4 large jalapeño peppers (about 3 ounces each)
4 ounces cream cheese, divided into 4 pieces, chilled
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 small boneless, skinless chicken breasts (about 5 ounces each)
4 thin slices Colby Jack cheese
20 slices bacon (about 1 1/2 pounds)

Steps:

  • Wear gloves to protect your hands and use a small paring knife to cut the stem-end off the jalapeño; you should see the white ribs attached to the walls of the jalapeño. Use the paring knife to remove the ribs from the walls. Make a cut down the length of the jalapeño from the top to the tip. Carefully, without breaking the jalapeño in half, scrape out the ribs and seeds. Transfer to a microwave-safe bowl, add 3 tablespoons water, cover tightly with plastic wrap and microwave on high power until the jalapeños turn olive green and are lightly softened but are still firm and hold their shape, 2 to 3 minutes. Let cool.
  • Stuff each cooled jalapeño with a piece of cream cheese; squeeze the walls around the cream cheese to force out any air pockets and to seal the jalapeño walls together.
  • Mix together the cumin, 1 tablespoon salt and 1/2 teaspoon pepper in a small bowl. Pound the chicken lengthwise down the breast to make a rectangular 1/4-inch-thick cutlet. Sprinkle with a quarter of the seasoned salt. Repeat with the remaining chicken and seasoned salt.
  • With one of the narrow ends of the chicken facing you, lay a piece of Colby Jack cheese at the bottom of the cutlet. Place 1 stuffed jalapeño crosswise on top of the cheese about 2 inches from the bottom. Tightly roll up the chicken and the cheese around the jalapeño, folding in the sides as you roll. Repeat with the remaining chicken and jalapeños.
  • Lay 5 strips of bacon on a clean work surface so that the strips are slightly overlapping (about 1/4-inch) and are wide enough to completely cover a chicken roll. Place 1 chicken roll at the bottom of the bacon blanket. Wrap the bacon tightly over the chicken roll. Repeat with the remaining bacon and chicken rolls.
  • Prepare a grill for indirect grilling and heat to medium-high heat.
  • Place the chicken rolls, bacon seam-side down, on the cooler side of the grill. Cover and cook until the bacon is beginning to brown and the cheese is beginning to melt and ooze from the sides, 15 to 20 minutes. Transfer the chicken rolls to the hot side of the grill and cook until lightly charred, 1 to 2 minutes per side. Let cool 10 minutes before serving.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cream cheese, Cheddar cheese, jalapenos, garlic powder, and barbecue seasoning in a bowl. Mix well until evenly combined.
  • Cut a deep pocket into each chicken breast, being careful not to cut all the way through to the other side. Fill the pocket of each chicken breast with cream cheese mixture. Wrap each chicken breast with 3 slices of bacon.
  • Place a baking rack on top of a baking sheet and place stuffed chicken on top of the rack.

Three 6-ounce boneless skinless chicken breasts
4 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
6 jalapeno peppers, stemmed, halved and seeded
6 slices thick-cut bacon
8 ounces cream cheese, at room temperature
1 cup grated Cheddar cheese
1/2 cup sour cream
1/4 cup chicken stock
1 teaspoon sweet paprika
1/2 cup fried jalapenos, such as French's Crispy Jalapenos
1/2 cup panko breadcrumbs
2 tablespoons salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the chicken breasts on one half of a baking sheet, drizzle with 2 tablespoons of the olive oil and season with the chili powder, cumin and some salt and pepper. Place the jalapeno peppers on the other half of the same baking sheet. Drizzle them with the remaining 2 tablespoons olive oil.
  • On a second baking sheet, lay the bacon slices out in a single layer. Put both baking sheets into the oven and bake until the chicken is cooked through and the bacon is crispy, about 25 minutes.
  • Meanwhile, mix the cream cheese, Cheddar, sour cream, chicken stock and paprika together in a mixing bowl.
  • Transfer the bacon and chicken to a cutting board. Dice the chicken and chop the bacon. Add all of the diced chicken to the cream cheese mixture along with half of the chopped bacon. Stir together until well mixed.
  • Transfer half of the chicken mixture to an 8-inch square casserole dish. Arrange half of the roasted jalapenos on top of the chicken mixture. Top with the remaining chicken mixture followed by the rest of the roasted jalapenos.
  • In a separate bowl, mix together the fried jalapenos, breadcrumbs and the remaining bacon. Toss with the melted butter until evenly mixed. Sprinkle the top of the casserole with the breadcrumb mixture. Bake until bubbly and golden, 25 to 27 minutes.

1/2 lb hickory smoked bacon

2 lb boneless skinless chicken breast
1/4 teaspoon salt
1/2 cup salsa verde
1 can (10.5 oz) Muir Glen™ diced tomatoes, undrained
2 tablespoons butter
3 slices diced cooked bacon
2/3 cup Progresso™ plain bread crumbs
2 tablespoons butter
1 cup shredded Cheddar cheese (4 oz)
1/4 cup milk
4 large buns
1/2 cup pickled sliced jalapeño chiles, if desired

Steps:

  • In bottom of 6-quart slow cooker, place chopped onion; top with chicken breast. Season chicken with salt.

Believe it or not, this recipe came to me in a dream after discussing previous adventures with jalapeno poppers and standard baked ziti. I awoke the next morning with a desire and a vision, and thus this delicious, spicy, and creamy ziti was born.

2 pounds skinless, boneless chicken breast halves
1 cup chicken broth
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon onion flakes
1 teaspoon dried oregano
1 teaspoon minced garlic
6 slices bacon, diced
3 medium jalapeno peppers - stemmed, seeded, and minced
¼ cup diced onion
1 (8 ounce) package cream cheese, softened
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
½ cup mayonnaise
1 (16 ounce) package ziti pasta
1 (16 ounce) jar Alfredo sauce
1 (8 ounce) package shredded pepper Jack cheese
½ cup shredded mozzarella cheese
½ cup crushed buttery round crackers
½ cup grated Parmesan cheese
4 tablespoons salted butter, softened

Steps:

  • Combine chicken breasts, chicken broth, salt, pepper, onion flakes, oregano, and garlic for shredded chicken in a medium slow cooker, making sure chicken is completely covered by broth.
  • Cook until chicken is no longer pink in the center, on Low for 5 to 6 hours or on High for 3 to 4 hours.
  • Thirty minutes before chicken is finished cooking, preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and set aside.
  • While ziti is cooking, prepare filling: fry bacon, jalapenos, and onion in a small skillet over medium-high heat until onions are tender and bacon is browned, 5 to 7 minutes. Remove from the heat and transfer to a small mixing bowl with cream cheese, mozzarella, Parmesan, and mayonnaise; mix until well combined.
  • Remove chicken from the slow cooker and place into a large bowl; use 2 forks to shred chicken into small pieces. Add cooked ziti and Alfredo sauce; mix well.
  • Pour 1/2 of the chicken-ziti mixture into the prepared baking dish and sprinkle pepper Jack cheese in an even layer over top. Spread jalapeno popper filling evenly across the dish. Pour remaining chicken-ziti mixture into the dish, and sprinkle 1/2 cup mozzarella over top.
  • Mix crushed crackers, Parmesan cheese, and butter for topping together in a small bowl; sprinkle over the pasta dish.
  • Bake in the preheated oven until cheese is melted and just barely starts to turn golden, 25 to 30 minutes. Remove from the oven and serve immediately.

1/2 cup chopped onion
2 lb boneless skinless chicken breast
1/4 teaspoon salt
1/2 cup salsa verde
1 can (10.5 oz) Muir Glen™ diced tomatoes, undrained
2 tablespoons butter
3 slices diced cooked bacon
2/3 cup Progresso™ plain bread crumbs
2 tablespoons butter
1 cup shredded Cheddar cheese (4 oz)
1/4 cup milk
4 large buns
1/2 cup pickled sliced jalapeño chiles, if desired

Steps:

  • In bottom of 6-quart slow cooker, place chopped onion; top with chicken breast. Season chicken with salt.
  • Pour salsa verde and diced tomatoes on top of chicken. Cover; cook on High heat setting 4 hours.
  • Shred chicken with 2 forks. Set slow cooker to lowest setting, and cover until ready to assemble sandwiches.

4 slices bacon
1 skinless chicken breast half
salt and pepper
1 pinch garlic powder (to taste)
1 pinch cumin powder (to taste)
1 pinch dried chipotle powder (to taste) or 1 pinch dried ancho chile powder (to taste)
1 cup shredded cheddar cheese, divided
4 ounces cream cheese, softened
1 jalapeno, seeded and finely minced (or more to taste)
4 flour tortillas
cooking spray

Steps:

  • Cook the bacon in a large skillet over medium heat until crispy. Remove to paper towels to drain.
  • Season the chicken with salt, pepper, garlic powder, cumin and chile powder. Add to the same skillet you used for the bacon and cook until both sides are browned and the chicken is cooked through. Remove the chicken from the pan and let it rest for a couple of minutes, then cut into thin strips.
  • Mix together the cream cheese and the jalapenos. Spread the mixture evenly over the flour tortillas. Top half of each tortilla with a strip of bacon, 1/4 cup cheddar cheese and some of the chicken. Fold the top of the tortilla over the filling and press together gently.
  • Cook the quesadillas in batches in a skillet coated with cooking spray until both sides are browned. Cut into triangles and serve.
