1 1/2 cups boiling water
1 cup bulgur wheat
1/4 cup freshly squeezed lemon juice (2 lemons)
Olive oil
Kosher salt
1 whole (2 split) chicken breast, bone in, skin on
Freshly ground black pepper
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (2 bunches)
1 cup chopped fresh flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, halved lengthwise, seeded, and medium-diced
2 cups halved cherry tomatoes

Steps:

  • Preheat the oven to 350 degrees F.
  • In a heat-proof bowl, pour the boiling water over the bulgur wheat. Add the lemon juice, 1/4 cup olive oil, and 1 1/2 teaspoons of salt. Stir. Cover the bowl with plastic wrap and allow the bulgur to stand at room temperature for about 1 hour.
  • Place the chicken breast on a baking sheet and rub it with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until just cooked. Set aside until cool enough to handle.
  • Remove the chicken meat from the bones and discard the skin. Cut the chicken into medium dice and add to the tabbouleh. Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and 1 teaspoon pepper. Season, to taste, and serve immediately or cover and refrigerate. The flavors will improve as it sits.

1/4 cup freshly squeezed lime juice
1/3 cup chopped fresh cilantro leaves
1/2 teaspoon ground cumin
cayenne pepper
1/2 cup olive oil (or mixture of both) or 1/2 cup canola oil (or mixture of both)
salt
1 1/2 lbs boneless skinless chicken breast halves
1 large head romaine lettuce, torn into bite-size pieces
1 small jicama, cut into thin sticks (about 12 oz.)
1 bunch radish, sliced into half-moons
1/4 small red onion, very thinly sliced
1 large avocado, diced
1 large mango, diced
1/4 cup hulled hulled roasted salted pepitas

Steps:

  • Preheat ridged grill pan.
  • For vinaigrette: In medium bowl, combine lime juice, cilantro, cumin and pinch of cayenne pepper. Slowly whisk in oil until emulsified. Add salt and adjust seasonings to taste.
  • In shallow dish, place chicken and cover evenly with 1/3 of vinaigrette.
  • In grill pan over medium-high heat, grill chicken until just done, about 6 minutes per side. Transfer to cutting board and let cool 5 minutes.
  • Meanwhile, in large serving bowl, toss lettuce with small amount of vinaigrette. In another bowl, combine jicama, radishes, onion, avocado and mango. Gently toss with more vinaigrette.
  • Place vegetable and fruit mixture on top of lettuce. Diagonally cut chicken into 1/2-inch-thick slices and arrange on top of salad. Top chicken with remaining vinaigrette and pepitas.

2 cups Progresso™ chicken broth (from 32-oz carton)
2 lb boneless skinless chicken breasts, cut into 1/2-inch pieces
1 cup uncooked couscous
2 medium cucumbers, chopped (2 cups)
2 medium onions, finely chopped (1 cup)
2 small tomatoes, seeded, chopped (1 cup)
1 cup chopped fresh parsley
1/2 cup lime juice
1/4 cup chopped fresh mint leaves
1/4 cup olive or vegetable oil
1 teaspoon salt

Steps:

  • In 3-quart saucepan, heat broth to boiling. Stir in chicken. Cook over medium heat 10 to 15 minutes or until chicken is no longer pink in center.
  • Stir in couscous; remove from heat. Cover and let stand 5 to 10 minutes or until liquid is absorbed.
  • In large bowl, mix chicken mixture and all remaining salad ingredients. In tightly covered container, shake all dressing ingredients until well blended. Add to salad; toss to coat. Cover and refrigerate at least 1 hour but no longer than 24 hours to blend flavors.

3 cups cubed cooked chicken breasts
1 cup chopped celery
2/3 cup peeled and diced jicama
1/2 cup finely shredded carrot
1/4 cup chopped green onion
2 tablespoons chopped parsley
2 teaspoons dill weed
1/2 cup low-fat sour cream
1/4-1/2 cup low-fat mayonnaise
1/4 teaspoon pepper
salt, as needed to taste

Steps:

  • In a large bowl, combine chicken, celery, jicama, carrots, onion, parsley and dill weed.
  • Add sour cream, mayo (start w/ just the 1/4 cup of mayo and see if you need more), pepper and salt.

Jicama, there are 104 recipes using this large, bulbous, root vegetable. The jicama has a thin brown skin and white crunchy flesh. It should be peeled before using. This recipe caught my eye and I have managed to misplace the recipe twice. It sounds very good to me and I have plans on making it within the next couple of days. Recipe in from a Pampered Chef cookbook.

2 boneless skinless chicken breast halves, cut into 1-inch cubes
1/4 teaspoon salt
1 teaspoon curry powder, divided
1/2 cup chicken broth
2 green onions, thinly sliced
1/4 teaspoon crushed red pepper flakes
1 tablespoon olive oil
2 cups jicama, julienne-cut
1 red bell pepper, diced
1/4 cup dry roasted peanuts
hot cooked rice

Steps:

  • Sprinkle the chicken cubes with salt and 1/2 teaspoon of the curry powder.
  • In a small bowl, combine the broth, onions, crushed red pepper and remaining curry powder; set aside.
  • In wok, heat oil over medium high heat.
  • Add the chicken; cook and stir until browned.
  • Add jicama and bell pepper to wok.
  • Cook 3 minutes, stirring often.
  • Add broth mixture; cook and stir 3 minutes or until heated through.
  • Serve over rice and garnish with peanuts.
