I wanted to get more fish in our diet, so I experimented with different flavorings for salmon steaks. This combination seemed to always be especially delicious with a risotto and vegetable side.

1 teaspoon crumbled dried thyme

  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Season one side of each steak with the Italian seasoning, thyme, rosemary, salt, and pepper.
  • Lay the steaks with the seasoned-side down on the prepared grill. Cook on grill until the flesh flakes, turning once, 7 to 8 minutes. Sprinkle each steak with lime juice to serve.

GRILLED OR ROASTED PATTYPAN "STEAKS" WITH ITALIAN SALSA VERDE



Grilled or Roasted Pattypan

Cut into thick slices, pattypan squash, which look sort of like small flying saucers, can make a juicy sort of "steak" that could be topped by a pungent sauce. Grill or roast the "steaks" and serve them with this gorgeous green sauce. You'll need only half the amount of salsa verde that this recipe yields, but it keeps very well in the refrigerator and it's great to have on hand.

1 to 2 garlic cloves (to taste), halved, green shoots removed
Salt to taste
1 anchovy fillet, rinsed (optional)
1 tablespoon capers, rinsed and chopped
1/4 cup extra virgin olive oil
3/4 cup (tightly packed) parsley leaves (25 grams)
Freshly ground pepper
2 pounds large pattypan squash
2 tablespoons extra virgin olive oil
Salt and freshly ground pepper

Steps:

  • Combine the garlic, salt, anchovy fillet and capers in a mortar and pestle and grind to a paste. If you wish to make the sauce in a mini food processor or with an immersion blender (an immersion blender works very well, especially if it has a strong motor), transfer to the processor or place in a jar. Add the parsley. If using a mortar and pestle, grind together until you have a paste. If using a food processor or an immersion blender, add the olive oil with the parsley and blend to a purée. If using a mortar and pestle, slowly drizzle in the olive oil and work into the mixture. Continue to grind until you have a very smooth mixture. Season to taste with salt and pepper. If serving within a few hours, allow to sit at room temperature. Otherwise, refrigerate. Allow to come to room temperature before serving.
  • Heat a cast-iron skillet over high heat, and preheat the oven to 450 degrees. Line a sheet pan with parchment. Alternately, prepare a hot outdoor grill.
  • Slice the squash 3/4 inch thick and toss in a bowl with the olive oil and salt and pepper to taste. Sear in the hot pan for 1 to 2 minutes on each side, until the surface is lightly browned, and transfer to a sheet pan. Place in the oven and roast for 5 minutes. Using tongs, turn the pieces over and roast for another 5 minutes, until they are sizzling and tender all the way through. Remove from the heat. If grilling, grill the pieces for about 5 minutes on each side, until they are tender all the way through and beginning to drip.Transfer the squash slices to a platter. Top each one with a teaspoonful of the salsa, and serve hot or warm.

After much debate, we decided to make stuffed peppers. Add that to the package of cube steaks that kept trying to jump out of our over-stuffed freezer and Friday night's dinner...

ITALIAN CUBE STEAKS
8 cube steak
1 c italian bread crumbs
1/2 c parmesan cheese, grated
1/2 c all purpose flour
1 Tbsp italian seasoning
2 tsp garlic powder
1 tsp paprika
1/2 tsp black pepper, ground
STUFFED PEPPERS
8 peppers (we used 2 each of green, red, orange and yellow)
2 pkg chicken rice (no special brand required)
2 ears of sweet corn
1 Tbsp garlic powder
1 Tbsp onion powder
1/4 c parmesan cheese, grated
24 oz jar of your favorite spaghetti sauce (we used mushroom)
1 1/2 c water

Steps:

  • 1. ITALIAN CUBE STEAKS: *If you want an extra kick to the seasoning, try adding 1 teaspoon each of cayenne pepper, red chili flakes and chili powder.
  • 2. Heat your oil in a large frying pan (I like my cast-iron pan for this but stainless or non-stick will work just as well). Start with the heat on high, then bring it down a bit once you start cooking. Test the oil's readiness by dropping a pinch of flour in it. If it sizzles and pops, you're ready to fry.
  • 3. Press your steaks between some paper towels to remove the excess juices. Really wet steaks result in gummy coating and icky blood bubbles in the oil (sounds gross but I don't know how else to describe it).
  • 4. Cut a strip off one of the steaks (about 1/4 of the steak), dredge it in your flour mixture and fry. Should only take a minute or two, depending on the size of your piece. You'll want to take it out when the coating starts to turn a golden brown.
  • 5. Taste test for flavor, adjust seasoning if needed.
  • 6. Dredge the remaining steaks as you are ready to cook them (if they are left to sit in the flour too long, they get gummy) and fry. Should take 3-4 minutes each side only, over cooking makes them oily and a bit tough. If you want to test your time, cook one steak per directions and check it for doneness. Also, don't over crowd the pan, it will drop the temp of the oil. If the oil temp gets too low, the steaks end up needing additional cooking time and will get over-saturated with oil. Place the steaks on a plate covered with papertowels when they are done cooking.
  • 7. STUFFED PEPPERS: Wash peppers then remove tops, seeds and fibers.
  • 8. Prepare rice per package directions.
  • 9. Cut corn kernals from cob.
  • 10. Add corn, seasonings, cheese and 8 oz of spaghetti sauce to rice and mix well. Taste test, add more seasoning, salt/pepper if desired.
  • 11. Fill all the peppers with rice mixture.
  • 12. In a baking dish or deep sauce pan with a lid, mix the remaining 16 oz. of spaghetti sauce and the water. (You can do this recipe on the stove top or in the oven, directions for both follow.)
  • 13. Place your peppers in the dish/pan and spoon some of the sauce over them. (Red peppers don't usually stand well on their own so you'll need to put them in the middle and use the other peppers to keep them upright.)
  • 14. For sauce pan: Heat on medium until the sauce just begins to bubble. Turn down low and cover, cooking for additional 45 - 60 mins depending the desired tenderness of the peppers. The longer they cook, the more the sauce will absorb the flavor of peppers (YUM!). Keep an eye on it and if the sauce is getting too thick, add a little more water to get desired consistancy. Also, I baste every 15 minutes but it isn't required.
  • 15. For baking dish: Cover dish with a foil dome. Make sure you leave some space between the peppers and the foil or they won't steam right and will end up soggy. Bake at 350 degrees for 60 minutes. Check tenderness and continue cooking in 15 minute intervals if needed. Again, baste if you wish, but you don't have to.
  • 16. *Variations: 1 cup of veggies such as carrots, peas or mushrooms. I wouldn't go over a cup without adding more spaghetti sauce to the rice mixture or it gets a bit dry.

4 (6 ounce) rib eye steaks
2 tablespoons olive oil
5 tablespoons butter, cut into pieces
2 shallots, sliced
2 garlic cloves, minced
1 teaspoon oregano
3 tablespoons tomato paste
2 cups dry red wine

Steps:

  • In a skillet melt 2 tbsp of butter. Add shallot and sauté about 3 minutes.
  • Add garlic and oregano to skillet and sauté mixture for about 1 minute.
  • Add tomato paste and cook mixture for about 2minutes.
  • Slowly add wine, whisking well to combine into a sauce. Reduce heat to medium low, and simmer sauce about 10 minutes until mixture is reduced by half.
  • Strain sauce to remove solids and place liquid back in pan.
  • Add remaining butter tbsp at a time and whisk to combine. Add salt and pepper to taste.
  • Meanwhile heat grill. Add steaks and cook about 5 minutes per side, for medium rare.
  • Remove steaks when done, to individual plates. Let set for 5 minutes.
  • Drizzle sauce on top of each steak.
  • Serve.

1 lb tuna steak (3/4 in thick)
1/4 cup olive oil
1 teaspoon garlic powder
1/2 cup Italian style breadcrumbs
2 tablespoons pine nuts (toasted and finely choped)
1/2 teaspoon thyme

Steps:

  • Butterfly tuna steaks. Cut almost thru to the other side but not entirely.
  • Mix olive oil and garlic, set aside. Mix breadcrumbs, pine nuts and thyme.
  • Add 1 T olive oil to the crumb mixture and stir to coat.
  • Spray baking sheet with olive oil. Place about 2 T of mixture in pocket of each steak. Brush garlic olive oil mixture over each fillet and coat with crumbs. Place crumb side down in pan and then repeat coating on other side.
  • Bake at 400 for 10 mins, or to desired doneness. DO NOT OVERCOOK.
  • Allow to sit for about 5 mins and serve.

250g punnet cherry or small plum tomatoes , some halved, some left whole
750g bag frozen broad bean

  • Heat oven to 200C/180C fan/gas 6 and bring a pan of water to the boil. Mix most of the lemon zest with the lemon juice, oil, garlic and seasoning. Set aside two-thirds, then mix the oregano into the rest. Pour this over the turkey steaks on a plate and turn them to coat.
  • Fry the turkey steaks in a non-stick frying pan for 1-2 mins on each side to brown, then transfer to a roasting tin. Scatter the tomatoes around, then roast in the oven for 4-8 mins, depending on the thickness of the turkey, until the steaks are just cooked through.
  • Meanwhile, cook the beans in the boiling water for 4-5 mins until tender. 2 tablespoons shredded Italian cheese blend

Steps:

Cut steak in half; dip each piece in egg, then coat with bread crumb mixture., In a large skillet, cook steaks in oil over medium-high heat for 2-4 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, heat sauce in a small saucepan. Spoon over steaks; sprinkle with cheese.
