2 large eggs (( 1 per pound of beef as a binder - optional))
1 cup breadcrumbs (, fresh or dried [See Note 2])
1/4 cup milk
1/4 cup grated Parmesan cheese
1 finely chopped onion
1/4 cup minced fresh parsley
3 cloves garlic (, minced)
1 tsp salt
1/2 tsp freshly ground pepper
1 tablespoon poultry or Italian seasoning ((optional))
32 oz lean ((90% or leaner) ground beef)
6 cups (48 ounces) Spaghetti Sauce, Homemade or jarred marinara

Steps:

  • Lightly beat eggs in a large bowl. Stir in the breadcrumbs, milk, onion, cheese, parsley, garlic, salt and pepper.
  • Next add the beef and with your fingertips lightly mix the ingredients until just combined but try not to over mix or compact the meat. Make the meatballs into 1 ounce balls (about 1 to 1 1/2-inches) compressing them just enough to form a ball and place in a 6-quart slow cooker. Cover with sauce and cook on HIGH for 4 hours or LOW for 8 hours.

2 tablespoons olive oil
1 small onion, finely chopped
3 garlic cloves, minced
1 cup Italian-style panko bread crumbs
2 large eggs, lightly beaten
1/2 cup grated Parmesan cheese
1/2 cup minced fresh parsley
1/4 cup water
1/4 cup minced fresh basil
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
4 cups spaghetti sauce
Minced fresh parsley, optional

Steps:

  • Preheat oven to 400°. In a small skillet, heat oil over medium heat. Add onion and garlic; cook until onion is tender and golden brown, 5-9 minutes. Cool slightly., In a large bowl, combine bread crumbs, eggs, cheese, parsley, water, basil, Worcestershire sauce, salt, pepper and onion mixture. Add ground meats; mix lightly but thoroughly. Shape into 1-in. balls. Place on greased racks in shallow baking pans. Bake until browned, 20-25 minutes., Transfer meatballs to a 4- or 5-qt. slow cooker. Pour spaghetti sauce over top. Cook, covered, on low until meatballs are cooked through, 3-4 hours. If desired, serve with minced parsley., Freeze option: Freeze cooled meatballs and sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, stirring gently and adding a little water or broth if necessary. Serve as directed.

1 (15 ounce) can tomato sauce
1/4 cup red wine

Steps:

  • In bowl, beat egg with salt, seasoning, red pepper flakes and garlic.
  • Add chopped onion, beef, pork, bread crumbs and parmesan.
  • Mix well.
  • Shape into 1 ½" balls.
  • Place meatballs in 5 qt or larger crock pot.

One 6-ounce can tomato paste
3 tablespoons extra-virgin olive oil
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
3 cloves garlic, crushed and peeled
2 bay leaves
Kosher salt
1 small onion, cut into chunks
1 small carrot, cut into chunks
1 celery stalk, cut into chunks
1/2 cup fresh Italian parsley leaves
