ITALIAN SAUSAGE STROMBOLI (AKA SAUSAGE BREAD)



Italian Sausage Stromboli (Aka Sausage Bread) image

I wanted to use up some left-overs and had some frozen pizza dough and this is the result. This is really tasty and can be used as a main dish or as an appetizer.

Number Of Ingredients 8

1 lb frozen pizza dough, defrosted
1/2-3/4 lb Italian sausage
1 green pepper, 1/4 inch wide slices
1 medium onion, 1/4 inch wide slices
italian seasoning
1 -1 1/2 cup mozzarella cheese
2 -3 tablespoons grated parmesan cheese
pizza sauce (optional)

Steps:

  • Lay pizza dough on a lightly floured surface so it can rest.
  • Slice Italian sausage into 1/2 inch slices; fry in a 10" skillet over medium heat until browned, about 10 minutes.
  • Add 1/2 cup water, peppers and onions; bring to boil and cover.
  • Reduce heat to low and cook about 5-10 minutes more, or until veggies are tender and sausage is heated through.
  • Drain liquid from skillet and sprinkle sausage mixture with Italian seasoning; set aside.
  • ***If you have leftover sausage, onions and peppers, like I did, you just need to warm it up***.
  • Preheat oven to 375 degrees and spray a baking sheet with cooking spray.
  • Roll pizza dough (on a lightly floured counter) into a rectangle, approximately 11 x 17.
  • Sprinkle with sausage mixture, then the cheeses.
  • Start at the bottom of the long side and roll jellyroll fashion, stopping occasionally to stuff sides it. When you get to the end, pinch seam together, trying to squeeze air out as you go.
  • Place seam side down on baking sheet; bake for about 25 minutes at 375 degrees.
  • Remove from oven and lay a clean dish towel on top of loaf; this will allow the crust to soften up and it will be easier to slice and eat.
  • After about 10 minutes or so, slice into 1 inch slices. Serve with warmed sauce for dipping, if desired.

1 tube (11 ounces) refrigerated crusty French loaf
3/4 cup shredded part-skim mozzarella cheese
3/4 cup shredded cheddar cheese
1/4 pound thinly sliced hard salami
1/4 pound thinly sliced deli ham
1 jar (2 ounces) diced pimientos, drained
1 tablespoon butter, melted
3 tablespoons shredded Parmesan cheese

Steps:

  • Preheat oven to 375°. Unroll dough on a lightly floured surface. Pat into a 14x12-in. rectangle; sprinkle mozzarella and cheddar cheeses to within 1/2 in. of edges. Layer with salami, ham and pimientos. , Roll up tightly jelly-roll style, starting from a short side; pinch seam to seal. Place seam side down on an ungreased baking sheet. Brush with butter; sprinkle with Parmesan cheese. , Bake until golden brown, 20-25 minutes. Cool on a wire rack for 5 minutes. Cut with a serrated knife. Serve warm. Refrigerate leftovers.

1 loaf (1 pound) frozen bread dough, thawed
1 can (8 ounces) pizza sauce
1/4 teaspoon garlic powder, divided
1/4 teaspoon dried oregano, divided
8 ounces brick cheese, sliced
1 cup shredded part-skim mozzarella cheese
1/2 cup chopped green pepper
1/4 cup chopped onion
1 cup sliced fresh mushrooms
1/2 cup shredded Parmesan cheese
1 package (3 ounces) sliced pepperoni
5 ounces sliced deli ham

Steps:

  • Place dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Preheat oven to 350°. Mix pizza sauce and 1/8 teaspoon each garlic powder and oregano., Punch down dough. On a lightly floured surface, roll dough into a 15x10-in. rectangle. Top with brick cheese, sauce mixture and remaining ingredients to within 1 in. of edges., Roll up, jelly-roll style, starting with a long side. Pinch seam to seal and tuck ends under; transfer to a greased baking sheet. Sprinkle with remaining garlic powder and oregano. Bake until golden brown, 25-30 minutes.

AUTHENTIC ITALIAN STROMBOLI

The beautiful thing about stromboli, is you can layer in whatever ingredients you like. I was taught this particular version by a man from Naples, Italy. Sometimes, I'll use mortadella, soppressta or pancetta for the meats. I usually buy my pizza dough from a local pizzeria, the 14" ball size, but feel free to make your favorite...

2 14 inch dough balls
1/4 lb thinly sliced genoa salami
1/4 lb thinly sliced proscuitto
1/4 lb thinly sliced pepperoni
1/4 lb thinly sliced provolone
1 c shredded whole milk mozzerella
1/4 c freshly grated parmesan

Steps:

  • 1. Roll out each dough ball to approximately 15" x 12".
  • 2. Dividing the meat and cheese ingredients in half, layer in the exact order listed.
  • 3. Roll up jellyroll style, starting with the long side, and place seam side down on a greased jellyroll pan. Make sure the ends are sealed, by pinching closed.
  • 4. Bake in a 375 degree oven for approximately 25 to 30 minutes, until golden brown.
  • 5. While the strombolis are baking, melt 1 stick of butter. Add 1 tablespoon of minced garlic and 2 tsp of parsley.
  • 6. Brush the loaves with the garlic mixture as soon as the loaves come out of the oven. Let stand for at least 10 minutes before slicing.

1 medium onion, chopped
1 tablespoon garlic-infused olive oil
2 garlic cloves, minced
2 loaves frozen bread dough, thawed (1 lb. each)
1/2 cup pesto sauce, divided
8 -12 fresh basil leaves
1/2 lb hard salami
1/2 lb prosciutto, thinly sliced
1/2 lb capicola ham
1/2 lb mozzarella cheese, sliced
1/4 cup grated parmesan cheese

Steps:

  • In a large skillet, saute onion in oil until tender. Add garlic; cook one minute more, stirring constantly to prevent the garlic from burning. Cool completely.
  • On two greased baking sheets, roll each loaf of dough into 16"x10" rectangles.
  • Spread each with 2 Tbs. of pesto and sprinkle with the onion mixture.
  • Lay basil leaves down the center of each loaf.
  • Arrange the salami, prosciutto, capicola ham and mozarella cheese over each rectangle to within 1/2" of edges.
  • Roll up jelly-roll style, starting with a long edge.
  • Pinch seams to seal, and tuck ends under.
  • Brush with remaining pesto and sprinkle with parmesan cheese.
  • Bake at 350 degrees for 30-35 minutes or until golden brown.
  • Cool 5 minutes before slicing.

STUFFED ITALIAN BEEF STROMBOLI

All-purpose flour, for dusting
1 pound prepared pizza dough, proofed in a greased bowl in a warm area for at least 1 hour
1 pound shredded sharp provolone cheese
Italian Beef, recipe follows, with the reduced braising liquid
1 cup hot giardiniera
1 cup roasted red peppers
1 large egg, lightly beaten
Olive oil, for brushing
1 boneless chuck eye roast (about 3 1/2 pounds)
Salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, chopped
1 tablespoon Italian seasoning
1 tablespoon crushed red pepper flakes
6 cloves garlic, chopped
1/2 cup dry red wine
4 cups good beef stock
1 sprig fresh thyme

Steps:

  • Preheat the oven to 375 degrees F; line a baking sheet with parchment paper.
  • On a floured surface, roll out the dough and cut it into two 12-by-14-inch portions. Layer half of the cheese, then half of the Italian Beef, giardiniera and red peppers on each portion of dough. Using a pastry brush, paint one of the short borders with the egg wash. Starting with the unwashed side, roll the dough into a cylinder, pinching the ends to seal. Transfer to the prepared baking sheet, poke with a fork or sharp knife to vent and brush with olive oil.
  • Bake until golden brown on top, 20 to 25 minutes. Let stand for 15 minutes before cutting and serving with a sidecar of strained jus from the Italian Beef.
  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F.
  • Liberally season the roast with salt and pepper. Heat the oil in a Dutch oven over medium-high heat. Sear the roast, browning on all sides until golden and caramelized. Reduce the heat if the oil begins to smoke. Transfer the roast to a plate and lower the heat to medium.
  • Add the onions and saute, stirring occasionally, until they are just beginning to brown, 8 to 10 minutes. Add the Italian seasoning, crushed red pepper and garlic and saute until fragrant, 1 minute. Deglaze the pan with the red wine and cook until you no longer smell the alcohol and the wine has reduced. Add in the stock and thyme and bring to a simmer. Adjust the seasoning of the braising liquid.
  • Return the roast and any accumulated juices back to the pot. Transfer to the oven and cook, turning every 30 minutes, until very tender, 3 1/2 to 4 hours. Transfer the roast to a cutting board and tent with foil. Once the roast has cooled, pull the meat into smaller chunks.
  • Strain the braising liquid through a fine-mesh strainer and return to the pot. Bring to a simmer and adjust the seasoning if necessary. Serve the jus with the meat.

This Stromboli was a big hit with my family. They loved the combo of meats and sauciness. Add whatever veggies you like. Mushrooms would be great in this as well. It's sloppy, but so good. Enjoy!

Number Of Ingredients 15

1 can(s) refrigerated pizza crust dough
oil for browning meat and veggies
3 links or 1/2 pound bulk italian sausage
1/2 medium red or green pepper - diced
1/2 medium onion, chopped
salt & pepper to taste
couple shakes oregano or italian seasoning
2/3 - 1/2 c pizza sauce or i used pepperoni flavored spaghetti sauce ( 1/2 cup, we like ours saucy )
6 slice deli - salami - mine was thick, thinner would be better
15 - 20 slice pepperoni
1 1/2 - 2 c fresh shredded mozzarella cheese
couple shakes - dried parsley
olive oil for brushing the top
1/8 c parmesan
few pinch dried basil

Steps:

  • 1. Preheat oven to 400 degree F. In a medium skillet, add about a tablespoon oil and over medium heat, crumble sausage and add the salt and pepper. Brown together until sausage is no longer pink and vegetables are tender. Drain. Add the oregano.
  • 2. Now, stir in the sauce and simmer for a minute or two. Cool while preparing crust.
  • 3. Spray a large sheet pan, with nonstick cooking spray. Spread out the pizza dough. ( try not to tear dough like I did)...lol Down the center of the dough ( lengthwise), place the salami in two rows. On top of that spread out the pepperoni.
  • 4. Now, spread the meat sauce evenly over the salami and pepperoni. Add the cheese and sprinkle with parsley.
  • 5. If need be, stretch dough over the top so it overlaps. Fold in and pinch the ends, flip over so seam is on the bottom.
  • 6. Brush top with olive oil and sprinkle with Parmesan cheese and basil. Place in oven and bake for 20 - 25 minuted or until golden brown.
  • 7. Remove from oven and let rest for 10 minutes before cutting. Serve with sauce or without. Enjoy! It's quite tasty.

1 (16 oz.) pkg. johnsonville italian mild ground sausage
1 (1 bl.) loaf frozen bread dough, thawed, see note at bottom
4 oz. cream cheese, softened
2 garlic cloves, minced
1 (7 oz.) jar roasted red peppers, drained and sliced
1/3 cup (pitted) sliced kalamata olives or ripe olives
2 cups (8 oz.) shredded swiss cheese
1 tsp. poppy seeds

Steps:

  • 1. In a skillet, brown sausage until no longer pink; drain. On a lightly floured surface, roll bread dough to a 16-in. x 12-in. rectangle. Transfer dough to a greased baking sheet. Combine cream cheese and garlic, spread lengthwise over center third of dough. Top with the sausage, peppers, olives and cheese. Fold dough over filling, pinching seam to seal. Make slits across top of dough every 2 inches. Brush lightly with water and sprinkle with poppy seeds. Bake at 400ºF for 20-25 minutes or until golden brown. Let stand 10 minutes before slicing. Note: I've found that the best way to thaw frozen bread dough loaves, is to wrap them frozen with plastic wrap and refridgerate overnight. The next morning they are perfectly thawed but not risen.
