8 links hot or sweet italian sausage
2 red bell peppers cut into strips
3-4 medium onions cut into strips
2-3 Tbsp olive oil
1 Tbsp oregano
2 Tbsp parsley
salt and pepper to taste
italian bread

Steps:

  • 1. Although you can broil or pan fry them, authentic feast style sausages are always grilled outside in the open air until well browned.
  • 2. Place sliced peppers and onions into a saucepan over medium heat, top with oregano and parsley, sprinkle with salt and black pepper and then drizzle with your olive oil.
  • 3. Be sure to stir this mixture every few minutes and continue to cook until the peppers and onions and soft but not mushy. (Approximately 20 minutes)
  • 4. Slice your fresh Italian bread in half lengthwise and place 2 sausages into the fold. Top with enough sausage and peppers to fill. Go ahead and make them messy, they're more fun that way!
  • 5. Serve and enjoy immediately.

1 lb each sweet and hot italian sausages,leave them whole
2 large each red and green bell peppers,sliced
1 large onions, vidalia, peeled,sliced
8-10 clove garlic,whole
4 Tbsp olive oil
1 tsp salt and pepper
1 c tomatoes, canned italian-style and diced
1 tsp basil, fresh,chopped

Steps:

  • 1. Begin by rinsing and seeding the peppers,slicing them and the onions. Saute the onions and garlic on high with two tablespoons of olive oil until just beginning to brown,add the bell peppers and saute for two or three minutes more,remove to a mixing bowl using a slotted spoon.
  • 2. Add the other two tablespoons of oil to the pan and brown the sausages evenly on both sides for 8-10 minutes or until done. remove to the mixing bowl with the pepper mixture and toss to coat.
  • 3. Deglaze the pan with the chopped plum tomatoes,add the fresh chopped basil and toss with the sausage and peppers. Serve on toasted Italian rolls or heroes,hoagies,wedge bread etc. Enjoy!! Bon Appetite!

1/4 cup extra-virgin olive oil
1 pound sweet Italian turkey sausage
2 red bell peppers, sliced
2 yellow onions, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil leaves
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup Marsala wine
1 (15-ounce) can diced tomatoes
1/4 teaspoon red pepper flakes, optional
4 to 6 fresh Italian sandwich rolls, optional

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
  • Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
  • Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
  • Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.

1 small red onion, thinly sliced
1/2 medium green pepper, julienned
1/2 medium sweet red pepper, julienned

8 - hot or sweet italian sausages
1 large onion, sliced
6 large sweet italianelle sweet peppers, diced
2 clove(s) garlic, minced
- salt & pepper, to taste
pinch(es) crushed red pepper (optional)
8 - sub rolls

Steps:

  • Heat oil in skillet and cook sausage, turning frequently until brown all over, about 10 minutes.
  • After another 2 minutes, add peppers, onions, garlic, salt and pepper. Lower heat and cook another 5-10 minutes.
  • Add sausage to sub and top with pepper mixture. Optional--top with marinara, mozzarella or grated cheese and broil until bubbly. Mangiare!!!!!

8 Italian pork fennel sausages, sweet or hot (about 2 pounds)
Extra-virgin olive oil
3 or 4 medium bell peppers, a mix of red and yellow, sliced into 1/4-inch strips
2 medium red onions, sliced into 1/4-inch half-moons
Salt and pepper
2 garlic cloves, minced
1 tablespoon red wine vinegar
Pinch of crushed red pepper
Pinch of dried oregano
Basil leaves, for garnish
4 large eggs (optional)

Steps:

  • Prick each sausage in several places with a skewer or the tip of paring knife to prevent bursting. Put sausages in one layer in a skillet. Add water to cover and bring to a simmer. Cook for 5 minutes, then cover, turn off heat and let steep.
  • Place a wide skillet over high heat and add 2 tablespoons olive oil. When oil is hot, add sliced peppers and onions. Season generously with salt and pepper, and cook, stirring frequently, until softened and beginning to brown, about 10 minutes. Adjust heat as necessary if mixture seems to be cooking too quickly. Add garlic just at the end, stir to incorporate and cook 1 minute more. Stir in the vinegar.
  • Transfer pepper mixture to a platter. Over medium heat, coat pan with 1 tablespoon olive oil, add sausages and cook 2 to 3 minutes per side, to brown. Top pepper mixture with cooked sausages. Sprinkle with crushed red pepper and oregano and garnish with basil leaves.
  • If desired, in the same wide skillet, fry eggs sunny side up in a little olive oil to accompany. Season with salt and pepper.

2 tablespoons butter
1 yellow onion, sliced
½ red onion, sliced
4 cloves garlic, minced

¼ cup white wine

Steps:
