1 (1 1/2 ounce) envelope good season's Italian salad dressing mix
2 tablespoons brown sugar
2 tablespoons oil
2 tablespoons soy sauce
1 teaspoon ground cinnamon
1 teaspoon ground thyme
1/2 teaspoon ground red pepper
6 small boneless skinless chicken breast halves (about 1 1/2 pounds)
4 cups hot cooked brown rice

Steps:

  • Mix all ingredients except chicken and rice in a shallow dish until well blended. Add chicken; turn to evenly coat both sides of each breast. Refrigerate 1 hour.
  • Heat greased grill to medium-high heat. Grill chicken 30 minutes or until done (165°F), turning occasionally. Serve with rice.

½ cup citrus marinade (such as Goya® Mojo Criollo)
¼ cup apple cider vinegar
3 tablespoons Jamaican jerk seasoning
2 tablespoons coconut oil
2 tablespoons olive oil
1 tablespoon soy sauce
2 teaspoons minced garlic
1 teaspoon salt
1 teaspoon curry powder
6 large skinless, boneless chicken breast halves

Steps:

  • Combine water, citrus marinade, apple cider vinegar, jerk seasoning, coconut oil, olive oil, soy sauce, garlic, salt, and curry powder in an electric pressure cooker. Add chicken breasts. 8 bone-in, skin-on chicken breast halves (10 to 12 ounces each)
7 tablespoons vegetable oil, divided
Coarse salt and ground pepper
2 tablespoons Jamaican jerk seasoning
3 medium plantains (about 2 pounds total), very ripe (all-over brownish black skin), sliced 3/4 inch thick on the diagonal
1 tablespoon white-wine vinegar
1 teaspoon Dijon mustard
2 navel oranges, peeled and segmented, plus 2 tablespoons juice reserved
2 heads bibb lettuce (about 1 pound total), washed and coarsely torn

Steps:

  • Preheat oven to 400. Arrange chicken on two rimmed baking sheets. Rub with 1 tablespoon oil; season with salt and pepper. Sprinkle 4 breasts with jerk seasoning; roast all until an instant-read thermometer inserted in the thickest part of breast (avoiding bone) registers 165, 40 to 45 minutes.
  • Meanwhile, heat 4 tablespoons oil in a large skillet over medium-low. Add half the plantains, and cook until browned, 4 to 6 minutes per side. Transfer to a paper-towel-lined plate, and season with salt. Repeat with remaining plantains. Set aside.
  • Make salad: In a small bowl, whisk together vinegar, mustard, orange juice, and remaining 2 tablespoons oil; season with salt and pepper. In a large bowl, combine lettuce and orange segments. Drizzle with dressing, and toss to combine. Serve chicken with salad and plantains.

10 chicken legs or 5 breasts
1 bunch green onions, white & light green parts cut into 1-inch pieces
5 cloves garlic, peeled
1 inch piece fresh ginger, peeled and cut into slices
2 habanero peppers, stems removed and roughly chopped
½ yellow onion, diced
¼ cup brown sugar
2 teaspoons ground allspice
2 teaspoons ground ginger
2 teaspoons dried thyme
1 teaspoon ground cinnamon
1 tablespoon salt
Juice of 1 lime
Juice of 1 lime
1 tablespoon Worcestershire
60ml olive oil

Steps:

  • In a blender, combine everything except drumsticks (cuz that would be a fricking disaster) and blend until smooth - set aside 1⁄2 cup and reserve
  • Place chicken in a ziplock bag or shallow dish and add unreserved marinade - be sure all is covered well and refrigerate at least 2 hours or up to overnight
  • Remove chicken from fridge about 30 minutes prior to cooking
  • When ready to grill, set grill up for 2 zone cooking - one side is set to medium high and the other to low
  • Add chicken to the oiled grill and cook, turning often until chicken is charred lightly in spots but looking beautiful, about 10 minutes
  • Move chicken to the side set to low and brush with reserved marinade
  • Grill, covered, until chicken is cooked through turning often, another 10 to 15 minutes
