sage or 1 teaspoon thyme
2 tablespoons butter
1/4 cup milk
2 lbs chicken breasts

Steps:

  • Preheat oven to 375.
  • Line baking sheet with foil, then spray with Pam.
  • Make breading by placing the peeled garlic in food processor or blender, process til finely chopped.
  • Add bread, cheese and salt and pepper, pulsing til bread is finely crumbed.
  • Add sage and pulse to combine.
  • Cut butter into small pieces and add pulsing until completely incorporated.
  • Transfer to a plastic bag.
  • Place milk in a shallow bowl.
  • Dip the chicken pieces in tthe milk and then place them one at a time in the bag of breading.
  • Shake until the chicken is well coated.
  • Place on the foil lined sheet leaving spaces between pieces.
  • Bake until the coating is crisp and juices run clear, when pierced, about 40-45 minutes.

4 boneless, skinless chicken breasts
2 cups buttermilk
2 cups crushed herb-seasoned stuffing mix
1 cup all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
1 egg
1 tablespoon water
2 tablespoons peanut oil

Steps:

  • Place chicken breasts and buttermilk into a large resealable plastic bag, knead several times to coat chicken with buttermilk, and squeeze air from the bag. Seal and refrigerate at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Placed crushed herb-seasoned stuffing mix into a shallow bowl. Mix flour, salt, and black pepper in a separate flat dish. Beat egg with water in a bowl. Pour peanut oil into the bottom of a 9x13-inch baking pan.
  • Remove chicken from buttermilk, shake off excess buttermilk, and discard used buttermilk marinade. Dredge chicken breasts in seasoned flour. Dip each floured breast in egg, then press gently into stuffing mix to coat. Place coated chicken breasts into the pan with peanut oil.
  • Bake in the preheated oven for 25 minutes. Turn each chicken breast over and continue baking until chicken pieces are no longer pink inside and the coating is crisp, about 25 more minutes.
