GRILLED JERK CHICKEN DRUMSTICKS

1 habanero or Scotch Bonnet chile pepper, cut into 6 to 8 pieces
3 scallions, roughly chopped
10 fresh thyme sprigs
1/4 cup vegetable oil, plus more for the grill
2 tablespoons packed light brown sugar
2 tablespoons distilled white vinegar
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
Kosher salt and freshly ground pepper
8 skinless chicken drumsticks (about 2 pounds)
Lime wedges, for serving

Steps:

  • Combine the chile, scallions, thyme, vegetable oil, brown sugar, vinegar, allspice and cloves in a large bowl and mix until the sugar dissolves. Stir in 1 1/2 teaspoons salt and a few grinds of pepper. Add the chicken and massage the marinade into the meat, 1 to 2 minutes. Cover and refrigerate at least 8 hours or overnight.
  • Preheat a grill to medium. Oil the grates. Remove the chicken from the marinade, shaking off any large pieces of chile or scallion. Season all over with salt and pepper. Grill, covered, turning often, until the chicken is browned and cooked through, 20 to 25 minutes. Serve with lime wedges.

6 chicken drumsticks, pushed down the bone
4 tablespoons plain yogurt
cooking spray
6 green onions, chopped
1 jalapeno, seeded (or you can use scotch bonnet peppers)
1 garlic clove
1 teaspoon allspice
1 teaspoon paprika
1 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 cup oil

Steps:

  • Jerk Sauce:In blender, combine all ingredients and process until smooth. Refrigerate leftover sauce.
  • Marinate chicken in a mixture of jerk marinade and yogurt, best if left refrigerated overnight.
  • Spray with oil spray.
  • Can be grilled over medium hot coals about 35 minutes or until done. Turning occasionally to prevent burning.
  • These can also be baked but don't have that same smokey flavor as when they are cooked on a grill.
  • Serve as a snack or appetizer.

Spicy is one of my favorite ways to impart flavor, without adding a ton of calories. The overnight soak in salt water helps to retain moisture in the finished dish. This dish comes together easily, with ingredients in your cupboard. (I made this with the exact amount of seasonings, so there is none leftover. You may double them, for extra, of course.) Marinade/soak time is not included in cook or prep times.

5 -6 chicken drumsticks (1 package)
2 -3 tablespoons salt
water
8 ounces plain yogurt
1 lime, juice of
1 tablespoon fresh ginger, grated
1/2 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1/4 teaspoon garlic powder
1/2 teaspoon thyme
1/8 teaspoon onion powder
1/2 teaspoon red pepper flakes
1/8 teaspoon salt
oil (for oiling your grilling racks)

Steps:

  • Remove chicken from package; rinse well and place in bowl with 2-3 tablespoons of salt and water to cover. Soak overnight. (You may also drain your yogurt now: put yogurt in strainer fitted with a coffee filter over a container in fridge, overnight. Discard whey (liquid) and proceed.).
  • Mix yogurt, ginger and the juice from 1 lime; add chicken drums to marinade for 3 hours or so.
  • Mix all seasoning ingredients together in a small bowl.
  • Remove drumsticks from yogurt soak and shake off the excess well.
  • Sprinkle the seasoning liberally over the drums, making sure to cover all sides.
  • Oil your grill racks and set your grill to medium heat; the drums will take an average of 8-12 minutes per side. Please be sure yours are done by checking that the juices run clear. An instant read thermometer should read 165ยบ at the thickest part, NOT touching the bone. Be sure to allow your chicken to rest (at least 5 minutes - to allow the juices to re-distribute) after removing from the grill.

8 chicken drumsticks
4 tsp jerk seasoning (we used Schwartz)
4 tsp olive oil
2 red onions , sliced
small bunch coriander , stalks finely chopped, leaves reserved
2 x 400g cans chopped tomatoes
410g can kidney bean , drained

Steps:

  • Toss chicken in 1 tsp jerk seasoning and a little salt and pepper. Heat half the oil in a large frying pan, quickly brown the chicken, then remove. Tip in the remaining oil, onions and coriander stalks, then soften for 5 mins, stirring in the remaining jerk seasoning for the final min.
  • Return the drumsticks to the pan, pour over the tomatoes, then bring to a simmer. Cover, then cook for 20 mins. Remove the lid, stir in the beans, then cook for 10 mins more. Scatter with coriander and serve with rice.
