BLACK EYED PEA SQUASH CASSEROLE image

Number Of Ingredients 8

2 1/2lbs yellow squash
1 egg
1/2 C bread crumbs made from whole wheat bread crumbs
1/2 stick butter
1/8 C sugar
1 tsp salt
1 T chopped onion
dash pepper

Steps:

  • Cut off tips of squash. Cut into 3 or 4 pieces. Place in pot and add enough water to just cover. Cook til tender. Drain and mash. Add egg, bread crumbs, butter, sugar, salt, onion and pepper. Cover lightly with bread crumbs. Bake 350* until lightly browned about 30 minutes.
