3/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil., Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. Cook 2-3 minutes longer or until spinach is wilted and tortellini are tender. Serve with cheese if desired.Freeze option: Place individual portions of cooled soup in freezer containers and freeze. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

1 pound sweet Italian sausage, casings removed
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup red wine
4 large tomatoes - peeled, seeded and chopped
1 cup thinly sliced carrots
½ tablespoon packed fresh basil leaves
½ teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 ½ cups sliced zucchini
8 ounces fresh tortellini pasta
3 tablespoons chopped fresh parsley

Steps:

  • In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.
  • Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
  • Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes. Sprinkle with Parmesan cheese on top of each serving.

1/3 cup chopped onion
1 garlic clove, minced
1-3/4 cups beef broth
1-1/4 cups water

1/3 cup dry red wine or additional beef broth
1/3 cup tomato sauce

  • Crumble sausage into a large saucepan; cook over medium heat until no longer pink. Remove with a slotted spoon to paper towels. In the drippings, saute onion until tender. Add garlic; cook 1 minute longer. , Stir in the broth, water, tomatoes, green pepper, carrot, wine, tomato sauce, tomato paste, oregano and basil. Bring to a boil. 1 cup chopped onions

5 cups beef stock
⅓ cup water
½ cup red wine

1 pound sweet Italian sausage or chorizo sausage, casings removed
1 cup chopped onion
2 large garlic cloves, sliced
5 cups beef stock or canned broth
2 cups chopped tomatoes (about 3/4 pound)
1 8-ounce can tomato sauce
1 large zucchini, sliced
1 large carrot, thinly sliced
1 medium-sized green bell pepper, diced
1/2 cup dry red wine
2 tablespoons dried basil
2 tablespoons dried oregano
8 to 10 ounces purchased fresh cheese tortellini
Freshly grated Parmesan cheese

Steps:

  • Sauté Italian sausage in heavy Dutch oven over medium-high heat until cooked through, crumbling with back of spoon, about 10 minutes. using slotted spoon, transfer sausage to large bowl. Pour off all but 1 tablespoon drippings from Dutch oven. Add onion and garlic to Dutch oven and sauté until translucent, about 5 minutes. Return sausage to Dutch oven. Add stock, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. Simmer until vegetables are tender, about 40 minutes. (Can be prepared 2 days ahead. Cover and refrigerate. Bring to simmer before continuing.)
  • Add tortellini to soup and cook until tender, about 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with Parmesan and serve.

1 cup onion, chopped

1/2 cup red wine (I like cabernet or sauvignon )
2 (14 1/2 ounce) cans diced tomatoes
1 cup carrot, thinly sliced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano

2 zucchini, chopped
2 yellow squash
8 ounces cheese tortellini
2 green bell peppers, chopped

Steps:

12 oz bag frozen italian meatballs, thawed
19 oz bag frozen cheese tortellini, thawed
2 can(s) 10.5 oz each cream of mushroom soup
2 box 32 oz each chicken broth
1 tsp parsley, dried
1 tsp oregano, dried
2 clove garlic, minced
salt and pepper, to taste
1 1/2 c baby spinach, fresh
shaved parmesan cheese, to taste

Steps:

  • 1. Put the thawed meatballs in a 6 quart crockpot.
  • 2. In a large bowl, mix the other ingredients except the tortellini, baby spinach and parmesan cheese. Don't forget the salt and pepper. Pour the soup mixture over the meatballs. Cover and cook on high for one hour.
  • 3. Then add the tortellini, stir well and cook one more hour.
  • 4. Add the baby spinach, stir and cook another 15 mins or until wilted. ( do not cook this too long or your tortellini will be mushy)
  • 5. To serve: Add a little shaved parmesan in the bottom of your serving bowls. ladle the soup in the bowls and add a little more shaved parmesan cheese on top. Serve and enjoy

  • 1. Thoroughly mix ground beef and italian sausage together and shape into bite-sized meatballs. Fry meatballs in large skillet, turning frequently, until browned. Drain fat from meatballs.
  • 2. You may cook this soup in a large crockpot, or in a large kettle on top of the stove.
  • 3. Place the meatballs, beans, tomatoes, diced onion, minced garlic, beef base, italian seasoning, parsley, and water into crockpot, on high heat. (If using a kettle on the stove, cook on medium heat)
  • 4. When soup is simmering in the crockpot (about 2-3 hours), add in the tortellini and the italian vegetables. Soup will need to be brought back up to a good simmer before serving. (If using a kettle, add tortellini and italian vegetables after soup has boiled for about 15 minutes. Return soup to a boil, reduce heat, and let simmer for about another 30 minutes before serving.)
  • 5. I serve this hearty soup with a nice heated loaf of Italian or French bread, warmed hard rolls, or sometimes garlic toast.

This is a delicious soup loaded with vegetables and tortellini filled with cheese and basil. You can increase the spiciness of the soup by using hot Italian sausage and adding some red pepper flakes.

1 lb mild Italian sausage
1 cup onion, coarsely chopped
2 garlic cloves, minced
5 cups beef broth
2 cups carrots, thinly sliced
2 cups tomatoes, peeled, seeded and chopped (can use canned tomatoes, if desired)
1 1/2 cups sliced zucchini
1 green bell pepper, cut into 1/2-inch pieces
1 (8 ounce) can tomato sauce
1/2 cup water
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
salt, to taste
black pepper, to taste
1 (9 ounce) package refrigerated basil and cheese tortellini, uncooked
3 tablespoons fresh parsley, chopped
1/2 cup parmesan cheese, freshly grated

Steps:

  • Remove and discard casings from the sausage.
  • In a large Dutch oven, brown sausage over medium-high heat, stirring occasionally. Drain, reserving 1 Tablespoon drippings in the pan. Set sausage aside.
  • Add onion and garlic to the drippings in the pan; cook, stirring constantly, until onion is tender.
  • Add sausage, beef broth, carrots, tomato, zucchini, bell pepper, tomato sauce, water, basil, oregano, salt, and pepper, stirring well.
  • Bring to a boil; reduce heat, and simmer, uncovered for 30 minutes.
  • Add tortellini and parsley, stirring well.
  • Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes or until tortellini is tender. Adjust spices to taste.
  • Ladle soup into individual soup bowls. Sprinkle each serving with cheese.

This is a wonderfully filling soup that is a complete meal in one dish. If you use full fat italian sausage, you will need to drain the fat before adding the liquid ingredients or skim the fat from the soup as it simmers. This recipe is very suitable for Weight Watchers if you use very lean sausage and go easy on the tortellini.

1 lb lean Italian sausage, casings removed
1 large onion, diced
2 garlic cloves, crushed
3/4 cup red wine
3 cups stock (I use beef)
2 carrots, peeled and finely diced
2 zucchini, finely diced
10 fresh basil leaves, finely chopped
2 cups canned chopped tomatoes
10 ounces fresh tortellini (I prefer four cheese for this dish)
freshly shaved parmesan cheese (optional topping)

Steps:

  • In a large saucepan, cook the sausage for 5 minutes over a medium heat, mashing it up with a spatula (if using very lean sausage you may need to add a little cooking spray).
  • Add the onion and garlic and continue to cook for a further 3 minutes.
  • Add the red wine and cook for a further 2 minutes.
  • Add the beef stock, carrots, zucchini, basil and chopped tomatoes. Reduce the heat and simmer, loosely covered, for 30 minutes.
  • Add the tortellini and cook for a further 2-5 minutes, until the tortellini is cooked but not overdone.
  • Remove from the heat and serve, topped with freshly shaved parmesan cheese if desired.

¾ pound Italian sausage links, casings removed
3 cups thinly sliced mushrooms
1 cup chopped onion
2 cloves garlic, minced
5 ¼ cups water
1 (28 ounce) can chopped tomatoes with juice
1 ½ cups hearty red wine
5 cubes beef bouillon
1 teaspoon dried basil
¼ teaspoon ground black pepper
1 (8 ounce) package spinach and cheese tortellini (such as Ronzoni® Ricotta and Spinach)
2 cups chopped zucchini

Steps:

  • Cook and stir sausage in a large saucepan over medium heat until browned and crumbly, 5 to 7 minutes; drain. Add mushrooms, onion, and garlic; cook and stir until mushrooms and onion are tender, about 5 minutes.
  • Mix tomatoes with juice, red wine, beef bouillon, basil, and pepper into sausage mixture; bring to a boil. Reduce heat to medium-low, cover saucepan, and simmer, stirring occasionally, until heated through, about 15 minutes. 3 Italian turkey sausage links (4 ounces each), casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) Hunt's® Original Diced Tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil. Add tortellini; return to a boil. Cook for 7-9 minutes or until tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes.
