1 (10 ounce) jar pineapple fruit preserves
1 (8 ounce) jar prepared horseradish
1 tablespoon ground dry mustard
1 teaspoon cracked black pepper

Steps:

  • In a small bowl, mix together apple jelly, pineapple fruit preserves, prepared horseradish, ground dry mustard and cracked black pepper. Cover and refrigerate 8 hours, or overnight, before serving.

1/4 cup light soy sauce
1/4 cup dry sherry or 1/4 cup madeira wine
1 tablespoon dry mustard
2 tablespoons olive oil
1 teaspoon ground ginger
1 teaspoon sesame oil
8 drops hot sauce
2 garlic cloves, minced
2 (3/4 lb) pork tenderloin
1/2 cup apple cider vinegar
3 dozen party rolls
1 cup apple jelly
1 cup pineapple-orange marmalade or 1 cup pineapple preserves
1 (6 ounce) jar prepared mustard
1 (5 ounce) jar prepared horseradish
1/4 teaspoon pepper

Steps:

  • Combine first 8 ingredients in a shallow dish or heavy-duty zip-top plastic bag; add tenderloins. Cover or seal, and chill 8 hours, turning tenderloins occasionally.
  • Remove tenderloins from marinade, reserving 1/2 cup marinade; combine reserved marinade and apple cider vinegar.
  • Cook tenderloins, covered with grill lid, over medium-hot coals (350° to 400°) about 20 minutes or until a meat thermometer inserted into thickest portion registers 140°, turning occasionally and basting with marinade mixture during first 15 minutes of cooking time. Remove from heat; slice and serve warm or chilled with party rolls and Jezebel Sauce.
  • Jezebel Sauce:.
  • Beat apple jelly in a mixing bowl at medium speed with an electric mixer until smooth. Add remaining ingredients; beat at medium speed until blended. Chill.

1 cup water
1/2 cup granulated sugar
1/2 cup packed brown sugar
12 ounces fresh cranberries or 12 ounces frozen cranberries
3 tablespoons prepared horseradish
1 tablespoon Dijon mustard
mint sprig

Steps:

  • Combine water and sugars in a medium saucepan.
  • Bring to a boil 0ver medium heat.
  • Add cranberries and return to a boil.
  • Cook for 10 minutes, stirring ocasionally.
  • Cool to room temperature.
  • Stir horseradish and mustard into cranberry mixture, cover and chill.
  • Garnish with mint sprigs.
  • Serve over light cream cheese with crackers.

1 cup water
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1 (12 ounce) bag cranberries (fresh or frozen)
1/2 cup pineapple preserves
3 tablespoons prepared horseradish
1 tablespoon Dijon mustard

Steps:

  • Bring the first 3 ingredients to a boil, stirring often, in a saucepan over medium-high heat.
  • Add cranberries.
  • Return mixture to a boil. Reduce heat and simmer, stirring often, for 10 minutes or until the cranberry skins begin to pop and mixture begins to thicken. Remove from heat.
  • Stir in pineapple preserves, horseradish and mustard; remove pan from heat and let sauce cool.
  • Cover and chill in fridge until ready to serve.
  • NOTE: Sauce may be stored in an airtight container in the fridge for up to two weeks.

1/2 cup light soy sauce
2 tablespoons firmly packed dark brown sugar
2 green onions, chopped
2 garlic cloves, sliced
2 tablespoons sherry wine (optional)
fresh rosemary (optional but highly recommended. I used about 1-2 tablespoons) (optional)
3 lbs pork tenderloin
2/3 cup pineapple preserves
1/3 cup apple jelly
2 tablespoons prepared horseradish
1 tablespoon grated fresh ginger

Steps:

  • For the marinade, combine the soy sauce, brown sugar, onions, sherry, garlic and rosemary in a shallow dish or a zip-lock bag.
  • Add the pork and marinate it in the refrigerator for at least 20 minutes.
  • For the sauce, while the pork is marinating microwave the preserves and jelly until melted, or melt them over low heat in a saucepan.
  • Stir in the horseradish and ginger.
  • Remove the meat from the refrigerator and discard the marinade.
  • Grill the pork with the grill lid closed over medium high heat (350 to 400 degrees) for 20-25 minutes or until the internal temperature reaches 155 degrees.
  • Turn once, basting with the 1/2 cup of the sauce.
  • Grill for another 5 to 10 minutes or until the center temperature reaches 160 degrees.
  • Slice and serve with the remaining sauce and fresh rosemary.

1 oz can coleman's dry mustard

  • 1. Mix all ingredients together. Pour into a glass jar and store covered in refrigerator for up to 2 months.
  • 2. I pour Jezebel Sauce over a block of cream cheese and serve with crackers. I also have poured over boneless, skinless chicken breast and then baked and served as a main dish. Just put on your thinking cap and see what you can create.

  • Combine first 3 ingredients and, if desired, sherry in a shallow dish or large zip-top plastic freezer bag; add pork. Cover or seal, and chill 20 minutes.
  • Microwave pineapple preserves and apple jelly in a glass bowl at HIGH 2 minutes or until melted. Stir in remaining ingredients.
  • Remove pork from marinade, discarding marinade. Grill pork, covered with grill lid, over medium-high heat (350° to 400°) 25 minutes or until meat thermometer inserted into thickest portion registers 155°, turning once and basting with 1/2 cup Gingered Jezebel Sauce the last 5 to 10 minutes. Let stand 10 minutes or until thermometer registers 160°. Slice and serve with remaining 3/4 cup Gingered Jezebel Sauce.

GRILLED SAUSAGE SANDWICH WITH JEZEBEL SAUCE



Grilled Sausage Sandwich With Jezebel Sauce image

From the Cookbook "Crazy Sista Cooking" by Lulu Buffet. The original recipe calls for smoked sausage from Conecuh County, AL. If you can't get that, any good smoked sausage like Kielbasa will work. You can fry or grill the sausage. I prefer mine with the Sausage grilled. Serve with chips, fries, potato salad or coleslaw on the side. Cooking time shown does not reflect chill time for Jezebel sauce.

2 lbs smoked sausage
4 tablespoons butter, divided
1 large onion, sliced
1 green bell pepper, sliced
4 hot dog buns
1 (12 ounce) jar apple jelly
1 (12 ounce) jar pineapple preserves
1/2 cup dry mustard
1/2 cup prepared horseradish
1 teaspoon black pepper

Steps:

  • Perpare Jezebel sauce first so that it has time for the flavors to blend, can make a day ahead if you want to.
  • For Jezebel Sauce combine apple jelly, pineapple preserves, dry mustard, horseradish and tsp of pepper together in a bowl.
  • Combine thoroughly and refrigerate until ready for use.
  • For Sandwiches:.
  • Cut sausage into bun-length pieces, and butterfly each piece, leaving halves connected.
  • Grill or fry sausage until browned and cooked through.
  • Set aside to drain on paper towels, if you fried the sausage, wipe out your skillet with a paper towel.
  • In Medium skillet add 2 TBSP butter over low heat, do not let it burn.
  • When the butter begins to foam, add the onions and bell peppers.
  • Saute until soft and the edges begin to brown.
  • Remove from heat and set aside.
  • Spread remaining butter on inside of buns.
  • Toast open buns.
  • Place cooked sausage on buns.
  • Divide the cooked peppers and onions evenly between the buns.
  • Spoon desired amoung of Jezebel Sauce over each.

Rum Jezebel Sauce:
2 (3/4 to 1 lb) pork tenderloins
3 tbsp orange juice
2 tbsp light brown sugar
1 tbsp Caribbean jerk seasoning
1/2 tsp salt
Rum Jezebel Sauce
1/2 cup orange marmalade (or pineapple preserves)
1/2 cup apple jelly
1/2 (5.25 oz) jar Creole mustard
1/4 tsp Caribbean jerk seasoning
1 1/2 tsps dark rum or orange juice

Steps:

  • Brush pork tenderloins with orange juice. Stir together brown sugar, Caribbean jerk seasoning and salt. Rub mixture evenly over pork tenderloins. Place on a lightly greased rack in a roasting pan. Bake at 425 degrees for 25 to 30 minutes or until a meat thermometer inserted into thickest portion registers 155 degrees. Remove pork from oven, and loosely cover with aluminum foil. Let stand until thermometer registers 160 degrees (about 5 minutes). Serve with Rum Jezebel Sauce. For sauce, whisk together orange marmalade (or pineapple preserves), apple jelly and remaining ingredients. Cover and chill until ready to serve.
