PEPPERONI SNACK CRACKERS

I'm one of those people who won't eat a pizza if it has anything but pepperoni on it... naturally I like pepperoni off of pizza too. This is a quick snack I pulled together one day; simple, but very tasty.

Number Of Ingredients 5

8 ritz-style crackers
8 pepperoni slices, of preferred thickness
1 ounce of favorite cheese, shredded (I use Colby Jack, Mozzerella and or or Cheddar)
2 tablespoons ranch dressing
Tabasco sauce (optional)

Steps:

  • Spread pepperoni slices out on a paper towel and microwave for 15 seconds, just enough to draw some of the grease out [Will prevent crackers from getting soggy as well as lowering the fat content].
  • Place crackers on a paper plate and distribute cheese to each of them.
  • Put a slice pepperoni on each cracker.
  • Top each cracker with dressing and a single drop of Tobasco sauce.
  • [optional] microwave again for 15-30 seconds, or until cheese begins melting.

24 Ritz crackers
24 slices pepperoni
1/4 cup pizza sauce
2 tablespoons finely shredded Colby-Monterey Jack cheese
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano

Steps:

  • Preheat oven to 400°. Place crackers on a baking sheet. Top with pepperoni, pizza sauce, cheese and oregano. Bake until cheese is melted, 5-7 minutes.

Recipe from a box of Jiffy brand Pizza crust mix, adapted slightly to our own taste. When we get tired of homemade pizza, we make these quick breadsticks. Great to dip, make extra 'cuz they go fast!

1 (6 1/2 ounce) box jiffy brand pizza crust mix
1/4 teaspoon garlic powder
1/2 cup hot tap water
1 (3 ounce) package pepperoni slices, chopped
1/2 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
2 tablespoons margarine or 2 tablespoons butter, melted
1/4 teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees, grease one baking sheet.
  • Mix pizza crust mix, garlic powder, pepperoni and mozzarella cheese.
  • Add hot water and mix well.
  • Spread Parmesan cheese onto greased baking sheet.
  • Drop dough onto parmesan cheese and knead dough into cheese to reduce stickiness.
  • Roll dough out on same pan, to 1/2 inch thickness.
  • Using a pizza slicer, cut dough into 1 inch strips , but don't separate.
  • Bake 15-18 minutes and remove from oven.
  • Mix topping ingredients and spread over hot breadsticks.

I was hungry after skipping supper and wanted something really quick and easy. Instead of having plain cheese and crackers, I got the idea to make pizza snacks. I am a thin crust pizza lover so the crackers worked great! I didn't miss the sauce at all. My granddaughter really enjoyed these!

15-20 saltine crackers
1/2 -1 c mozzarella cheese, shredded
15-20 pepperoni slices

Steps:

  • 1. Place crackers on plate in a round design
  • 2. Top with shredded mozzarella cheese
  • 3. Place a pepperoni slice on top of each cracker
  • 4. Microwave on high for 1 to 1 minute 20 seconds. Serve immediately. Enjoy!
