1 large red onion, diced
½ med white onion, diced
1 red pepper, diced
1 green pepper, diced
1 jalapeno, diced
¾ lb hot Italian sausage
1 lb chicken legs
¾ cup of Jamaica Jerk Marinade
¼ teaspoon chili powder
¼ teaspoon cayenne powder
2 cloves garlic, crushed
1 can crushed tomatoes
1 can diced tomatoes (1lb 12oz)
1 cup Ketchup
1 can small red kidney beans, drained (15oz)
1 can small black beans, drained (15oz)
Fresh cilantro

Steps:

  • Brown Italian sausage in large pot. Brown chicken and set aside. Sautee onions and peppers until soft. Add remaining ingredients. Simmer 2-3 hours. Stir in chopped cilantro before serving

1 large red onion
1 red pepper
1 green pepper
1 Jamaican hot pepper
3/4 lb hot Italian sausage
1 lb. ground beef
1 heaping TBS Jamaican dry jerk seasoning
1/4 tsp. chili powder
1/4 tsp cayenne
2 cloves garlic
1 can fresh cut tomatoes (1 lb. 12 oz)
1 cup ketchup
2 cans small red kidney beans (15.5 oz each)
1 bag shredded cheese - optional

Steps:

  • Chop onion and peppers. Remove sausage skin and brown. Add beef, jerk seasoning, chili powder, and cayenne. Add 3/4 onion and all peppers. Add garlic , crushed. Cook 5 minutes Add tomatoes, ketchup, cover and simmer 20 minutes. Add beans and simmer 10 minutes. Serves 8.

2 tablespoons vegetable oil
1 ½ pounds chicken meat, cut into chunks
salt and black pepper to taste
1 onion, chopped
1 jalapeno pepper, seeded and minced
3 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon dried thyme leaves
1 teaspoon rubbed dried sage
1 teaspoon dried oregano
1 tablespoon ground allspice
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon cayenne pepper, or to taste
½ teaspoon salt
¼ teaspoon ground cloves
2 limes, juiced
1 (4 ounce) can chopped green chilies
1 (32 ounce) carton chicken broth
3 (15.5 ounce) cans white beans, drained and rinsed
8 ounces shredded Pepper Jack cheese

Steps:

  • Heat the vegetable oil in a large pot or Dutch oven over medium heat. Season the chicken meat with salt and pepper to taste. Stir into the hot oil, and cook until no longer pink in the center, about 8 minutes. Add the onion, jalapeno pepper, and garlic; continue cooking and stirring until the onions are tender, about 3 minutes more. Stir in the cumin, thyme, sage, oregano, allspice, cinnamon, nutmeg, cayenne pepper, salt, and cloves; cook and stir 1 minute.
  • Pour in the lime juice, chopped green chilies, and chicken broth, then bring to a simmer. Reduce heat to medium-low and cook 45 minutes. Stir in the rinsed white beans, and cook 10 more minutes to reheat. Stir in the Pepper Jack cheese until melted to serve.

1 large onion, chopped
1 yellow bell pepper, chopped
3 tablespoons chili powder
1 1/2 teaspoons dried thyme
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 large rotisserie-cooked chicken, meat shredded
1 quart chicken broth
28 ounces stewed tomatoes
16 ounces black beans, undrained
16 ounces small white beans, undrained
2 tablespoons chopped pickled jalapeno peppers
3 garlic cloves, minced
1/2 cup chopped fresh cilantro
1 ounce semisweet chocolate

Steps:

  • Heat oil in a large pot over medium-high heat.
  • Add onion and bell pepper and cook, stirring until softened, about 5 minutes.
  • Add chili powder, thyme, cinnamon, and allspice. Cook, stirring constantly, until fragrant, about 1 minute.

A quick and easy Jamaican jerk themed beef and bean chili!

1 pound ground beef
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
4 cloves garlic, chopped
1 tablespoon ginger, grated
1+ scotch bonnet pepper (or habanero pepper), finely diced
2 cups beef broth
2 (14.5 ounce) cans red kidney beans, rinsed and drained
1 (28 ounce) can diced tomatoes
1/2 orange, juice and zest
1 lime, juice and zest (or 2 tablespoons cider vinegar)
2 tablespoons soy sauce (or tamari)
2 teaspoons Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon thyme, chopped (or 2 teaspoons dried thyme)
1 tablespoon allspice
1 teaspoon cinnamon
1/2 teaspoon nutmeg
salt and pepper to taste

Steps:

  • Cook the beef and onion in a large saucepan over medium-high heat, breaking the beef apart with a spoon as it cooks, before draining off any excess grease.
  • Add the bell peppers and cook until just tender, about 5 minutes.
  • Add the garlic, ginger and scotch bonnet pepper and cook until fragrant, about 1 minute.
  • Add the broth, beans, diced tomatoes, orange juice and zest, lime juice and zest, soy sauce, Worcestershire sauce, brown sugar, thyme, allspice, cinnamon and nutmeg, bring to a boil, reduce the heat and simmer for 10 minutes. (Note: You can simmer longer and the flavours will only get better!)

2 cans diced tomatoes (do not drain)
2 cans black beans (do not drain)
12oz. can tomato paste
1 cup water OR 12oz. Red Stripe
1 large onion coarsely chopped
3 green onions coarsely chopped
1 yellow bell pepper. coarsely chopped
1lb. ground Chicken
1lb. Pork Sausage Chorizo
2 jalapenos
2 habaneros or Scotch Bonnets
2 oranges
2 chicken broth cubes
1 cup water
Jerk spices:
1 tbls ground allspice
1 tbls sugar
2 tbls ground fresh thyme
1 teas black pepper
1 teas cayenne pepper
1/2 teas ground cinnamon
1/2 teas ground nutmeg
1/2 teas ground ginger
1-1/2 teas salt
3 cloves garlic minced

Steps:

  • mix jerk spices together, set aside. In Large pot mix first 7 ingredients bring 1 cup of water to a boil then dissolve two chicken broth cubes. add to pot. remove skins from Chorizo and cook on stove. add chicken and squeeze half an orange over meat. brown mixture. add to pot. cut peppers in food processor then add to pot. squeeze remaining oranges into pot and add 3 Tbls of the jerk seasoning to pot Once everything's in the Pot heat till boiling. then reduce heat, cover and simmer for 1 hour....onions will turn translucent
