PORCHETTA - ITALIAN MARKETPLACE PULLED PORK SANDWICH (CROCK POT)
Tender succulent boneless pork roast is rubbed with olive oil and seasonings and slowly roasted to perfection in the crock pot until it is falling apart, then stuffed into warmed and buttered Italian ciabatta rolls. A wonderfully simplified version of the classic Porchetta Italian Market Place Sandwich by Nigella Lawson.

Steps:
- Rub the roast all over with the olive oil, then rub with the seasonings. Place roast in bottom of crock pot, and top with the bay leaves and chopped onion.
- Cover and cook on HIGH for 1 hour, then reduce heat to LOW and cook 10-12 hours more until meat is falling apart, yet tender, and done.
- Remove to a large cutting board and let cool slightly, then use two forks to pull apart the meat into chunks, discarding the bay leaves.
- Stuff into warmed and buttered Italian ciabatta rolls, and dig in!
ITALIAN PORK LOIN (IN A CROCK POT)
I was in the mood for spaghetti for dinner, but had a pork loin that needed to be used so instead of doing my usual barbecue sauce and pork, I decided to try the spaghetti sauce instead. I was not disappointed. The pork was fork tender and the sauce served over spaghetti was delicious!

Steps:
- Place peppers and onions in the bottom of crock pot.
- Rub pork loin with salt, pepper, Italian Seasoning, garlic powder, Thyme and Fennel seed.
- Place the pork loin on top of the peppers and onions in crock pot.
- Pour spaghetti sauce over the pork loin making sure to cover the roast.
- Pour the red wine vinegar in the spaghetti sauce jar and replace the cover; shake the jar so the vinegar mixes with any sauce left in the jar.
- Pour the vinegar around the pork loin.
- Add the two bay leaf.
- Cook at low setting for 8-10 hours.
- Remove pork loin and slice and put the slices back into the sauce in the crock pot.
- Serve with your favorite pasta.

TENDER ITALIAN-STYLE PORK CHOPS IN A CROCK-POT
Whenever I prepare this crock-pot dish the "F" word comes to mind ...FLAVORFUL! The porkchops slowly simmering in tomatoes, garlic, onion, wine and Italian seasonings will have your kitchen smelling wonderful and your family's mouths watering. The chops are so moist and tender that you can cut them with your fork. It makes for a perfect weeknight family meal, the church pot-luck dinner, or a relaxed dinner party. One taste, and everyone is sure to come back for seconds.

- Wash chops and pat dry with paper towels. Trim excess fat from meat.
- In a large skillet, heat the olive oil.
- Coat the pork chops in a mixture of flour, salt, garlic and onion powders, and Parmesan cheese. Lightly brown on both sides in the heated oil (YOUR PORKCHOPS SHOULD NOT BE COMPLETELY COOKED); drain chops on paper towels.
- Place the mushrooms, onion, and garlic in the bottom of your crock-pot; add the chops by laying them on top.
- In a large mixing bowl, combine the tomato sauce, whole tomatoes, wine or sherry, lemon juice, salt and spices (except the bay leaves). Give a good stir.
- Pour the tomato sauce mixture over the pork chops. Add bay leaves to crock-pot. Cover and cook on LOW for 7 - 9 hours (HIGH: 4 to 5 hours).
- 30 minutes before the cooking time is up, turn crock-pot to HIGH and arrange the green and yellow pepper rings on top of the pork chops. Cover and continue cooking for the last 30 minutes.
- Just before serving, top with mozzarella cheese. Serve with your favorite hot cooked pasta and a freshly tossed garden salad. Don't forget the warm and crusty Italian bread to dip into the delicious tomato sauce.
ITALIAN STYLE CROCK POT PORK LOINS
I found the original recipe in a Taste of Home cookbook submitted by Vickie Lowe from Pennsylvania. I found I didn't have the exact ingredients, so I made a couple of substitutions and omitted a few things, and I came up with this. Posted on March 24th, 2006 (original recipe called for bone-in chops and fresh mushrooms).

- Lightly sprinkle each side of pork chop with garlic powder.
- In a non-stick skillet, brown chops on each side.
- Combine mushrooms and onions in crock pot.
- Add browned chops in a single layer over mushroom and onions.
- In a small bowl, mix together sauce ingredients.
- Pour over pork.
- Cover and cook on low for 6 hours (7 hours for bone-in chops) or until meat is tender.

- Season roast with Italian seasoning. Brown meat on all sides in olive oil. Place in Crock pot. Saute shallots. Deglaze pan with red wine. In a bowl mix dressing mix, water soy sauce, hot pepper flakes and juice of the orange. Pour mixture over roast in crock pot. Add sauteed shallots and wine. Add orange halves and fresh rosemary. Cook on high for 4-6 hours or low for 10-12 hours
