ITALIAN STYLE BAKED ZUCCHINI

Steps:
- Preheat the oven to 350 degrees.
- In a small skillet render the bacon. When almost crisp, add the olive oil and heat up. When the olive oil is hot, add the shallots and cook for a few minutes or until tender. Add the oregano and prosciutto and simmer for a minute. Remove the skillet from the heat and season to taste with salt and pepper.
- Cut the baby zucchini in half. If you are using small zucchini, then cut them in half horizontally, then each half in quarters lengthwise. Set them in a lightly oiled gratin dish, skin side down. Sprinkle with the bacon mixture and scatter parsley on top. Cover and bake or 20 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish or line a baking sheet with parchment paper.
- Combine zucchini slices and olive oil in a large bowl and toss to coat well.
- Mix Parmesan cheese, bread crumbs, oregano, salt, and pepper in a second bowl or shallow dish. Dip oiled zucchini into bread crumb mixture and arrange close together on the baking sheet.
- Bake in the preheated oven for 30 to 40 minutes, turning after 20 minutes so they brown evenly.

- Cut zucchini in half lengthwise. Scoop out pulp, leaving a 3/8-in. shell. Reserve pulp. Cook shells in salted water for 2 minutes. Remove and drain. Set aside. Chop zucchini pulp. - Drain zucchini and onion in a colander until no longer wet, about 10 minutes.

KATE'S BAKED ITALIAN SAUSAGE ZUCCHINI YELLOW SQUASH RIGATONI

- ITALIAN SAUSAGE MEAT SAUCE: Caramelize onion in olive oil. Remove casings from sausage and add sausage and ground beef to pan breaking into bits and browning. Add garlic and sauté two minutes more. Stir in crushed tomatoes, tomato paste, diced tomatoes, water, basil, bay leaves, red pepper flakes, black pepper, salt, sugar, and wine. Boil and simmer, covered, for at least 40 minutes up to 3 hours. Add chopped parsley to Meat Sauce during the last 15 minutes of simmering sauce.
- SAUTEED SQUASH: Sprinkle squash with garlic powder, onion powder, salt and pepper. Sauté squash in olive oil until browned on both sides. Transfer to drain on plates lined with paper towels.
- PARMESAN GARLIC BREADCRUMB TOPPING: Combine breadcrumbs, marjoram or oregano, garlic powder, onion powder, black pepper, salt, sugar, olive oil, and Parmesan cheese.
- PASTA: Boil salted water for pasta. Cook pasta according to package directions.
- CHEESE MIXTURE: Combine ricotta cheese, mozzarella cheese, eggs, and black pepper.
- ASSEMBLY: Preheat oven to 350F degrees. Grease a large baking pan with olive oil. In baking pan, spread pasta across the bottom coating with a small amount of olive oil. Remove bay leaves from Meat Sauce. Top pasta with half of Meat Sauce. Place Sautéed Squash at an angle half in half out of Meat Sauce. Top Sautéed Squash with other half of Meat Sauce.
- Spread dollops of Cheese Mixture evenly across the top of the Meat Sauce. Sprinkle Breadcrumb Topping evenly over dish.
- Bake at 350F degrees for 40 minutes or until crumbs are golden and dry and sauce is bubbly.

ITALIAN-BAKED ZUCCHINI
Always in need of zucchini recipes! I use less olive oil and it seems to work fine. Also I am not a big fan of capers, so I always omit this.

Steps:
- Heat oven to 450°.
- Trim zucchini and slice into 1/2 inch disks.
- Sprinkle 1 T olive oil onto bottom of 9 by 13 pan.
- Add zucchini and sprinkle it w/ salt and pepper.
- Drizzle 1 T olive oil over this.
- Bake for 10 minute.
- While it is baking mix cheese, bread crumbs, capers, and oregano together.
- Add remaining oil and stir till crumbs are moistened.
- Remove zucchini from oven and sprinkle w/ vinegar then stir.
- Sprinkle bread crumbs on top.
- Return to a 400° degree oven for 20 to 30 minutes.
- Serve hot.
