Number Of Ingredients 9

1 package (7 ounces) angel hair pasta
4 plum tomatoes, seeded and chopped
1 cup thinly sliced carrots
1 medium cucumber, chopped
6 green onions, thinly sliced
2 tablespoons olive oil
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the tomatoes, carrots, cucumber and onions. , In a small bowl, whisk together the oil, vinegar, salt and pepper. Pour over pasta mixture and toss to coat. Cover and refrigerate for 4 hours.

1 lb. angel hair
1/2 lb. salami, chopped
1/2 c. sliced black olives
1/2 c. green pepper, chopped
1/2 c. roasted red peppers, chopped
1/2 c. marinated mini mozzarella balls, halved
1/4 c. extra virgin olive oil
2 tbsp. lemon juice
1 tsp. kosher salt
1/4 tsp. crushed red pepper flakes

Steps:

  • 1. In a large pot of salted boiling water, cook angel hair according to package directions until al dente. Drain, then transfer to a large serving bowl.
  • 2. Add salami, olives, roasted red pepper, green pepper, and mozzarella to bowl. In a glass jar, whisk together olive oil, lemon juice, salt, and crushed red pepper flakes. Toss with pasta salad and serve.

1/2 cup Italian salad dressing
1-1/4 cups shredded Parmesan cheese

Steps:
