1 tablespoon extra-virgin olive oil
2 tablespoons butter
1/2 red bell pepper, chopped
2 small to medium yellow squash, sliced
Salt and pepper
2 tablespoons chopped parsley leaves
2 tablespoons chopped chives or 2 scallions, optional

Steps:

  • Preheat skillet over medium high heat. Add oil, then butter. When butter melts, add red peppers and squash. Saute 12 to 14 minutes until squash is tender. Add salt, pepper and parsley. Add chives or scallions if you would like a layer of light onion flavor on the dish as well.

I made this tonight and can't stop eating it so I thought I'd share the recipe and see what you all think.

Number Of Ingredients 8

2 -3 medium squash
1/4 cup chopped sweet onion
2 cups chopped fresh spinach
1 sprig about 1 tbsp chopped fresh parsley
2 tablespoons olive oil
1/2 teaspoon chopped roasted garlic
1/2 teaspoon morton's nature seasoning
salt and pepper

Steps:

  • Heat the oil and garlic over medium heat.
  • Saute the squash, onion and parsley together till the squash and onion are just beginning to soften (about 8 minutes).
  • Add in the spinach.
  • Sprinkle in the Morton Nature Seasoning.
  • Continue to cook till the spinach is wilted (about another 4 minutes).

Aunt Janet's spinach salad has never failed me when I took it to a potluck dinner. It gets rave reviews, and is so simple to make. If you are in a hurry you can substitute Catalina dressing for the homemade.

2 (6 ounce) packages baby spinach leaves
2 cups bean sprouts, washed
1/2 lb fresh mushrooms, sliced
3 hard-boiled eggs
1 (8 ounce) can sliced water chestnuts
1/3 cup bacon bits
1 cup salad oil
1/3 cup vinegar
2 tablespoons ketchup
1 medium onion, grated
1/3 cup sugar
1 teaspoon salt

Steps:

  • Dressing: Put all ingredients in a container with a tight fitting lid, shake well and store in the refrigerator overnight to blend the flavors In a large salad bowl mix all the fresh ingredients.
  • Slice the eggs and mix half in the salad.
  • Add the dressing, as much as you desire, and mix well.
  • Add the remaining egg slices on the top and sprinkle with bacon bits.
  • Serve immediately.
  • This makes a large amount, but it goes fast once people taste it!

1 medium yellow squash, sliced into 1/4 inches,look for good colour
1 small yellow onion, sliced
1/4 cup vegetable oil
oregano
white wine

Steps:

  • Place oil in saute pan over medium heat.
  • Add squash and onion.
  • Cook and stir until crisp and tender for about 5 minutes.
  • Sprinkle with whole oregano and a splash of white wine.
  • Depending on how you like it, I use about half the amount of oil called for, 1/4 cup is too much for us.

Rarely can you find patty pan (aka scalloped) squash in the grocery store. However, many farmers markets have them. In Texas, it seems that every farmers market is overflowing with squash come June. However, if you can't find them, any summer squash will do. I also have made this recipe using yellow squash and zucchini and it was quite delicious. The freshness of the ingredients scream "summer".

1 tablespoon olive oil
1 tablespoon butter
½ sweet yellow onion (such as Vidalia®), thinly sliced
4 patty pan squash, sliced to 1/2-inch-thick pieces
3 cloves garlic, crushed, or more to taste
1 dash lemon pepper
1 ½ cups packed fresh spinach
¼ cup chopped fresh parsley
1 tablespoon chopped fresh basil
½ lemon, juiced
1 ½ teaspoons grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Heat olive oil and butter in a skillet over medium-high heat until foaming, 1 to 2 minutes. Saute onion in the olive oil-butter until tender and translucent, about 3 minutes. Add squash and garlic; season with lemon pepper. Saute mixture until squash is easily pierced with a fork, 5 to 6 minutes.
  • Mix spinach, parsley, and basil into squash mixture; saute until spinach wilts, about 1 minute. Squeeze lemon juice over mixture and sprinkle in Parmesan cheese; stir well. Season mixture with salt and black pepper.
