ITALIAN SAUSAGE AND BEEF RICE CASSEROLE
Inexpensive and easy to make...you can't beat that. Even my pickiest of eaters asks for 2nds. This recipe actually makes enough meat and sauce to freeze half and make the dish a second time saving even more money.

Steps:
- In large skillet heat oil. Add both the diced onions and diced green bell peppers along with the minced garlic, and half the salt and pepper and saute until the onions and peppers are soft.
- Add both the Italian sausage and ground chuck and brown until there is no more pink. While browning the meat make the rice to package instructions.
- Drain most but not all of the excess grease. Add the rustic cut tomatoes, beef broth, Worcestershire sauce and soy sauce and the remaining salt and pepper. Bring to a boil and cook for 10-15 minutes.
- Remove half the meat mixture and place in freezer bag to save for another time.
- Pour rice into large serving bowl and pour remaining meat mixture on top. Mix well then serve.

ITALIAN SAUSAGE, SPINACH AND RICE BAKE
I love Italian sausage, but my family doesn't and I'm always trying to find ways to get them to like it. I came up with this when my daughter said she'd rather eat a plate of spinach than taste a bite of cottage cheese. After she (and the rest of the family) had two helpings and proclaimed it a keeper, I let her in on the fact that the parsley was really spinach and that there was also cottage cheese in it!

Steps:
- In a large skillet saute onion and garlic in olive oil until soft.
- Add sausage and cook until no longer pink, breaking up larger pieces if you need to.
- Add in rice, mushrooms, spinach, chicken broth, salt and pepper and cook until heated through.
- Add in the cottage and mozzarella cheese and turn into a greased casserole dish.
- Top with parmesan cheese.
- Bake at 350 for about 30-40 minutes until bubbly and golden on top.

TOMATO, RICE AND ITALIAN SAUSAGE SOUP
I hope you enjoy this soup, which I've been making for what seems like forever!! 10/09 NOTE: This recipe is my original one, made when the kids were little and didn't like too much spice. Now I sometimes doctor it up adding garlic, red pepper flakes, or whatever. This soup is very forgiving, so do your own thing! I originally did not add the sugar quantity in the recipe, so have now corrected this.

Steps:
- Saute bacon and onion together until lightly browned. Drain off fat.
- In soup pot, add peeled and diced fresh tomatoes or break up canned tomatoes. Add sugar, then bacon/onion mixture. Simmer for 10 minutes.
- Meanwhile, in separate pan cook sausage covered in water for 15 minutes. Drain, then cut into slices.
- Place sausage in soup pot with bacon/tomato mixture. Add beef stock or broth and oregano, then bring to a rolling boil.
- Stir in rice. Cook over medium heat uncovered until approximately 10 minutes until rice is tender, adding additional broth if needed.
- Remove from heat then stir in parmesan cheese and butter. Salt and pepper to taste.
- Put in serving bowls and sprinkle on minced fresh parsley. Additional parmesan cheese may also be sprinkled on.

Steps:
- In a small bowl, stir broth with saffron, salt and chili flakes. Set aside to allow flavors to blend. Cut chicken into bite-size pieces, and slice sausages into 1/2-inch rounds. Remove peas from freezer and set on counter.
- In a pressure cooker,over medium-high heat, add chicken, sausages, garlic and onion. Cook, stirring constantly, until chicken is no longer pink from 3-5 minutes. Add peppers and tomatoes. Cook stirring often, until peppers start to soften and tomatoes start to break down, about 3 mintes. Add uncooked rice, then pour broth mixture over top.
- Lock lid of pressure cooker in place. Following directions for your cooker, bring up to full pressure over high heat. Once it as reached maximum pressure, reduce heat to medium-low to maintain even pressure and cook for 10 minutes. Remove from heat and allow pressure to drop naturally for 5 minutes. Remove lid and stir in peas and sprinkle with parsley, if using. Heat from sauce will cook peas. Serve with thick slices of crusty bread.
- NO PRESSURE COOKER? Follow recipe but use a large wide bottom saucepan. Once you have added uncooked rice and poured broth mixture over top, stir to combine. Increase heat to high and bring to a boil. Then reduce heat to medum-low. Cover and cook for about 20 minutes, stirring occasionally, until most of the liquid is absorbed.
- Remove pan from heat. Stir in peas and sprinkle with chopped parsley.

- Cook sausage and onion in large skillet over medium high heat, 3 minutes or until sausage is no longer pink. drain.
- Spoon mixture in 2-quart casserole dish. Stir in cooked rice, tomato sauce, and salt.
- Add zucchini to skillet. Cook 5 minutes or until tender.
- Arrange zucchini over rice mixture,.

- 1. Cook the brown rice, if you have not already done so. Preheat the oven to 375 degrees.
- 2. Wash peppers thoroughly and slice off the tops. Clean out the membrane and seeds. Then cut each pepper into two halves.
- 3. Put the oil and butter in a large skillet to heat. Medium chop the onion and the pepper tops. Add to the hot oil and cook until softened, about five minutes. Remove from the skillet.
- 4. Add the Italian sausage to the same skillet and cook, while chopping the ground meat, until cooked and no longer pink. Return the cooked vegetables to the skillet. Stir and remove from heat.
- 5. Put in the cooked rice, oregano, salt and pepper to taste, red pepper flakes, 1 cup of the shredded cheese, and about 1 cup of the tomato sauce; mix to combine.
- 6. Put the remaining tomato sauce in a square baking dish, large enough to hold the four pepper halves, that has been prepared with cooking spray. Spread to cover the bottom of the pan.
- 7. Divide the filling between the peppers and place in the baking dish.
- 8. Cover tightly with foil and cook for about 45 minutes.
- 9. Remove the foil, distribute the remaining cheese on the peppers, and return to the oven for about 15 minutes or until cheese is melted and starting to brown. Spoon what sauce is left in the baking dish over the peppers as you serve.

- Preheat oven to 350˚F.
- Toss the livers, 1 teaspoon of olive oil and a dash of salt and pepper in a glass or stainless bowl. Place the livers on a baking sheet with sides and place it on top rack of the oven. Bake them for 20 minutes. Cool the livers and finely chop; set aside.
- Heat the remaining 2 tablespoons of olive oil in a heavy-bottomed, oven-safe saucepan over medium heat. Add the onions and garlic and saute, stirring for 2 to 3 minutes until the onions become translucent. Add the sausage, cook and breaking into small pieces, about 4 minutes. Add the Tasso and chicken livers and saute for about 3 minutes. Add the rice and stir until the rice is coated by the olive oil. Add salt and pepper, to taste. Note: Before salting, take into consideration the Tasso and sausage contain salt, as may the broth.
- Pour in the chicken broth and bring the mixture to a boil, stirring constantly. Cover the saucepan and place it in the oven. Bake the rice for 20 to 30 minutes or until all of the liquid is absorbed and the rice is tender. Uncover the saucepan, add the green onions and fluff the rice and onions with a fork.
- Serve immediately.
