1 package (6 ounces) raspberry gelatin
1-1/2 cups boiling water
1 can (20 ounces) unsweetened crushed pineapple, drained
1 package (12 ounces) frozen unsweetened raspberries

Steps:

  • In a large bowl, dissolve gelatin in boiling water. Stir in fruit. Pour into a greased 11x7-in. dish. Refrigerate for 4 hours or until firm. Cut into squares.

Giving chocolate coins to children, and sometimes to teachers, is a long-standing Hanukkah tradition. This homemade version of gelt uses a miniature muffin pan to mold the coins into shape. 2 teaspoons canola oil
3 (3-1/2 ounces each) dark chocolate candy bars, melted
1/4 cup sliced almonds, finely chopped

Steps:

  • Brush miniature muffin cups lightly with oil. Pour about 1 teaspoons melted chocolate into each cup and bang on counter. Sprinkle with almonds. Refrigerate until set. Remove from muffin cups and blot off any excess oil, if needed.

1 (3 ounce) package orange Jell-O
1 (3 ounce) package cherry Jell-O
1 (3 ounce) package lime Jell-O gelatin
4 cups boiling water
1 (3 ounce) package lemon Jell-O gelatin
1/4 cup sugar
1/2 cup pineapple juice
1 1/2 cups graham cracker crumbs
1/3 cup melted butter or 1/3 cup melted margarine
2 envelopes Dream Whip
1/4 cup milk (optional)
2 (3 ounce) packages cream cheese, beaten with the milk until fluffy (optional)

Steps:

  • prepare the three flavors of gelatin separately, using l cup boiling water and 1/2 cup cold water for each.
  • Pour each flavor into an 8 inch square pan.
  • Chill until firm or overnight.
  • Then combine the lemon gelatin, sugar and remaining l cup boiling water; stir until gelatin and sugar are dissolved.
  • Stir in pineapple juice.
  • Chill until slightly thickened (about l hr. l5 minutes.) Meanwhile mix the crumbs and melted butter; press into bottom of 9 inch spring form pan (I buy ready made graham crusts).
  • Cut the firm gelatins into 1/2 inch cubes.
  • Then prepare whipped topping mix as directed on package,blend with lemon gelatin.
  • Fold in gelatin cubes.
  • Pour into pan.
  • Chill at least 5 hours or overnight.
  • If desired, spread additional prepared whipped topping or whipped cream on top and sides.
  • (This makes two if you use store bought crusts).
  • ---------CROWNJEWEL CHEESE DESSERT----- Prepare Crown Jewel dessert, subsituting cream cheese for the whipped topping.

6 cups boiling water, divided
2 packages (3 ounces each) orange gelatin
2 envelopes unflavored gelatin
1/3 cup cold water
1-1/2 cups white grape juice
1 carton (12 ounces) frozen whipped topping, thawed

Steps:

  • In a bowl, dissolve the lime gelatin in 3 cups boiling water. Pour into an 8-in. square dish coated with cooking spray. In another bowl, dissolve orange gelatin in remaining boiling water. Pour into another 8-in. square dish coated with cooking spray. Refrigerate for 4 hours or until very firm., In a small saucepan, sprinkle unflavored gelatin over cold water; let stand for 1 minute. Add grape juice. Heat over low heat, stirring until gelatin is completely dissolved. Pour into a large bowl; refrigerate for 45 minutes or until slightly thickened. Fold in whipped topping., Cut green gelatin into 1/2-in. cubes and orange gelatin into 1-in. cubes. Set aside 8-10 cubes of each color for garnish. Place 2 cups whipped topping mixture in a bowl; fold in remaining green cubes. Spread into a 13x9-in. dish coated with cooking spray. Fold remaining orange cubes into remaining whipped topping mixture; spread over bottom layer. Sprinkle with reserved green and orange gelatin cubes. Refrigerate for 2 hours or until set. Cut into squares.

This colorful salad with its red and green layers is fun to serve for a festive dinner or brunch. It's been my family's favorite for many years- everyone loves the Jell-O and cream cheese combination. It goes with all kinds of entrees.

1 package (3 ounces) cherry gelatin
3 cups boiling water, divided
1 can (29 ounces) sliced pears, undrained
1 package (3 ounces) lemon gelatin
1 package (8 ounces) cream cheese, cubed and softened
1 package (3 ounces) lime gelatin
1 can (20 ounces) crushed pineapple

Steps:

  • In a bowl, dissolve cherry gelatin in 1 cup boiling water. Drain pears, reserving 1 cup juice (discard remaining juice or save for another use). Stir pears and reserved juice into cherry gelatin. Pour into a 10-in. fluted tube pan or 3-qt. ring mold coated with cooking spray. Refrigerate until nearly set, about 1-1/4 hours., In a bowl, dissolve the lemon gelatin in 1 cup boiling water; refrigerate until slightly thickened. Beat in the cream cheese until blended. Pour over the cherry layer. , In another bowl, dissolve lime gelatin in remaining boiling water. Drain pineapple well, reserving juice. Add enough water to juice to measure 3/4 cup. Stir pineapple and reserved juice into lime gelatin; spoon over lemon layer. Refrigerate until firm. Unmold onto a serving plate.

1-2/3 cups graham cracker crumbs
1/3 cup sugar
1/2 cup butter, melted
CREAM CHEESE FILLING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
2 large eggs
PUMPKIN FILLING:
2 envelopes unflavored gelatin
1/2 cup cold water
1 can (30 ounces) pumpkin pie filling
1 can (5-1/2 ounces) evaporated milk
2 large eggs, lightly beaten
TOPPING:
1 carton (12 ounces) frozen whipped topping, thawed

Steps:

  • Preheat oven to 350°. In a small bowl, combine the crumbs, sugar and butter. Press onto the bottom of an ungreased 13x9-in. baking dish; set aside. In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Pour over crust. Bake until center is almost set, 25-30 minutes., Meanwhile, in a small bowl, sprinkle gelatin over cold water; let stand for 1 minute. In a large saucepan, combine pie filling and evaporated milk. Bring to a boil. Add gelatin; stir until dissolved. Whisk a small amount of hot mixture into the eggs. Return all to the pan, whisking constantly., Cook and stir over low heat until mixture is thickened and coats the back of a spoon. Cool for 10 minutes. Spread over cream cheese layer. Spread whipped topping over top. Cover and refrigerate overnight.
