JOYCE'S EASY DINNER PARTY PARMESAN POTATOES
These blew me away at a fancy dinner party years ago, so I asked for the recipe. I was further shocked to learn that Joyce, the ultimate dinner party hostess, had used canned white potatoes. I was a little surprised, but have since used this recipe many times since when I have little time. I usually would rather peel and prepare potatoes, but if your menu is extensive, these save so much time and will gather many compliments. Only YOU need to know the potatoes come from a can.

Steps:
- Preheat oven to 425.
- Throw oil and butter into a glass baking dish and put in oven to melt. I usually use a little more butter and 'cut' it with drizzles of olive oil.
- Rinse potatoes and pat dry.
- Put potatoes into butter/olive oil mixture and turn to coat.
- Liberally sprinkle with parmesan cheese.
- As potatoes are baking (about 1/2 hour) keep turning and sprinkling with more parmesan until well coated.
- Bake, sprinkle and turn 30 - 40 minutes until potatoes are crispy & golden brown.

GRILLED PARMESAN POTATOES
This is a simple and good recipe from bettycrocker.com. NOTE: This recipe is even better if you double the cheese and bread crumbs. Or, if you would like to cut the calories down, toss the potatoes with some seasonings (we like garlic salt and pepper), the breadcrumbs and a drizzle of olive oil, and omit the butter and cheese.

- Heat gas or charcoal grill. Cut 2 (30x18-inch) sheets of heavy-duty foil. Divide potato slices evenly onto foil sheets. Sprinkle with salt and melted butter.
- In small bowl, mix remaining ingredients; sprinkle over potatoes. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packets, seam side up, on grill. Cover grill; cook over medium heat 18 to 23 minutes, rotating packets once, until potatoes are tender.
- To serve, place packets on plates. Cut large X across top of each packet; carefully fold back foil to allow steam to escape.

ROASTED PARMESAN POTATOES
I found a recipe in a magazine and modified it to suit our likes and dislikes. By using the lower end amounts of oil and parmesan cheese, you can get a tasty potato dish that's not too high in fat or calories. This was a big hit at our house, and the bonus is that it's easy!

Steps:
- Preheat oven to 400 degrees.
- Wash potatoes and cut into eight wedges, then in half crosswise; rinse the potatoes.
- Pat dry or spin in salad spinner.
- Place potatoes in bowl and pour olive oil over potatoes, just enough to coat; mix well to make sure all of the potatoes are coated.
- In small bowl, combine seasoned salt, Italian seasoning, shredded parmesan cheese, and pepper.
- Pour seasonings over the potatoes and mix together.
- Line a large jelly roll pan with aluminum foil, and spray the foil with non-stick cooking spray. Pour potatoes into prepared pan.
- Bake for 15 minutes at 400 degrees; reduce heat to 350 degrees and bake for an additional 20 minutes, or until potatoes are tender and cheese is browning.

- Heat olive oil over medium heat in a large skillet.
- Quarter the potatoes and add to skillet, tossing to coat.
- Sprinkle the garlic and Creole seasoning over the potatoes.
- Cook over medium heat for about 10 minutes.
- Sprinkle 2 T.
- of the Parmesan over the potatoes and toss.
- After about 10 more minutes, sprinkle with Parmesan again and toss, repeating until potatoes are tender but not mushy.
- (Each time you toss, sprinkle with the Parmesan.).
