BERRY LEMONADE

1 (12-ounce) bag unsweetened frozen mixed berries, thawed
1 (12-ounce) can frozen lemonade concentrate, thawed
1 cup vanilla simple syrup, recipe follows
3 cups water
Ice
In a blender, combine the berries, lemonade concentrate and syrup. Blend until smooth. Pour the mixture into a large pitcher. Add the water and stir, then refrigerate for at least 1 hour. Pour the lemonade into ice-filled glasses and serve.

1 vanilla bean, cut in half lengthwise, seeds removed, pod reserved

Steps:

  • To make Vanilla Simple Syrup:
  • In a small saucepan, over medium heat combine the sugar, water, vanilla bean seeds, and vanilla pod. Bring to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
  • Yield: 1 cup

RASPBERRY LEMONADE

2 cups fresh lemon juice (from about 15 lemons)
1 1/2 cups sugar
1/2 10-ounce bag frozen raspberries

Steps:

  • Put the lemon juice in a pitcher. Mix the sugar and 1 1/2 cups water to make a syrup, stirring well until the sugar dissolves. Add the sugar syrup to the lemon juice and top with 4 cups water. Taste to make sure it's sweet enough for you, then add the raspberries. (Keep in mind that the raspberries are tart, so be sure to sweeten enough!) Stir the lemonade, then chill in the fridge.
  • Fill mason jars with ice cubes and top them off with the lemonade.

¾ cup white sugar
4 ½ cups water, divided
1 cup blackberries
2 tablespoons white sugar
1 cup freshly squeezed lemon juice

Steps:

  • Heat 3/4 cup sugar and 1/2 cup water in a small saucepan over medium heat. Cook and stir until sugar has dissolved, about 2 minutes. Let cool.
  • Place blackberries and remaining 2 tablespoons of sugar in a blender. Blend until smooth.
  • Combine simple syrup, blended blackberries, remaining 4 cups of water, and lemon juice. Place a fine-mesh sieve over a pitcher and pour lemonade into the pitcher. Discard solids. Serve over ice.

My friend and I had tried a fruity jam with jalapenos at a local vineyard and this is the version I created. I like this spread on crackers with cream cheese, on hamburgers or even on grilled cheese. For extra heat, add the seeds of a few jalapenos to the jam. -Lisa Keim, Watertown, New York

2 cups finely chopped seeded jalapeno pepper (about 1 pound)
1-1/2 cups crushed strawberries (about 1 pound)
1 cup crushed blackberries (about 3/4 pound)
1 package (1-3/4 ounces) powdered fruit pectin
6-2/3 cups sugar

Steps:

  • In a large saucepan, combine jalapenos, strawberries and blackberries. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into 8 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

A southwestern flare for a summertime drink favorite! For mild flavor, leave the jalapeno in for 4-8 hours. For a spicier beverage, leave the pepper in longer. I leave mine in for 12 hours and it has a good bit of zing. Beautiful presentation too!

7 cups water, ice cold
1 cup granulated sugar
2 lemons, sliced into rounds
1 jalapeno, fresh
8 cups ice, for serving

Steps:

  • Stir water, freshly squeezed lemon juice and sugar until sugar is disolved.
  • Add lemon rounds to mixture.
  • With sharp knife, poke 5-10 holes in whole jalapeno and add to lemonade.
  • Put in fridge to chill for 30 minutes.
