French Mashed Potatoes image

Number Of Ingredients 3

2 pound Yukon potatoes peeled and cut into 1 inch pieces
2.5 sticks Unsalted butter
1 1/3 cups Whole Milk

Steps:

  • Rinse potatoes. Heat butter milk and 1 tsp sale in large saucepan until it has melted. Add potatoes and increase to med low cook til starts to boil. Reduce to low and partially cover and cook oil very soft- about 35 minutes. Drain potatoes reserving cooking liquid over mesh strainer. Wipe out pan and return liquid to low heat. Using a ricer, add potatoes back to liquid til smooth.
