MY GRANNY'S OLD-FASHIONED BISCUITS



My Granny's Old-Fashioned Biscuits image

A simple, basic buttermilk biscuit with minimal ingredients. It's an old-fashioned recipe everyone should have handy. If you follow Elaine's directions, once baked the biscuit is perfectly flaky and fluffy with a little tang from the buttermilk. They're melt-in-your-mouth good.

2 c self-rising flour (Martha White or White Lily for best results)
1/4 c lard or shortening (about egg-sized and very cold)
1 c very cold buttermilk (may need to adjust amount)
3 Tbsp melted shortening or butter

Steps:

  • 1. Preheat oven to 450 degrees. Heavily grease a large cast-iron skillet or biscuit pan and set aside. (I prefer the cast iron skillet).
  • 2. Put the flour into a large bowl and add lard/shortening.
  • 3. Cut into flour using the usual pastry method.
  • 4. Add buttermilk and mix with fork or hands.
  • 5. Mix into a light dough.
  • 6. Turn dough onto a floured board and knead a couple of times.
  • 7. Pat dough to flatten to about 1/2 inch thick. Using a biscuit cutter, cut dough into biscuits.
  • 8. Place cut biscuits in the prepared pan.
  • 9. Pour melted shortening/butter over each biscuit.
  • 10. Bake for about 13 to 15 minutes or until golden. Remove from pan and place into a covered container and allow to steam for about 5 minutes. You may also brush melted butter over top prior to steaming (if desired).
  • 11. Serve hot with butter, apple butter, jellies, jams, honey, or anything else that you like.
  • 12. Special Note: I didn't have a biscuit cutter, so what I did was open both ends of a 4-ounce sized mushroom can, washed and removed the label and it works perfectly.

2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/3 cup cold butter, cubed
2/3 cup 2% milk

Steps:

  • Preheat oven to 450°. In a large bowl, whisk flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add milk; stir just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat dough to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter., Place 1 in. apart on an ungreased baking sheet. Bake until golden brown, 10-15 minutes. Serve warm.

Johnny Cash was my husband's cousin and I was lucky enough to obtain a cookbook of Johnny's mother's recipes titled, "Favorite Recipes From Mama Cash's Kitchen." I've been asked to post some of the recipes from the book and this is one of them.

Yield 24 2" biscuits

Number Of Ingredients 3

2 cups self-rising flour
1 cup milk or 1 cup buttermilk
1/2 cup shortening

Steps:

  • Mix ingredients.
  • Cut out biscuits, put on cookie sheet and freeze.
  • When frozen, take off pan and place in plastic bag.
  • When ready to bake, place FROZEN biscuits in a COLD oven and turn to 450 degrees.
  • They will be ready by the time other breakfast items are prepared. It takes 18-20 minutes for biscuits to bake.

This is an old recipe that my grandmother, Johnnie, had passed down to my father. He knows it only from memory of his mother making almost every breakfast growing up. The ingredients are simple and has been a favorite of my family for many years!

BISCUITS
4 cup(s) flour
2 tablespoon(s) baking powder
1 teaspoon(s) salt
1/3 cup(s) oil
2 cup(s) milk
GRAVY
1 1/2 cup(s) milk
1/2 cup(s) water
4 tablespoon(s) flour
4 tablespoon(s) oil
1/3 cup(s) cooked, ground beef
couple dash(es) salt and pepper

Steps:

  • For biscuits. Mix all dry ingredients well with fork. Stir in milk and oil. The dough needs to be moist, add more milk if necessary. Only stir long enough for dough to form, over-stirring will cause the biscuits to be tough.
  • Lay dough on floured surface and pinch off medium size balls.
  • Place dough balls into an oiled, 10" diameter circular dish or cake pan. Any pan will work, but all the biscuits need to fit snuggly.
  • Flip the biscuits so that the oil can be spread evenly on the top and bottom of each one.
  • Bake at 400 degrees for 15-20 minutes or until tops of biscuits are light golden brown.
  • GRAVY ...... Heat oil on low in a deep skillet or stove top pan. Sprinkle in flour evenly. Add meat if desired. Very slowly add milk and water, stirring steadily. Milk should thicken when brought to a simmer. When thick, add salt and black pepper to taste.
